1/2 cup superfine sugar
1 1/4 lbs black currants
1/2 lemon, juice of
1 tablespoon egg white
mint leaf (to garnish)

Steps:

  • In small saucepan over medium-high heat, bring the sugar and 1/2 cup of water to a boil, stir until the sugar dissolves. Boil the syrup for 2 minutes, then remove the pan from the heat and set aside to cool.
  • Remove the black currants from the stalks by pulling them through the tines of a fork.
  • In a blender, process the black currants and lemon juice until smooth. ALternatively, chop the black currants coarsely, then add the lemon juice. Mix in the sugar syrup.
  • Press the puree through a sieve to remove the seeds.
  • Pour the puree into a non-metallic, freezer proof dish. cover the dish with plastic wrap or a lid, and freeze until the sobet is almost firm, but still a little slushy.
  • Cut the sorbet into pieces and put into the blender. Process until smooth, then with the machine running, add the egg white and process until well blended. Transfer the sorbet back into the dish, and freeze until almost firm. Chop the sorbet again and process until smooth. ( I know this seems like a lot of processing, but it makes the sobet very smooth, and is really necessary).
  • Serve immediately ot freeze, tightly covered, for up to 1 week. Let soften 5-10 minutes at room temperature before serving, garnish with mint leaves.

2 cups sugar
2 cups water
4 cups blackberries
2 to 3 tablespoons fresh lemon juice
2 tablespoons black currant syrup

Steps:

  • Stir sugar and water together in a 2 1/2-quart souffle dish. Cook, uncovered, at 100 percent in a high-power oven for 3 minutes. Stir thoroughly, being sure there are no grains on the bottom of the dish. Cover with a lid or microwave plastic wrap. Cook for 6 minutes. Prick plastic, if used, to release steam.
  • Remove from oven and uncover. Let cool. Refrigerate until cold, several hours or overnight.
  • Pass blackberries through a food mill fitted with the fine disk. Whisk in lemon juice, black currant syrup and sugar syrup. Refrigerate until cold.
  • Place in an ice-cream machine and freeze according to manufacturer's instructions.

4 pounds ripe plums, halved and pitted
2 cups firmly packed light brown sugar
1/2 cup granulated sugar
1/3 cup fresh lemon juice

Steps:

  • Bring the plums, brown sugar, and granulated sugar to a boil in a large pot. Cook over medium heat until the plums have broken down, about 5 minutes.
  • Transfer the plum mixture to a food processor, add the lemon juice, and puree.
  • Refrigerate until fully cool before following your ice-cream maker's manufacturer's suggestions for freezing.

1 cup packed light brown sugar
1/4 cup granulated sugar

  • Halve and pit plums and in a large saucepan cook with remaining ingredients over moderate heat, stirring, until plums release their liquid and mixture comes to a simmer. Simmer mixture, stirring, 5 minutes and cool slightly.
  • In a blender purée mixture in 2 batches and pour through a fine sieve into a bowl. Chill mixture, covered, until cold, about 2 hours. Freeze mixture in an ice-cream maker. Transfer sorbet to an airtight container and put in freezer to harden. Sorbet keeps, covered and frozen, 1 week.

1-1/2 pounds black plums (about 5), pitted and chopped
3 tablespoons fresh lemon juice, or to taste
1/2 cup sugar
2 tablespoons kirsch

Steps:

  • In a saucepan combine the plums, the lemon juice, and 1/4 cup water and cook the mixture over moderate heat, stirring occasionally, for 10 to 15 minutes, or until the plums are soft. While the plums are cooking, in a small saucepan combine the sugar and 3/4 cup water, cook the mixture over moderate heat, stirring, until the sugar is dissolved, stir in the kirsch. In a blender or food processor purée the plums with the kirsch syrup. Strain the purée through a fine sieve into a bowl, let it cool, and freeze it in an ice-cream freezer according to the manufacturer's instructions.

1/4 cup crème de cassis

Steps:

  • Bring sugar, corn syrup, and 1/2 cup nectar to a boil, stirring until sugar is dissolved, then boil 1 minute. Transfer to a metal bowl and stir in crème de cassis and remaining 2 1/2 cups nectar. Set bowl in a larger bowl of ice and cold water and let mixture stand, stirring occasionally, until cold, about 10 minutes. Freeze in ice cream maker, then transfer to an airtight container and put in freezer to harden, at least 1 hour.
