2 Cornish hens (1-1/2 lbs. each. halved)
1/4 teaspoon kosher salt
1/8 teaspoon white pepper
1/3 cup 100% apricot fruit spread, warmed
1 tablespoon orange juice

Steps:

  • Preheat oven to 350°.
  • Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, for 30 minutes.
  • In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens.
  • Bake 30-35 minutes longer or until golden brown and juices run clear, basting several times with remaining apricot mixture.
  • Let stand for 5 minutes before serving.

2 Cornish hens
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
2 tablespoons pomegranate juice, from 3 pomegrantes (10oz)

Steps:

  • Preheat oven to 375 deress Season game hens with salt,pepper and thyme cook on rack for 1 hr.
  • or until done.
  • Brush pomegranate glaze on hens.
  • Roast another 5 mins.
  • Sprinkle with fresh pomegranat arils.
  • Serve wigth remaining glaze as a sauce.
  • Pomegranate Glaze To juice pomegranate slice in half crosswise and use a citrus juicer.
  • In stainless stell sauce pan simmer juice with a pinch of salt until reduced to a syrupy glaze about 10 Mins.

My husband and I have very differing tastes in food but this one dish we both love equally. It was adapted from a Bon Appetit magazine and is nice enough to have on special occasions. The preparation is suprisingly easy for such an elegant dish. Serve with white rice.

1 Cornish hen, halved lengthwise
1/3 cup apricot jam
2 tablespoons mango chutney
1 teaspoon mild curry powder
1/4 cup chicken broth
1 lime
1 green onion, chopped
1/4 cup salted peanuts, crushed

Steps:

  • Preheat oven to 400º.
  • Rinse and dry game hen halves and sprinkle with salt and pepper. Place on foil lined baking sheet.
  • Combine jam, chutney, and curry powder in a small saucepan over medium low heat. Once mixture comes to a boil brush two tablespoons over the game hens. Reserve the rest of the mixture for a sauce.
  • Bake games in the oven for about 35 minutes or until golden.
  • Add chicken broth to the remaining mixture in the sauce pan and bring to a boil. Reduce heat and simmer until slightly thickened.
  • When ready to serve, place games hens on a plate of rice and top with lime juice, spoon sauce around the plate. Sprinkle with green onions and crushed peanuts.

These are delicious cornish game hens, They take awhile to prepare ,but, are worth it. I have tripled the recipe. these are a family favorite. I found the recipe some time ago on the web.

2 Cornish hens
1/3 cup salt
2 tablespoons butter
salt and pepper
basil
1/2 cup peach preserves (can use Apricot)
1/2 cup butter

Steps:

  • Cut the hens down the backbone (split).
  • Brine the hens: dissolve the salt in water,put hens& salted water into large bowl.
  • (I usually put them into a large plactic bag) refrigerate 2 to 3 hours.
  • Remove hens, Rinse thoroughly, pat dry, prick the skin allover the breast and legs with point of paring knife.
  • Melt the butter in small pan& mix with preserves.
  • Add salt, pepper& basil.
  • Preheat oven to 400 degrees.
  • Place hens in shallow pan (I usually line pan with foil for easy clean-up).
  • Rub hens with butter.
  • Spoon butter& preserve mixture over hens.
  • Bake 35 to 45 minutes.

4 Cornish game hens, split, spine and wing tips removed
Extra-virgin olive oil
Kosher salt
1 bottle (12 fluid ounces) pomegranate molasses
2 cloves garlic, smashed
1/2 cup chicken stock
2 tablespoons sliced scallion greens, cut thin on the bias, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Tie each hen's legs together with butcher's twine or a blanched scallion green.
  • Coat a large saute pan with olive oil and bring to medium-high heat. Season the hens on both sides generously with salt. Carefully lay the hens in the pan, skin side down, and cook until the skin becomes brown and crispy, 6 to 7 minutes. Turn the hens over and brown on the flesh side. Do not crowd your pan, you may need to do this in batches. Remove the hens to a sheet tray.
  • Meanwhile, combine the molasses and garlic in a saucepan over medium heat. Bring the molasses to a boil and reduce by half until syrupy, about 20 minutes.
  • Brush the hens on both sides with the reduced molasses. Put the hens in the oven and roast until they are cooked through, basting occasionally, about 20 minutes.
  • Remove the hens from the oven and garnish with the sliced scallions.

1/4 cup apple jelly
1/2 teaspoon cinnamon
2 rock cornish game hens, halved
1 (6 ounce) box long grain and wild rice blend
salt
2 teaspoons apple jelly
1 1/2 cups red seedless grapes, halved or 1 red apple, cored and coarsely chopped
1/2 cup thinly sliced celery
1/3 cup unsalted cashews

Steps:

  • Combine 1/4 cup of jelly and cinnamon in a small sauce pan.
  • Heat and stir until melted; set aside.
  • Place hen halves, skin side up on a rack in a shallow roasting pan; sprinkle with salt.
  • Roast in 350 degree oven for 20 minutes.
  • Brush with the jelly/cinnamon mixture.
  • Roast for 20 to 30 minutes longer or until browned and tender.
  • While hens are roasting, cook rice and contents according to the package directions.
  • Stir in 2 tablespoons apple jelly, grapes and celery.
  • Sprinkle cashews over rice and serve with the hens.
