From the Richard Simmons Food Mover Cookbook. Very delicious for a Light lunch and a really good savory-sweet dish to satisfy a sweet tooth, but not too overpowered.

10 ounces fresh spinach
2 pints fresh strawberries
2 pints mandarin oranges, alternate for strawberries
2 tablespoons onions, minced
4 tablespoons seasoned rice vinegar
2 tablespoons canola oil
1 tablespoon honey
2 tablespoons toasted sesame seeds
1 teaspoon poppy seed

Steps:

  • Wash and dry the spinach, removing any tough stems.
  • Wash strawberries, stem, slice and mix together in big bowl with spinach.
  • For dressing, in an electric blender, blend onion, vinegar, oil, and honey until smooth.
  • Stir in sesame and poppy seeds.
  • Toss salad with dressing just before serving.
  • Adding watercress would add some spice.

4 cups fresh Baby Spinach
1/2 cup fresh mint leaves
1/2 lime, juice of
2 teaspoons balsamic vinegar
1 teaspoon shallot, minced
1/4 teaspoon salt
1 tablespoon olive oil
fresh ground black pepper
1 nectarine, thinly sliced
1/2 cup fresh blueberries or 1/4 cup dried blueberries

Steps:

  • Rinse the spinach well and dry in salad spinner.
  • Stack the mint leaves and cut crosswise into thin strips.
  • In large mixing bowl combine the spinach leaves with the mint. Toss well.
  • To make the dressing combine the lime juice, vinegar, shallot, and salt in a small bowl. Whisk in the olive oil and.
  • season the salad dressing to taste with freshly ground black pepper.
  • Pour the dressing over the greens and toss lightly.
  • Divide the mixture between four salad plates. In fan fashion, garnish the nectarine slices on each salad plate.
  • Sprinkle the blueberries on top.

1/2 c miracle whip®
1.3 Tbsp granulated sugar
1.3 Tbsp apple cider vinegar

Steps:

  • 1. In a small bowl, combine Miracle Whip®, Sugar and Apple Cider Vinegar. Stir until well blended.
  • 2. In a large bowl, place cole slaw mix. Pour dressing mixture over slaw. Fold until well coated. Chill in refrigerator for 2 hours to allow flavors to blend together well.

Found this recipe on the back of a spinach bag and loved it! I combined only the spinach and dressing first, plated it and added the rest of the salad ingredients. Recipe said to add salt and pepper to taste. I did nor add any.

2 1/2 cups cubed cooked chicken
3/4 lb fresh spinach, washed, dried, and torn (or 10 oz. bag spinach leaves or two 6 oz. bags baby spinach leaves)
1 (8 ounce) can water chestnuts, rinsed, drained, and chopped
3 -4 green onions, chopped
1 cup fresh bean sprout, rinsed and dried
4 slices bacon, cooked until crisp, drained and crumbled
4 hard-boiled eggs, peeled and sliced
1/2 cup vegetable oil
1/3 cup sugar
1/4 cup balsamic vinegar
1/4 cup ketchup

Steps:

  • Add the chicken, spinach, water chestnuts, green onion, bean sprouts, crumbled bacon and sliced eggs in a large bowl (if not serving right away, may store undressed but covered salad in the refrigerator for up to 4 hours).
  • To make the dressing--In a small bowl, blend together the oil, sugar, vinegar, and ketchup using a whisk.
  • Pour some of the dressing over the salad ingredients (you may not need all the dressing).
  • Toss the salad gently but until thoroughly coated.
  • Add more dressing if needed; serve.
