POLENTA CHIPS

One 18-ounce tube prepared polenta
3 tablespoons olive oil
Nonstick cooking spray, for the baking sheet
1/4 cup grated Parmesan
1 cup marinara sauce, heated

Steps:

  • Put a baking sheet in the oven and preheat the oven to 425 degrees F.
  • Slice the tube of polenta in half lengthwise, then slice each half in half lengthwise again. Slice each piece into 1/4-inch-thick slices to make triangular pieces with a rounded base. Add to a large bowl, drizzle with the olive oil and toss to coat.
  • Remove the baking sheet from the oven and spray with nonstick cooking spray. Transfer the polenta bites to the baking sheet and bake for 20 minutes. Flip each bite and bake until crispy but still slightly tender on the inside, an additional 10 to 15 minutes. Sprinkle with the Parmesan and bake until the cheese is melted and lightly browned, another 5 minutes.
  • Let cool slightly, transfer to platter and serve with a side of marinara for dipping.

Crispy on the outside, soft and melting on the inside, these delicious snacks are a great alternative to regular chips or fries or served on their own perhaps with a tomato relish to accompany them. You can use any cup or mug to measure the ingredients, adjust salt accordingly

2 cups polenta (yellow cornmeal)
2 cups chicken stock or 2 cups vegetable stock
2 cups water
1/2 cup grated parmesan cheese
1 tablespoon butter
1/2 teaspoon salt
cooking cooking spray

Steps:

  • In a large pan bring the water and stock to a rolling boil.
  • Whisking constantly, add the polenta all at once in a steady stream.
  • Reduce the heat and cook stirring constantly for about 10 minutes or until really thick. Be careful as thick polenta tends to 'erupt' like a volcano if left unattended, keep stirring being careful not to burn the bottom.
  • Stir in the cheese and butter then season with salt.
  • Taste and adjust seasoning if necessary, if you think it needs something then add it! I like finely chopped pickled jalapeño peppers personally.
  • If the polenta is really thick then it is ready to pour into a square dish lined with cling film.
  • Once cold it will be set and firm. Set the oven to 200C/400°F Turn out the polenta, remove cling film and cut into thick chips.
  • Arrange on a baking tray lined with foil and sprayed generouly with cooking spray. Coat the chips with plenty of spray and bake for 20-40 minutes or until crisp and browned, turning over once during cooking and spraying again if necessary.
  • The time they take to cook will depend on the size you cut them.
  • Delicious and different but not 'out there'.

2 cups chicken stock
2 tablespoons rosemary, finely chopped
1 garlic clove, crushed
1/2 cup instant polenta
1/4 cup parmesan cheese, finely grated
olive oil flavored cooking spray

Steps:

  • Grease a 6cm deep, 19cm square cake tin. Line base and sides with baking paper, extending paper 2 cm from edge of pan on all sides. Place stock, rosemary and garlic in a medium saucepan over high heat. Bring to boil. Reduce heat to low.
  • Add polenta in a slow steady stream, stirring constantly. Cook, stirring for 5 minutes or until thickened. Stir in parmesan. Spread polenta into prepared pan. Cover. Refrigerate for 3 hours or until set.
  • Preheat oven to 220 degrees Celsius Remove polenta from pan. Cut in half. Cut each half into 2cm wide chips. Place on a greased wire rack over a baking paper lined baking tray. Spray with oil. Bake 15 minutes or until golden and crisp.
  • Note: Chips can be frozen, unbaked, for up to one month.
  • Cooking time excludes the refrigeration time.

Iain Hewitson is my favourite Australian chef, he serves these chips at his Melbourne resturant Tolarno's. Serve them as an appetiser or as a side dish -- great with sweet chilli sauce. Prep time doesn't include the overnight cooling.

2 cloves garlic
1/2 cup chicken stock
250 g polenta (cornmeal)
4 cups cold water
salt
100 g freshly grated parmesan cheese
1 cup breadcrumbs
2 eggs
1/2 cup milk
1/2 cup flour
6 cups vegetable oil

Steps:

  • Cook the garlic in the chicken stock until it is tender& set aside.
  • Combine the polenta& 2 cups of the cold water, stir until mixed.
  • Bring the other 2 cups of cold water to the boil in a large pot with the salt.
  • Add the polenta mix and cook for 5 minutes, stirring vigoursly.
  • Turn the heat down to low& cook for 30 minutes until mixture comes away from the sides.
  • Chop the garlic very finely, then add to the polenta with the parmesan, stir until combined.
  • Pour the mixture into an oiled baking tray& spread out to about 1/2 centimetre thick.
  • Cool overnight.
  • Cut into chips.
  • Beat the eggs& milk together.
  • Dust the chips in the flour, dip in the egg, then coat in the breadcrumbs.
  • Repeat this process until all the chips are crumbed.
  • Heat the oil in a large pot until hot.
  • Deep-fry the chips until they are golden brown.
  • Drain well& serve hot.

