SALTINE TOFFEE COOKIES
This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
- Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

Steps:
- 1. Line a 13 X 9 or close to that size, pan with foil. (I use the non-stick type and it can be reused over and over).
- 2. Place graham crackers on the foil with entire bottom covered in crackers. If you have any space, just break some crackers and fill it in with the broken pieces.
- 3. Combine butter, sugar in a saucepan; cook until it's melted about 2 minutes. Add nuts. Remove from stove and set aside.
- 4. Pour buttery mixture over the crackers and spread to sides. Don't worry if it's thin in spots--when it heats it will spread evenly. Bake at 350 degrees for 10 minutes--my oven bakes fast so I watch it at 8 minutes! It shouldn't be very brown--just golden brown. Remove and cool. (I put mine outside on the deck or you can put it in the fridge to hurry it up) Break into pieces and watch it disappear fast!
POORMAN'S TOFFEE
Easy and Yummy...though a bit odd sounding when you read the recipe. I haven't made it in years, so the times are estimated. But I remember it being pretty quick to make besides the chilling. Chilling time is included in prep time.

Steps:
- Cover a cookie sheet with aluminum foil, then line with crackers.
- Preheat oven to 350* F.
- In a sauce pan, melt butter and brown sugar over medium heat until it reaches hard ball texture - 250*F on a candy thermomator OR if you don't have one when a small amount is dripped into chilled water a ball is formed that is rigid but still pliable.
- Pour the mixture over crackers and put in the oven until bubblely (about 5 minutes).
- Take out and sprinkle chocolate chips over crackers and candy then return to oven until the chocolate chips melt a little (2 - 5 min).
- Remove from oven again and spread chocolate evenly around, sprinkle with walnuts if you wish.
- Chill in the refrigerator for 1 1/2 to 2 hours then peel off foil and break or cut into pieces.
