Roast Basil Chicken, Basil Baby Potatoes, Frisee Plum Salad image

Provided by Food Network Kitchen

Time 1h10m

Yield 4 servings

Number Of Ingredients 13

Kosher salt
3 cups fresh basil leaves
1 stick unsalted butter, at room temperature
1 clove garlic, grated
Finely grated zest of 1 lemon
1 3 1/2-pound chicken
Freshly ground pepper
1 1/2 pounds baby potatoes
1 tablespoon white wine vinegar
1 teaspoon whole-grain mustard
3 tablespoons extra-virgin olive oil
1 head frisee, torn (about 5 cups)
2 plums, cut into 1/2-inch wedges

Steps:

  • Preheat the oven to 425 degrees F and set a wire rack on a rimmed baking sheet. Bring a medium saucepan of salted water to a boil. • Spatchcock the chicken: Cut along each side of the backbone with kitchen shears; discard the backbone. Open the chicken like a book; flip over. Press down on the backbone to flatten. Drain and transfer to a large bowl; toss with half of the remaining basil butter and season with salt and pepper.
  • Whisk the vinegar and mustard in a large bowl. Gradually whisk in the olive oil. Add the frisee, plums and the remaining 1 cup basil. Season with salt and pepper; gently toss to coat. Spread the remaining basil butter over the chicken; carve. Serve with the potatoes and salad.

Let cool, then put the bread in a food processor with the almonds. Process until crumbs form. For the stuffed piquillos or tomatoes: Drain and flake the tuna, then combine with the olives, parsley, celery, onions, lemon juice and EVOO. Season with pepper and add more EVOO to taste. Stuff the piquillos and/or tomatoes with the tuna salad. Ladle the gazpacho into bowls and serve topped with the breadcrumbs. Cook's Note: If you are not serving immediately, store the tuna salad and the gazpacho, covered, in airtight containers in the refrigerator. 1 tablespoon Chinese five-spice powder
1 tablespoon packed light brown sugar
Pinch of cayenne pepper
1 large pork tenderloin (about 1 1/4 pounds)
Kosher salt and freshly ground black pepper
3 tablespoons rice vinegar
2 tablespoons honey
1 tablespoon low-sodium soy sauce
1 teaspoon dijon mustard
1 teaspoon grated peeled fresh ginger
1/4 cup plus 2 tablespoons vegetable oil
3 large plums, halved and pitted

1 cup chopped fresh mint
1/2 cup chopped roasted salted cashews

Steps:

  • Preheat a grill to medium high. Combine the five-spice powder, brown sugar and cayenne in a small bowl. Butterfly the pork: Slice lengthwise down the center, stopping about ½ inch before cutting all the way through. Open the pork like a book and flatten slightly with your hands. Lay a piece of plastic wrap on top and pound with the flat side of a meat mallet or a skillet until ½ inch thick. Season with salt and black pepper, then rub all over with the five-spice mixture; set aside. (This can be done up to 2 hours ahead; cover and refrigerate.)

GRILLED SHELLFISH AND POTATO SALAD WITH AVOCADO SALSA, SCALLION OIL, AND PLUM COULIS

Grilled Shellfish and Potato Salad with Avocado Salsa, Scallion Oil, and Plum Coulis image

Yield Makes 6 servings

Number Of Ingredients 9

2 bunches scallions (about 1/2 pound)
1/2 cup olive oil
1/2 pound fingerling potatoes or other small boiling potatoes
3 tablespoons olive oil
3/4 pound large shrimp (about 12)
3/4 pound sea scallops (about 18)
Avocado Salsa
4 cups loosely packed mesclun (mixed baby greens; about 4 ounces)
Plum Coulis

Steps:

  • Chop enough scallions (including greens) to measure about 1 1/4 cups and in a blender purée with oil and salt and pepper to taste until smooth. Pour purée through a fine sieve into a bowl, pressing hard on solids. Discard solids. Scallion oil may be made 1 day ahead and chilled, covered. Bring oil to room temperature before using.
  • In a large saucepan cover potatoes with salted cold water by 1 inch and simmer until just tender, about 7 minutes. In a colander drain potatoes and rinse under cold water to stop cooking. Pat potatoes dry. Potatoes may be prepared up to this point 1 day ahead and chilled, covered. Halve potatoes lengthwise. In a bowl toss potatoes with 1 tablespoon olive oil and season with salt and pepper.
  • Peel and devein shrimp. Remove tough muscle from side of each scallop if necessary. Pat shellfish dry and in a bowl toss with remaining 2 tablespoons olive oil and salt and pepper to taste.
  • Prepare grill.
  • Grill potatoes, cut sides down, on an oiled rack set 5 to 6 inches over glowing coals 1 to 2 minutes on each side, or until lightly charred. Grill shrimp and scallops 2 minutes on each side, or until just cooked through and golden brown. (Alternatively, sauté potatoes and shellfish in a lightly oiled non-stick skillet in batches over moderately high heat.)
  • Spoon salsa onto centers of 6 plates and mound mesclun on top. Arrange shellfish and potatoes around salsa and greens (see photograph, page 72). Drizzle shellfish and potatoes with some scallion oil and drizzle greens with some coulis. Serve remaining scallion oil and coulis on the side.

