These days lobster is an expensive seafood, alternatives are welcome; such as this poor man's lobster recipe.

1 lb White Fish (cod or halibut)
½ cup Sugar
¼ cup Salt
6 oz Butter (melted)
12 cups Water
Paprika (optional garnish)
Pepper (optional garnish)

Steps:

  • Cut the white fish fillets widthwise into 2 inch widths.
  • Bring the water to the boil. Add the sugar, and the salt and stir until dissolved.
  • Using tongs lower fish pieces into the boiling water.
  • Cook for about 7 minutes or until the fish is just beginning to flake.
  • Using a skimmer, remove the fish and place in the bowl of melted butter.
  • Remove from the butter and squeeze lemon juice on the fillet pieces.
  • Serve hot.

¼ cup butter, melted
¾ teaspoon paprika
½ teaspoon salt
¼ teaspoon ground black pepper
4 (6 ounce) fillets monkfish
4 tablespoons bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine the melted butter, paprika, salt and pepper.
  • Place the fish fillets on a non-stick or parchment lined baking sheet. Brush the fillets evenly with the butter mixture and sprinkle the bread crumbs over the tops of each fillet.
  • Bake in the preheated oven for 15 to 20 minutes or until the fish flakes easily with a fork.

1 cup butter, melted
1 teaspoon kosher salt
1/2 teaspoon pepper
1/8 teaspoon paprika
fresh parsley sprig, for garnish
lemon slice, for serving

Steps:

  • Preheat oven to 375°.
  • Arrange fish in a shallow casserole; pour half the melted butter over the fillets.
  • Sprinkle with salt, pepper, and paprika.

1 cup sugar
halibut, cut in about 1 inch cubes
butter, for dipping (not margarine)

Steps:

  • Fill a pot with water (about a gallon).
  • Add 1 cup sugar, and bring to a boil.
  • Do not ever stir the mixture.
  • Add chunks of halibut, do not over crowd.
  • They will sink to the bottom, and then rise to the top when they are done.
  • It should take just a few minutes.
  • Remove with slotted spoon.
  • Remember to not stir the mixture.
  • Continue until all the halibut is cooked.
  • Dip in melted butter and eat!
