Try this recipe for chicken that is marinated and grilled, dipped in butter and tastes amazingly like lobster. My Dad actually got this recipe from a friend of his, and it's too wonderful to keep it a secret! Serve with clarified butter for dipping.

½ cup soy sauce
¼ cup vegetable oil
1 teaspoon garlic salt
¼ teaspoon black pepper
1 tablespoon packed brown sugar
1 teaspoon dry mustard powder
2 teaspoons ground ginger
½ cup pineapple juice
6 skinless, boneless chicken breast halves

Steps:

  • In a saucepan, combine the soy sauce, oil, garlic salt, pepper, brown sugar, mustard powder, ginger and pineapple juice. Bring to a boil, stirring to dissolve the sugar. Boil for about 5 minutes, then remove from the heat and allow to cool completely. When cooled, place the chicken into a large resealable bag and pour the marinade over it. Press out as much air as you can, seal and refrigerate for at least 2 hours to marinate.
  • Preheat a grill for medium-low heat. When hot, lightly oil the grate.
  • Place the chicken on the grill and discard the marinade. Cook until chicken juices run clear, 20 to 25 minutes. Turn as needed to keep the chicken from burning.

1 lb frozen haddock
2 cups water
1 tablespoon vinegar
1 teaspoon Old Bay Seasoning or 1 teaspoon lemon pepper
melted butter

Steps:

  • Combine first four ingredients put in a large sauce pan.
  • Bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Drain liquid.
  • Serve with melted butter.

I grew up Catholic, so haddock on Fridays during lent was a tradition. This was one of my favorite ways of having it, and it is so easy. Lobster tail is my favorite food, and although this is not as fantabulous as lobster tail, it will give you that fix when you need it for a lot less $$$! It is so good!

2 lb haddock, fresh or thawed (if frozen) - i always use icelandic
2 Tbsp old bay seasoning
2 Tbsp vinegar (plain old white)
1 can beer (i use light)
salt & pepper
lemon wedges
butter

Steps:

  • 1. So easy. Mix beer with Old Bay, vinegar, & some salt & pepper in Dutch Oven or other large saucepan. Place haddock over top. Pour about a beer can full of water over top of haddock -- just enough to cover.
  • 2. Turn heat to boil & boil covered for 20 minutes over med heat.
  • 3. Remove haddock with large spatula & place on serving plate. Squeeze lemon juice over top. Serve with melted cups of butter. (Don't be alarmed if the haddock doesn't look beautiful when you take it out. Inside it's all nice & white & flaky).
  • 4. Just as I do w/ lobster tail, I like to flake the haddock pieces & then let them sit in my melted butter for a minute as I eat. Enjoy!

1 1/2 lbs fresh cod fish fillets (of frozen fillets, thawed)
1 cup butter, melted
1 teaspoon kosher salt
1/2 teaspoon pepper
1/8 teaspoon paprika
fresh parsley sprig, for garnish
lemon slice, for serving

Steps:

  • Preheat oven to 375°.
  • Arrange fish in a shallow casserole; pour half the melted butter over the fillets.
  • Sprinkle with salt, pepper, and paprika.
  • Place the fish in the oven and bake, uncovered, basting occasionally, until the fish flakes with fork, about 15-20 minutes.
  • Garnish with parsley; serve with lemon slices and the remaining melted butter for dipping.

The poor man's lobster! This really does taste like lobster! Enjoy. Sometimes you can find Cod steaks that are thick and about the size of a average lobster tail.

1 1/2-2 lbs cod (fresh or previously frozen)
1 teaspoon salt
2 teaspoons paprika
3 tablespoons vinegar (white distilled)

Steps:

  • Cut the cod into 2x2-inch pieces; place in non-stick skillet.
  • Barely cover with water; sprinkle salt and paprika over fish and bring to a quick boil.
  • Reduce heat and place on a low simmer for about 10 minutes (depending on thickness of fish) uncovered.
  • Drain out hot liquid and cover with cold water, add vinegar bring to quick boil again.
  • Again reduce it to a low simmer and let cook uncovered about 10 minutes.
  • Drain and serve immediately with drawn butter and fresh lemon juice.
