SLOW COOKER POLYNESIAN PORK

Steps:
- In a bowl, combine salt, curry powder, garlic, and mango chutney until well combined.
- Rub the chutney mixture all over the pork roast. Place the roast in a slow cooker. Pour the pineapple juice in the slow cooker.
- Cook on HIGH 4-5 hours (or LOW 8-10 hours), or until pork shreds easily when pulled.
- Remove pork roast to a plate or cutting board and pull the pork into large shreds.
- Serve immediately with juices from the slow cooker, if desired. Garnish with sesame seeds and cilantro.

- Mix first six ingredients. Cut roast in half; sprinkle with salt and pepper. In a large skillet, heat oil over medium heat; brown roast on all sides., Transfer to a 5-qt. slow cooker. Pour pineapple mixture over top. Cook, covered, until a thermometer inserted in roast reads at least 145°, 3-4 hours., Remove roast from slow cooker; keep warm. Transfer cooking juices to a saucepan; bring to a boil. Mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened, 1-2 minutes. Serve with roast.

HAWAIIAN ROASTED PORK

- Season the pork roasts all over with salt and pepper. Prepare an outdoor barbecue by soaking mesquite wood chips in water and adding to the coals for added flavor. Sear the pork on the hot grill to lock in the natural juices. Whisk together guava jam, oil, and 1 teaspoon of water. Season with fresh cracked pepper. Rub the pork with guava paste. Set 2 wide pieces of heavy-duty aluminum foil on a flat surface. Lay 5 banana leaves on each piece of foil in a crisscross pattern, then place the pork roasts on top. Fold the banana leaves up around the roasts to make a bundle. Insert a sugar cane spear through the banana leaves and into the pork to secure. Tent the foil over the roasts and seal 3 of the sides to form a pouch. Mix liquid smoke and remaining water together in a small bowl, pour it into the pouch. Close up the remaining edge of foil to lock in the moisture and flavor. Transfer back to the hot grill. Roast for 2 1/2 to 3 hours with the grill cover down. When the pork is cool enough to handle, shred using 2 forks.
POLYNESIAN PORK AND RICE
I first made this yummy little dish about 30 years ago. I continue to make as is although sometimes I throw in a couple of chopped garlic cloves.

Steps:
- Cut the pork in 1-inch cubes.
- Mix the flour, salt and pepper.
- Coat the pork with the flour mixture using all the flour.
- Brown in oil in a large pan.
- Slice the celery and onion.
- Slice the peppers into thin strips.
- Add the vegetables to the pan along with the remaining ingredients. (**Do not add rice).
- Simmer covered for 30 minutes.
- Serve over rice.
- Enjoy!

- Place pork roast in slow cooker. Combine jam, brown sugar, garlic, vinegar, soy sauce, molasses and chicken broth. Mix well.
- Pour over roast. Cover and cook on low for 8 hours.
- Remove roast and sauce from slow cooker. Allow to cool.
- Place cooled roast and sauce in freezer bag. Label and freeze.
- To serve: thaw. Heat roast and sauce until hot and bubbly. Pull roast into serving pieces (or shred) and serve sauce over rice.

- Spray slow cooker with nonstick cooking spray.
- Place pork ribs, garlic and onion in slow cooker.
- Spoon about half of the pineapple with some of the juice over ribs.
- Reserve remaining pineapple and juice.
- Cover; cook on low setting for 8 to 10 hours.
- About 35 minutes before serving, drain and discard cooking juices from slow cooker; wipe edge of cooker clean.
- In small bowl, combine ketchup, brown sugar, hoisin sauce, gingerroot and remaining pineapple with juice; mix well.
- Spoon or pour evenly over ribs.
- Increase heat setting to high; cover and cook an additional 25 to 30 minutes or until ribs are glazed.
