1 tablespoon minced garlic (3 to 5 cloves, depending on size)
1 large egg yolk
1 tablespoon fresh lemon juice (about 1/2 lemon)
1 teaspoon Dijon mustard
1 tablespoon water
8 ounces avocado oil
Kosher salt
Canola or vegetable oil, for deep-frying
3 pounds russet potatoes, peeled, julienned and soaked in water until ready to use

Steps:

  • For the aioli: Place the garlic, egg yolk, lemon juice, mustard and water into the cup of an immersion blender. Pour the avocado oil on top of the other ingredients and wait a few moments for the oil to separate from the ingredients beneath it. Gently nestle the blade of the immersion blender into the egg yolk at the bottom of the cup. Turn on the blender and blend until the mixture is fully emulsified, about 1 minute. Add salt to taste. Cover and refrigerate until ready to serve.
  • For the frites: Fit a large Dutch oven with a deep-frying thermometer and fill with 3 inches of canola oil. Heat the oil to 325 degrees F.
  • Dry the potatoes thoroughly with kitchen towels. Working in batches to avoid crowding the pot, slide the potatoes into the hot oil and fry until softened but not colored, 3 to 4 minutes. Using a slotted spoon or metal spider, remove to a paper-towel-lined plate.
  • Raise the oil temperature to 350 degrees F. Again working in batches, return the potatoes to the oil and fry until deep golden brown, another 3 to 4 minutes. Drain on a paper-towel-lined tray and season with salt.
  • Serve immediately with aioli.

1 liter canola oil
8 large potatoes, peeled and sliced lengthwise (1/2 inch thick) batonnet or large (3/4 inch thick) batonnet (but in either case a uniform thickness so that they cook at the same rate)

1 to 2 teaspoons truffle oil
2 tablespoons freshly grated Parmesan
1 cup mayonnaise
1 tablespoon Irvine Spices Specialty Chipotle Chile Powder

Steps:

  • Heat oil in deep-fryer to 375 degrees F.
  • Fry potatoes until golden brown, and drain on paper toweling. Season with salt while they are still glistening. Drizzle with truffle oil and sprinkle cheese on top.
  • Whisk together mayonnaise and Chipotle Chile Powder. Season with salt, if needed. Serve potatoes with chipotle aioli as a dipping sauce.

For Frites:
2 russet potatoes
6 cups veggie oil
Salt & pepper
For Aioli:
3 egg yolks
1 tbsp lemon juice
1 head of roasted garlic
(300 degree oven for 45 minutes)
1/4 cup water
2 cups veggie oil
Salt & pepper

Steps:

  • Heat oil in heavy bottom sauce pot to 300 degrees on candy thermometer. Slice potatoes to 1/4 inch fries. 'Blanch' fries in small batches until soft and cooked through. Drain on paper towels. Raise oil temp to 375 and cook fries until golden brown & crispy. Season with salt & pepper. For aioli: In food processor, place yolks, lemon juice, water & garlic and blend. While on, slowly drizzle in oil until sauce become thickened (to about consistency of mayo - or your own taste). Season with salt and pepper

6 baking potatoes, like russets
1 quart vegetable or peanut oil
Salt
Curry Ketchup, recipe follows, for dipping
Honey Mustard Mayo, recipe follows, for dipping
1 teaspoon curry powder
5 ounces ketchup
5 ounces mayonnaise
1/4 finely chopped onion
5 ounces mayonnaise
4 ounces mustard
1 teaspoon honey

Steps:

  • Peel the potatoes, and cut them into batons that are about the length and width of your index finger.
  • Preheat a deep pot of oil to 325 degrees F.
  • For the first fry, deep fry potatoes in the oil for 5 to 6 minutes, or until a light golden color. Do not over load fryer. Fry in 3 batches if necessary. Remove the potatoes using a slotted spoon, and allow them to cool to room temperature.
  • Raise the temperature of the oil to 375 degrees F.
  • For the second fry, deep-fry the potatoes for 2 minutes, or until crispy. Remove potatoes, and transfer into a colander or bowl. While still hot, salt the potatoes.
  • Serve with favorite dipping sauce.

Classic bistro-style pommes frites (the Belgian version of fries) are served with mayonnaise as a dipping sauce.

8 Idaho potatoes
2 to 3 quarts vegetable oil
1 tablespoon coarse salt
Homemade Mayonnaise

Steps:

  • Peel potatoes if desired; cut into 1/2-inch-thick matchsticks. Place in a bowl of cold water to soak for 10 minutes.
  • Heat oil in a large saucepan (at least 5 quarts) to 325 degrees. Remove potatoes from water; dry very well with paper towels. Add potatoes in batches to oil; blanch for 2 minutes (potatoes will not take on any color). Drain well; transfer to pans lined with paper towels to cool completely.
  • Raise heat of oil to 375 degrees. Heat oven to 250 degrees. Add potatoes to oil in batches; fry until golden, about 3 minutes. Drain well; place on a rimmed baking sheet. Sprinkle with salt; keep warm in oven while frying remaining potatoes. Serve immediately.
