I found this recipe on the Food Network website. It looks way too delicious! It's from the show Weighing In. I would definitely half this recipe, but thought I'd post it as is.

4 lbs boneless skinless chicken breasts, diced
1/2 cup low sodium soy sauce
1/3 cup honey
1 tablespoon hoisin sauce
2 star anise
2 tablespoons peeled and grated fresh ginger
10 green onions, sliced 1/4-inch thick
1 cup chopped fresh cilantro leaves

Steps:

  • Preheat oven to 375 degrees F.
  • In a large baking dish, mix the diced chicken, soy sauce, honey, hoisin sauce, star anise, and ginger. Bake for 35 minutes.
  • Sprinkle green onion and cilantro over top and serve.

2 tablespoons cornstarch
1 teaspoon celery salt
1/2 teaspoon garlic powder
1/2 teaspoon nutmeg
1 teaspoon paprika
4 boneless skinless chicken breasts
reserved pineapple juice
1/4 cup soy sauce
1 tablespoon brown sugar
1 (14 ounce) can pineapple chunks, drained and juice reserved
1/4 cup pitted black olives (optional)

Steps:

  • Mix together first 5 ingredients.
  • Arrange chicken in a greased roasting pan; sprinkle with spice mixture.
  • Sir together pineapple juice, soy sauce, and sugar in a small bowl.
  • Drizzle over chicken.
  • Cover and bake in a preheated 375* oven for about 45 minutes to 1 hour until tender.
  • Scatter pineapple and olives (if using) over chicken.
  • Bake, uncovered, for about 5-10 minutes until heated through.

2 pounds boneless skinless chicken breasts
1 cup barbecue sauce
1 cup crushed pineapple, undrained
1 medium onion, chopped
3/4 cup frozen pepper strips, thawed
1/4 cup sweetened shredded coconut
1 tablespoon minced garlic
1 tablespoon reduced-sodium soy sauce
1 teaspoon salt
1 tablespoon cornstarch
1/4 cup water
6 hoagie buns, split
Minced fresh cilantro, optional

Steps:

  • In a 3- or 4-qt. slow cooker, combine the first nine ingredients. Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Remove chicken; cool slightly., Meanwhile, in a small bowl, mix cornstarch and water until smooth; gradually stir into cooking juices. Cook, covered, on high 15-20 minutes or until sauce is thickened. Shred chicken with two forks. Return to slow cooker; heat through., Serve with buns and, if desired, sprinkle with cilantro. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary. Serve on buns. If desired, sprinkle with cilantro.
