2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 (8 ounce) can crushed pineapple, drained
1 1/4 cups vegetable oil
3 eggs
2 cups sugar
2 cups finely shredded carrots
1 cup chopped nuts
3/4 cup shredded coconut
1 cup chopped dates (optional) or 1 cup raisins (optional)
1 (3 ounce) package cream cheese, softened
1 tablespoon milk
1/2 teaspoon vanilla
1/4 cup butter, softened
1 cup toasted coconut
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350°F.
  • Grease a 13-by-9-inch baking pan and set aside.
  • In a large mixing bowl, using a wooden spoon (do not use a mixer), combine oil and sugar until blended.
  • Add eggs, one at a time, mixing well after each addition, and vanilla. Gradually add dry ingredients, stirring until well blended.
  • Add shredded carrots, chopped nuts, pineapple and coconut and mix just until combined.
  • Bake for 50 minutes or until top of cake springs back when lightly touched.
  • After cake has cooled, top with cream cheese frosting or serve plain.
  • Cream Cheese Frosting:.
  • Cream together the cream cheese and butter.
  • Add confectioners' sugar, milk, vanilla and most of the toasted coconut. Let cake cool completely and spread frosting on top. Decorate top with toasted coconut, if desired. Variation: Substituting 1 teaspoon of lemon zest for the vanilla and 1/2 teaspoon of fresh lemon juice for the milk will produce a nice lemony frosting.

2 teaspoons baking soda
2 teaspoons cinnamon

2 (3 1/2 ounce) jars carrots (2nd Stage baby food)
1 cup walnuts, chopped
1 (6 1/2 ounce) can pineapple, crushed
1 cup coconut

Steps:

  • Preheat oven to 350 degree.
  • Combine all ingredients in a large mixing bowl and mix well by hand (do not use electric mixer).
  • Pour into greased 9x13 pan.
  • bake 40-50 minutes or until set.
  • Serve with whipped cream.

CAKE INGREDIENTS
2 c all purpose flour
2 Tbsp granuated sugar
2 tsp baking soda
1/2 c fat free egg substitute (or 2 large eggs)
20 oz crushed canned pineapple with juice
1 c coconut, shredded
1 tsp vanilla extract
1/2 c coarsely chopped macadamia nuts, roasted and salted
*ICING
1/2 c light butter or margarine, softened (or real butter)
4 oz light or fat free cream cheese softened (or regular cream cheese)
2 c powdered sugar
1/4 c whole macadamia nuts, roasted and salted
*note: i make a double amount of frosting so i can pipe decorative swirls in which to place the nuts.

Steps:

  • 1. Preheat oven to 325. Grease and flour a 9 x 13 baking pan.
  • 2. In a large bowl, whisk together flour, baking soda and sugar. Pour the following over the flour mixture: Pineapple with the juice, coconut, eggs, vanilla and 1/2 cup of nuts. Stir batter just until all the dry is incorporated.
  • 3. Pour batter into baking pan. Bake at 325 for 35-40 minutes until toothpick inserted tests dry. Cool completely in pan on a rack.
  • 4. Make the frosting: In a medium bowl, beat together cream cheese and butter. Gradually add powdered sugar and beat on medium speed with mixer until light and fluffy. Frost the cooled cake with the icing You may reserve some for decorating or make a double batch of this recipe. Place extra frosting in a piping bag and make some little swirls as shown. Place 1/4 cup of reserved macadamia nuts on top of cake.
  • 5. Cut into squares and serve. Refrigerate leftovers.

I tasted this cake at a church in Scranton, Pennsylvania many years ago and was fortunate to be able to find the lady who baked it and beg the recipe. She was sweet to share it, but I never got her name!! It's delicious!!

1 cup oil
1/2 cup water
2 cups sugar
3 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 cup chopped walnuts
1 (6 1/2 ounce) can crushed pineapple in juice
1 cup shredded coconut
2 cups shredded carrots
1/2 pint heavy whipping cream
1 (3 1/2 ounce) package vanilla instant pudding mix
1 cup milk

Steps:

  • Combine all ingredients in a large bowl and mix with a spoon. Pour into a greased and floured 13X9 baking pan and bake at 350* for 50 minutes. Cool.
  • Prepare frosting by whipping all ingredients together and cover cake. Garnish with coconut and refrigerate.

2 small jars strained carrots (see note)
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking powder
1 small can crushed pineapple, drained
1/2 pound coconut
1 cup chopped nuts

Cream Cheese Frosting:
1 (3-ounce) package cream cheese, softened
2 tablespoons butter, softened
1 teaspoon vanilla
2 - 3 cups powdered sugar

Steps:

  • Beat oil, sugar, eggs, vanilla, and carrots in mixer. Add dry ingredients that have been sifted together 2 times. Add pineapple, coconut, and nuts. Bake in greased Bundt pan 350° for 50-55 minutes. Frost with Cream Cheese Frosting. Cream Cheese Frosting: Combine; thin with a little cream to make it spread nicely. Note: Can use 1 cup cooked mashed carrots or grated carrots.
