15 oz tomato sauce
6 oz tomato paste
1/3 cup apple cider vinegar
2 tbsp maple syrup
1 tbsp molasses
1 tbsp dijon mustard
2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/2 cup pitted and sliced plums
3-6 chipotles in adobo (depending on spiciness preference)
1 tbsp adobo sauce from can of chipotles in adobo

Steps:

  • Add all ingredients to a food processor and blend until completely smooth.
  • Taste and adjust. Add more salt if necessary, more chipotles to make it spicier, maple syrup to make it sweeter, or more apple cider vinegar if you prefer a more vinegary punch.
  • Spread on your favorite grilled meats and use as a condiment as desired.

5 to 6 pounds pork spareribs
3/4 cup reduced-sodium soy sauce
3/4 cup plum jam or apricot preserves
3/4 cup honey
2 to 3 garlic cloves, minced

Steps:

  • Cut ribs into serving-size pieces; place with bone side down on a rack in a shallow roasting pan. Cover and bake at 350° for 1 hour or until ribs are tender; drain. , In a small bowl, combine the remaining ingredients; brush some of the sauce over ribs. Bake at 350° or grill over medium heat, uncovered, 30 minutes longer, turning and basting occasionally.

3 cups washed pitted plums, with skins I used red but I suppose you could use other types as well. chop in food processor
1 (28 ounce) can chili sauce
1 cup brown sugar
1 cup white wine vinegar
2 fresh garlic cloves, diced and then crushed
1/2 cup white onion, minced
2 teaspoons jalapeno peppers, minced. i used canned
1/2 tablespoon sea salt
1 teaspoon dry mustard
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
2 tablespoons olive oil

Steps:

  • Throughly chop plums in food processor then transfer into a cooking pot.
  • Add all remaining ingredients except olive oil stirring between additions.
  • Bring to a boil and reduce to a simmer.
  • simmer on stove for 15 minute or until the onions are translucent and it reaches a good saucy consistency.
  • Add the olive oil, stir and remove from heat.
  • After it cools down some you can put into a bowl or clean jars and transfer it into the refrigerator.
  • Will keep in fridge for up to two weeks.

3 tablespoons rice vinegar

Cornstarch, optional
Sugar

Steps:

  • Place the plums in a blender or food processor. Add the water and mix at high speed until the plums are pureed. Pour the puree into a 1-quart saucepan. Add the remaining ingredients and simmer over low heat for 20 minutes to reduce the sauce. If necessary, add cornstarch to thicken the sauce.
  • Remove from heat. Add sugar, to taste. Serve hot or cold.

5 plums
1 tablespoon minced fresh ginger
1 strip lemon zest (about 2x1/2in)
1 hot chili pepper, seeded (if you like it hot leave the seeds in)
2 scallions, both white and green parts finely chopped
1 large garlic clove, minced
3 tablespoons soy sauce
1 tablespoon molasses
2 tablespoons honey
1 tablespoon rice vinegar
2 teaspoons fresh lemon juice
1/2 cup water

Steps:

  • Combine all the ingredients in a saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer, uncovered, until the plums are very soft about 5 minutes. Transfer to a blender and puree then return to pan. Taste for seasoning and add additional soy sauce, honey or lemon juice if necessary to taste. The sauce will be sweet, sour and spicy.
  • Transfer to a bowl and serve warm or at room temperature. It's awesome with ribs or pork.