POLENTA & PROSCIUTTO CHIPS

250g ready-made block of polenta
90g pack prosciutto
1 tbsp olive oil
25g parmesan
tomato ketchup , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut the polenta into 18 chunky chips and the prosciutto into 18 strips. Put the polenta in a bowl along with the oil and a good grinding of pepper, and mix together. Wrap a strip of prosciutto around a polenta chip, then pop onto a baking tray. Repeat with the remaining chips and sprinkle over the Parmesan.
  • Bake for 25-30 mins until golden, turning them over after 15 mins. Serve with tomato ketchup, if you like.

LOBSTER SCAMPI OVER CREAMY POLENTA WITH GARLIC CHIPS



Lobster Scampi over Creamy Polenta with Garlic Chips image

Canola oil
3 cloves garlic, thinly sliced
Kosher salt
2 tablespoons canola oil
1 shallot, minced
5 cups lobster or shrimp stock, warmed
1 cup quick-cooking polenta
1 cup grated Monterey Jack
1/4 cup heavy cream
1/4 cup creme fraiche
Kosher salt and freshly ground black pepper
3 tablespoons butter, at room temperature
2 cups lobster meat, cut into bite-size pieces
2 cloves garlic, made into a paste
1/3 cup white wine
2 tablespoons chopped fresh parsley
2 sprigs fresh tarragon, leaves removed and chopped
Zest of 1 lemon
Fresh chervil sprigs, for garnish
Freshly ground black pepper

Steps:

  • For the garlic chips: Add the oil to a small saute pan to fill 1/4 inch up the sides and heat over medium-high heat. Once heated, add 1 garlic slice to test; if it sizzles when added, then add the remaining garlic. Fry until golden brown. Remove the chips from the oil and place on a paper-towel-lined plate. Season with salt. Make sure not to step away, constantly stir and be ready to remove once golden brown.
  • For the polenta: To a medium saucepan over high heat, add the oil and shallots and sweat the shallots, 3 to 4 minutes. Add the warmed stock to the pan and bring to a boil over high heat. Add the polenta in a fine stream, whisking constantly with a wire whisk. Once all the polenta has been added, reduce the heat to low. Stir, using a wooden spoon, every 5 minutes and continue cooking until all the liquid has been absorbed and the mixture is very creamy, 10 to 15 minutes.
  • Remove from the heat and stir in the cheese and heavy cream until combined. Stir in the creme fraiche. Taste and season with salt and pepper.
  • For the lobster sauce: To a saute pan over medium-high heat, add 1 tablespoon of the butter and melt. Add the lobster and toss to combine. Add the garlic paste and cook until fragrant, about 30 seconds. Deglaze with the white wine and reduce. Add the remaining 2 tablespoons butter and swirl to combine. Remove from the heat and add the parsley, tarragon and lemon zest.
  • To serve: Add some of the polenta to a plate. Top with some of the sauteed lobster and sauce. Garnish with garlic chips, chervil and freshly ground black pepper.

POLENTA CHIPS - GLUTEN FREE

These are a great snack or side-dish dipped in your favourite dipping sauce Also good for a party finger food or buffet dish. As with all gluten free cooking ensure you use GF ingredients. I use Massel brand liquid stock as it is gluten free. Makes approx 40 chips. You can use vegetable stock to make a vegetarian option. As a variation you can cut these into small rounds (instead of chips) using a biscuit cutter and serve them as an appetizer topped with your favourites eg smoked salmon and ricotta.

4 cups chicken stock
2 cups polenta (cornmeal)
1 1/4 cups grated parmesan cheese
1 cup plain gluten-free flour, ensure gluten free is used
3 eggs, lightly beaten
2 cups dried gluten-free breadcrumbs, ensure GF (or you can used a purchased GF packaged crumbing mix)
vegetable oil, for deep frying

Steps:

  • Grease and line with baking paper a 4cm deep x 22cm x 28cm slab pan.
  • bring the stock and 2 cups of water to the boil in a large saucepan.
  • Gradually add the polenta to the stock in a thin and steady stream, whilst whicking constantly. Ensure the mixture is evenly mixed.
  • Reduce heat to medium-low and stir with a wooden spoon for 20-25 minutes. The grains should be soft. Add the parmesan cheese and season lightly with salt and pepper.
  • Spoon the polenta into the prepared pan and smooth over the surface with wet fingertips. Refrigerate for 3 hours or overnight, until firm.
  • Cut the polenta into 7cm long chips that are 2cm wide. Alternately you can cut into other desired shapes.
  • oat chips firstly in the flour, dip in beaten eggs and coat in crumbs. You can use glutenfree bread crumbs or a commercial GF packaged crumb mix. Alternatively you can use dry polenta in place of breadcrumbs.
  • Deep fry chips in small batches until golden and crisp. Transfer to a wire rack to drain (or use kitchen paper).
  • Sprinkle with salt and serve as a side dish or with your favourite dipping sauce.
