Poor Man's Spaghetti image

This is my Mother's recipe. She called it poor mans spaghetti, at the end of the month when pantry was low she would put together spinach, and pasta with spices. I added a few ingredients and threw in a pot of stock, dry noodles and all. I made this even easier and still a great price at about $7.00 for 6 servings!

Provided by msippigrl

Number Of Ingredients 5

8 ounces angel hair pasta
4 tablespoons salted butter
1 clove garlic, minced
1 green onion, chopped (I didn't have any)
1/4 cup grated or finely shredded Parmesan cheese, or more to taste

Steps:

  • Cook pasta in salted water until tender as directed on package. Meanwhile, in a small 1-qt. saucepan or skillet melt the butter over low heat; when melted add the minced garlic and cook for 1 minute, stirring constantly so it doesn't brown. Remove from heat and stir in the green onion. Drain pasta well in a colander then transfer to a serving bowl. Pour the garlic butter over the pasta and toss to coat. Add Parmesan and toss well. Garnish as desired and serve immediately.
