TOASTED ITALIAN SUB SANDWICHES



Toasted Italian Sub Sandwiches image

Toasted hoagie rolls, filled with ham, salami, pepperoni and melted cheese, topped with lots of veggies and oil and red wine vinegar. This is one sensational sandwich!

1 hoagie bun
1 Tablespoon garlic basil pesto
4 slices deli ham
4 slices hard salami
8 small slices of pepperoni
4 slices mozzarella cheese
slices of red onion
slices of red ripe tomato
crisp lettuce
pepperoncini slices
sliced black olives
red wine vinegar and olive oil
salt and pepper
dried oregano

Steps:

  • Preheat the oven to 300 degrees.
  • Slice the hoagie roll in half, but not all the way through. Lay it open-faced on a cookie sheet lined with parchment paper.
  • Slather 1/2 Tablespoon of basil pesto on each inside half.
  • Top each side with ham, salami, pepperoni, and mozzarella cheese slices.
  • Bake for 10 minutes or until bread is toasted and cheese is melted.
  • Top with the toppings of your choice.
  • Drizzle with red wine vinegar and olive oil to taste.
  • Give a sprinkle of salt and pepper and dried oregano.
  • Fold to form a sandwich and serve warm.

Great tasting hot subs. Good for get-togethers or just for a quick supper. Make sure and add enough hard salami to each sub, it adds a lot of flavor and the melted cheese tastes so good on it.

12 round kaiser rolls
1 lb deli ham, thinly sliced
1 lb hard salami
1 lb turkey breast, thinly sliced
1 lb mozzarella cheese, sliced
1/2 yellow onion, thinly sliced
1/4 cup Italian dressing
italian seasoning (or oregano)
12 sheets aluminum foil

Steps:

  • Preheat oven to 350 degrees.
  • Brush Kaiser rolls with 1 teaspoon Italian dressing over each side.
  • Divide the meat among the 12 rolls and stack on bottom half of each roll.
  • Add a few slices of onion on top of meat and top with 2 slices of cheese.
  • Sprinkle lightly with Italian seasoning or oregano and add top of roll.
  • Wrap each in aluminum foil making 12 flying saucer looking wraps.
  • Bake in oven for 15 minutes.
  • Serve warm right out of the foil.

I once brought this veggie sub to a family picnic as an option for a few adults I knew wouldn't necessarily want to eat a stack of cured Italian pork for lunch. The adults were out of luck, though, because almost all the kids opted for the veg version over the meat. Below is what you will need for one twelve-inch sub to feed five people. Double or triple as needed depending on the size of your party. You can use the classic Italian red wine vinegar and oregano dressing for this since you probably already have that on hand - but also keep in mind that a basic vinaigrette works well, too.

1 12-inch baguette, the best quality you can find
1 avocado, halved and sliced into thin half-moons
3 ounces Swiss or provolone cheese
24 thin slices of hothouse cucumbers (the narrow kind you don't have to peel or seed that usually comes wrapped in plastic), from about 1 small cucumber
1 large tomato, the best you can find, sliced (very thin) horizontally and then in half
8 to 10 lettuce leaves from a head of Bibb, Boston, romaine, or oak leaf
1/4 small red onion, very thinly sliced
1/4 cup red wine vinegar
1/3 cup good-quality olive oil
1/2 teaspoon dried oregano
1 tablespoon mayonnaise

Steps:

  • Slice the baguette in half lengthwise and on the bottom half, start by layering the avocado then the cheese, slightly overlapping as you go. Lay down the cucumbers in two adjacent rows, overlapping slightly, on top of the cheese. Distribute the tomato halves, overlapping as well, then the lettuce and onion.
  • When ready to serve, whisk together the vinegar, olive oil, and oregano until emulsified, then drizzle on the top baguette half. Spread the mayo on top of the vinaigrette.
  • Close the sandwich with the top baguette half, then stick in 5 toothpicks, one every 2 to 2 1/2 inches along the top. Place on a cutting board and slice into 5 separate sandwiches.

2 eggs
1 tablespoon dried or chopped fresh oregano
1 tablespoon dried or chopped fresh basil
1 tablespoon fresh ground black pepper
1 teaspoon salt
1/2 cup finely chopped red onion
1 cup bread crumbs
1/4 cup chopped garlic
1 pound lean ground beef
1/4 cup warm water
1/4 teaspoon yeast
2 cups high-gluten flour
1/2 teaspoon salt
1/2 teaspoon sugar
Cornmeal, for work surface
2 tablespoons olive oil, for brushing
1 tablespoon sesame seeds
4 cups ground tomatoes
1/4 cup tomato paste
1 teaspoon chopped fresh basil or dried
1 teaspoon chopped fresh oregano or dried
1/4 teaspoon fresh ground black pepper
1/4 teaspoon sugar
1/2 cup chopped garlic
1/2 cup grated Parmesan
1 1/2 cups grated mozzarella
Dried oregano, for sprinkling
Dried basil, for sprinkling

Steps:

  • Preheat oven to 550 degrees F.
  • In a medium mixing bowl, add the eggs and whisk well. Add oregano, basil, pepper, salt, onions, bread crumbs and garlic and mix well. Add the ground beef and combine well. Using your hands or a 2-ounce scoop, roll meat into 1 1/2 to 2-inch balls and place on a baking sheet. Use a baking sheet that has a lip on it, as the meatballs will create a lot of moisture. Bake for approximately 20 minutes or until the balls are sizzling and brown on the outside but still nice and pink in the center.
  • Add warm water and yeast to the mixing bowl of a stand mixer. Let the yeast work for approximately 10 minutes. Add flour, salt and sugar and mix on low for approximately 10 minutes. Check consistency and add more flour or water to create a sticky ball that is slightly moist to the touch. Turn mixer up a notch and mix until the dough is nice and soft. It should not stick to the bowl and should be able to be lifted out with ease. On a cornmeal dusted work surface roll the dough into a flat round approximately 6 inches wide. Brush with olive oil and sprinkle sesame seeds on top. Place dough on a sheet pan. Cut round into 4 equal wedges, but do not separate and bake in the preheated 550 degree F. oven until golden brown (approximately 10 minutes). Do not over-bake, as there is still 1 more bake to go.
  • Place all the sauce ingredients in a large bowl and whisk well.
  • Cut buns in half, horizontally. Place bun halves side by side on a baking sheet. Cut 5 or 6 meatballs in half and pile on buns. Ladle approximately 1 cup of sauce on top of meatballs. Put as much of the grated mozzarella cheese on top that will stay and lightly sprinkle with oregano and basil. Put the baking sheet in the oven and bake until the cheese has melted and the edges of buns are nicely toasted.
