1 cup long grain rice
2 cups vegetable stock
1/2 teaspoon turmeric powder
3/4 cup pineapple chunk
1/2 cup mango, chunks
1/4 cup walnuts, coarsely crushed
1/3 cup raisins
1/2 cup cucumber, chopped
1/2 stalk celery, chopped
4 tablespoons lemon juice
3 tablespoons honey
2 tablespoons pineapple juice
1 clove garlic
salt, crushed
pepper, crushed

Steps:

  • Wash rice thoroughly.
  • In a pan, bring stock and turmeric powder to a boil.
  • Add rice.
  • Simmer until rice is cooked.
  • Drain, rinse and spread rice on a tray to cool.
  • Whisk dressing ingredients together in a bowl.
  • Taste and adjust seasoning.
  • In a bowl, mix rice with pineapple, mango, walnuts, raisins, cucumber and celery.
  • Gently fold in the dressing.
  • Serve.

Hawaiian Rice with Crushed Pineapple and lime makes a delicious Hawaiian Side Dish that is lightly sweet

1 cup uncooked white rice
1 can (8 oz, crushed pineapple)
water
2 tablespoons butter
juice of 1 lime
zest of 1/2 a lime
chopped cilantro

Steps:

  • Add 1 cup rice to a saucepan.
  • Drain crushed pineapple in a 2 cup measuring cup.
  • Fill remaining cup with water until you have 2 cups. Add to saucepan.
  • Add crushed pineapple and butter. Heat on medium high until boiling.
  • Once boiling, reduce heat to simmer and cover. Cook for 15-20 minutes or until rice is cooked.
  • Remove from heat. Stir well. Add lime juice, zest and mix well. (optional sugar is added here as well)
  • Serve topped with chopped cilantro.

I make this in a rice cooker and it's super simple! When I have frozen diced onion, red, and green bell pepper mix on hand, I use 2 T of that in place of the fresh onion and peppers, and it's every bit as good. I really prefer the mix of red and green peppers in this dish to just plain ol' green sweet peppers. I frequently use the reduced sodium version of both the soy sauce and the chicken broth and it turns out just fine.

1 1/2 cups cooked rice
1 (4 1/2 ounce) can shrimp, well drained
1 1/2 cups chopped celery
1/4 cup fresh green onion, chopped
150 -250 g chow mein noodles
1/2 cup salad oil
2 teaspoons curry powder
1 tablespoon soy sauce
1 teaspoon celery seed
1 teaspoon salt
3 tablespoons vinegar
1/2 teaspoon sugar

Steps:

  • In a large bowl, mix peas, rice, shrimp, celery and green onion.
  • Mix all the dressing ingredients together and mix well.
  • When ready to serve pour over salad and add chow mein noodles.
  • toss lightly.
  • Both can be prepared day before.
