My Grandma's Poor Mans Casserole image

This casserole is amazing and I have never had anyone say different! Once you try it, I'm sure it will become a go to dish for you and your family too! GREAT for kids! (just don't tell them there is mushroom soup!)

Number Of Ingredients 4

3 cups white rice
2 (10 1/2 ounce) cans cream of mushroom soup
1 lb ground beef
4 cups shredded cheddar cheese

Steps:

  • Start off with cooking the white rice.
  • As the rice is cooking start cooking your beef, I like to season it with pepper and mesquite seasonings, but you can also use garlic salt or any other seasonings you prefer.
  • Once the meat and rice is done cooking mix together the meat, rice, and soup.
  • Top it with the shredded cheddar cheese.
  • Bake in the oven on 375 for about 30 minutes or until the cheddar is bubbly and starting to brown,.
  • * Sometimes I like to mix corn into it to give it a little more nutrition/flavor.

Grandma Anderson's Tuna Casserole :) Another Kid friendly casserole and Easy on the pocket book :)

Number Of Ingredients 12

3 c cooked wide egg noodles
2 can(s) drained tuna
1/2 medium chopped onion
1/2 medium chopped green pepper (optional)
1/4 c chopped celery (optional)
1 small jar of pimentos (optional)
3/4 c velveeta cheese (cubed)
1/2 tsp salt
1/8 tsp pepper
1 can(s) small can of mushrooms,drained
1 can(s) (10.75oz) of cream of celery
1/2 can(s) of milk (use soup can)

Steps:

  • 1. pre-heat oven to *350. boil noodles according to package. drain and set aside.
  • 2. mix all ingredients together in a large bowel, stir in cooked noodles. place in a 9x13 pan
  • 3. Bake for 1 hour at *350 covered, with tinfoil.
