POMEGRANATE GIMLETS

Steps:
- At least 1 hour before serving, freeze 6 to 8 martini glasses.
- Combine the gin, lime juice, pomegranate juice, and simple syrup in a large pitcher. Fill a cocktail shaker half full of ice, pour in the gimlet mixture until the shaker is 3/4 full and shake for 15 seconds. Pour into the frozen glasses and garnish each glass with a teaspoon of pomegranate seeds and a slice of lime.

- In a small saucepan, combine sugar and juice; bring to a boil over high, stirring until sugar has dissolved. Reduce to a simmer; cook, without stirring, until mixture is syrupy, about 2 minutes. (To store, refrigerate syrup up to 1 week; adjust consistency with water, if necessary.)
- To serve: Fill 8 glasses with ice. Pour 2 tablespoons syrup in each glass, and top with club soda. Garnish with cherries, if desired.

APPLE-POMEGRANATE SODA

Steps:
- Bring 1 cup each apple juice, pomegranate juice and water, and 1/4 cup sugar to a boil, then simmer, reducing to 3/4 cup, about 1 hour. Let cool. Stir about 3 tablespoons syrup into a glass and add about 8 ounces of seltzer, stirring until combined.
HOMEMADE POMEGRANATE SODA KIT
Steps:
- For the pomegranate syrup: In a small heavy saucepan, combine the pomegranate juice and sugar and bring to a simmer over medium-high heat. Reduce the heat to medium and cook until the mixture is thick and syrupy, about 30 minutes. Remove from the heat and allow the mixture to cool completely (the syrup will thicken as it cools). Stir in the lemon juice. Transfer the syrup to an 8 1/2-ounce glass jar with a tightly fitting lid. Refrigerate.
- For the soda kit: Package the syrup with the seltzer and pomegranate seeds and include the following recipe card:

- Place 1 tablespoon pomegranate syrup at the bottom of four 8-ounce drinking glasses. Top glasses off with seltzer water and gently stir. Add ice cubes and garnish with pomegranate seeds.