3 tablespoons fresh lime juice, or to taste
2 1/2 tablespoons seasoned rice vinegar
1 tablespoon sugar, or to taste
4 teaspoons Asian sesame oil
1 teaspoon Asian chile paste
3/4 teaspoon salt
1 lb cleaned small squid
1 teaspoon vegetable oil
1/4 teaspoon black pepper
4 firm-ripe medium plums (1 1/4 lb), halved lengthwise, pitted, and each half cut into sixths
3/4 lb Napa cabbage, thinly sliced crosswise (4 cups)
1/2 cup packed fresh cilantro leaves
1/2 cup packed fresh mint leaves
1/4 cup thinly sliced scallion
1/2 cup coarsely chopped salted peanuts
Accompaniment: lime wedges
Special Equipment
a well-seasoned ridged grill pan

Steps:

  • Whisk together lime juice, vinegar, sugar, sesame oil, chile paste, and 1/4 teaspoon salt.
  • Cut squid bodies open to make flat pieces and, holding knife almost parallel to work surface (at a 30-degree angle), score inner side of flattened squid in a crosshatch pattern (do not cut all the way through). Pat squid bodies and tentacles dry and toss with vegetable oil, 1/4 teaspoon salt, and pepper.
  • Heat lightly oiled grill pan over moderately high heat until hot but not smoking, then grill squid bodies, in batches if necessary, crosshatch sides down first, turning once, until just cooked through (squid will curl up as it cooks), about 2 minutes. Transfer to a cutting board as grilled and keep warm, covered. Grill tentacles in same manner. Cut squid bodies crosswise into 1-inch pieces.
  • Grill plums, in batches if necessary, turning once, until grill marks appear, about 2 minutes. Transfer as grilled to a bowl.
  • Toss cabbage with cilantro, mint, scallion, 1/4 cup peanuts, half of dressing, and remaining 1/4 teaspoon salt. Mound salad on plates and top with squid and plums. Drizzle with dressing to taste and sprinkle with remaining 1/4 cup peanuts.

GRILLED PLUM SALAD WITH AGED GOUDA AND PECANS

Grilled Plum Salad with Aged Gouda and Pecans image

Provided by Food Network Kitchen

Categories     side-dish

Time 37m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons sherry vinegar
1 teaspoon honey
3/4 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
4 ripe plums (about 1 pound), pitted and quartered
1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
3 cups torn escarole leaves (about 1/2 head)
1 bunch watercress, washed, dried, and stems trimmed (about 3 cups)
4 ounces aged Gouda cheese, thinly sliced
1/4 cup pecan halves, toasted

Steps:

  • For the dressing: Whisk the vinegar, honey, 3/4 teaspoon salt, and pepper to taste in a large bowl. Gradually whisk in oil, starting with a few drops and adding the rest in a steady stream to make a smooth, slightly thick vinaigrette. Set aside.
  • For the salad: Heat a grill pan over medium-high heat. Brush the plums with olive oil and sprinkle with salt and pepper to taste. Grill the plums until slightly soft, about 1 minute per side. To get distinct grill marks, resist the temptation to move the fruit around on the pan as it cooks. Cut the plum wedges in half crosswise and toss with the dressing. Set the plums aside to marinate in the dressing for 15 minutes. (The salad can be prepared up to this point 1 hour before serving.)
  • Right before serving, toss the greens with the plums and dressing. Divide the salad among 4 serving plates and scatter the cheese and pecans over the tops.

Grill meat for 10 to 14 minutes for medium-rare to medium doneness (145 degrees F to 160 degrees F) and onion slices about 10 minutes or until tender, turning both meat and onion slices once halfway through grilling time. Let meat stand for 5 minutes. Thinly slice meat. Coarsely chop onion. Place mache in a large salad bowl or arrange on a large platter. Top with meat, onion, and plums. Drizzle with half of the Creamy Chimichurri Dressing. If desired, pass remaining dressing. Creamy Chimichurri Dressing Directions: In a small bowl stir together mayonnaise, yogurt, vinegar, and garlic. Stir in parsley, crushed red pepper, and salt. Serve immediately or cover and refrigerate for up to 1 week. Before serving, if necessary, stir in enough milk to reach desired consistency.

ARMENIAN SPINACH PLUM SALAD

Armenian Spinach Plum Salad image

This is a tasty spring salad. You may substitute any low cal dressing for the one included in the recipe, I sometimes like a honey french instead of the vinaigrette. This is low cal too!!
