ROASTED TOMATOES

12 plum tomatoes, halved lengthwise, cores and seeds removed
4 tablespoons good olive oil
1 1/2 tablespoons balsamic vinegar
2 large garlic cloves, minced
2 teaspoons sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, sugar, salt, and pepper over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.

Caprese Skewers with Plum Balsamic Drizzle image

20 bocconcini (mozzarella balls)
1 cup extra-virgin olive oil
1 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper
One 15-ounce jar plum preserves
1 cup balsamic vinegar
20 fresh rosemary sprigs
2 pints grape tomatoes

Steps:

  • Put the bocconcini in a large bowl with the olive oil, red pepper flakes and some salt and pepper. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour.
  • In a food processor or blender, puree the plums with the balsamic vinegar until smooth. Pour the mixture into a medium pot and bring to a boil over medium-high heat. Turn the heat down to simmer and cook until the mixture has reduced by about half, several minutes. It should be fairly thick, but remember, it will continue to thicken as it cools. When cool, pour it into a squeeze bottle and refrigerate.
  • Trim about 2 inches of the leaves off the bottoms of the rosemary sprigs. Skewer a tomato followed by a bocconcino onto each. Arrange on a platter, cover and refrigerate until ready to serve. Just before serving, squeeze over the plum balsamic drizzle.

VEAL CHOPS AND BALSAMIC-THYME ROASTED TOMATOES AND MUSHROOMS



Veal Chops and Balsamic-Thyme Roasted Tomatoes and Mushrooms image

4 portobello mushroom caps
5 plum tomatoes, cut in half lengthwise
Salt and freshly ground black pepper
3 tablespoons balsamic vinegar (eyeball it)
4 tablespoons extra-virgin olive oil (EVOO)
1 tablespoon fresh thyme leaves, chopped (from 4 sprigs)
4 1- to 1 1/2-inch-thick bone-in rib veal chops
1 large shallot, chopped
1/2 cup dry white wine (a couple of glugs)
1/2 cup chicken stock or broth
2 tablespoons cold unsalted butter
1/4 cup fresh flat-leaf parsley leaves (a generous handful), chopped
Crusty bread

Steps:

  • Preheat the oven to 450°F.
  • Place the portobello mushrooms and plum tomatoes on a rimmed cookie sheet. Season with salt, pepper, balsamic vinegar, 2 tablespoons of the EVOO, and the thyme; toss in the seasonings to coat thoroughly. Arrange the mushrooms gill side up and the tomatoes flesh side up. Put them in the oven and roast for 12 minutes, or until cooked through. Once roasted, remove from the oven, thinly slice the mushrooms, and cut the plum tomatoes in half again. Reserve any pan juices.
  • While the mushrooms and tomatoes are roasting, start the veal chops. Heat a large skillet over medium-high heat with the remaining 2 tablespoons of EVOO (twice around the pan). Liberally season the veal chops with salt and pepper. Once the skillet is screaming hot and you see the first wafts of smoke rising, add the chops to the hot skillet and cook on the first side for 5 minutes. Resist the temptation to move the chops around in the pan; you want a nice brown crust on them and messing with them won't help you get there. Before flipping the chops, reduce the heat to medium. Flip, and cook them on the second side for 8 to 10 minutes, or until the desired doneness. Remove the chops from the pan and let them rest, tented with aluminum foil, for about 5 minutes.
  • While the veal chops are resting, return the skillet to medium-high heat, add the shallots, and cook for 1 minute. Add the wine and the chicken stock. Bring up to a simmer and reduce by half, about 2 to 3 minutes. Turn the heat off and add the butter, stirring with a spoon until the butter has completely melted. Add the parsley and the roasted sliced mushrooms and roasted chopped tomatoes along with any pan juices, and stir to combine. Serve the chops with the balsamic-thyme roasted tomatoes and mushrooms, and with some crusty bread.

16 ounces fresh salted mozzarella
12 fresh basil leaves, julienned

Steps:

  • Preheat the oven to 275 degrees F.
  • Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with 1/4 cup of olive oil and the balsamic vinegar. Sprinkle with the garlic, sugar, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Roast for 2 hours until the tomatoes are concentrated and begin to caramelize. Allow the tomatoes to cool to room temperature.
  • Cut the mozzarella into slices slightly less than 1/2-inch thick. If the slices of mozzarella are larger than the tomatoes, cut the mozzarella slices in half. Layer the tomatoes alternately with the mozzarella on a platter and scatter the basil on top. Sprinkle lightly with salt and pepper and drizzle lightly with olive oil. Serve at room temperature.

1 teaspoon white balsamic vinegar
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
1 1/2 pounds heirloom tomatoes, various colors, cut into wedges
3 ripe plums, cut into wedges
8 ounces burrata cheese
1/4 cup fresh basil leaves, thinly sliced
10 fresh mint leaves, thinly sliced
Sea salt flakes, for garnishing
