1/2 cup balsamic vinegar
2 tablespoons white wine or chicken broth
2 tablespoons Dijon mustard
2 tablespoons honey
5 garlic cloves, minced
1 tablespoon olive oil
8 salmon fillets (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon minced fresh oregano

Steps:

  • Combine the first 6 ingredients in a small saucepan. Bring to a boil; cook and stir for 4-5 minutes or until thickened., Place salmon skin side down on a greased 15x10x1-in. baking pan. Sprinkle with salt and pepper. Spoon glaze over salmon; top with oregano., Bake, uncovered, at 400° until fish flakes easily with a fork, 12-15 minutes.

1 1/4 pounds salmon fillets, 1-inch thick
1 cup bottled Champagne vinaigrette
2 tablespoons Dijon mustard
Cedar or alder grilling plank soaked in equal parts of red wine and water for at least 2 hours
Salt and pepper
1/3 cup finely chopped fresh herb leaves (parsley, oregano, basil, marjoram, etc.)

Steps:

  • In a large zip-top bag, combine salmon, Champagne vinaigrette, and mustard. Squeeze out air and seal bag. Gently massage bag so that everything is thoroughly combined. Marinate in refrigerator for 30 minutes.
  • Set up grill for direct cooking over medium-high heat. Remove salmon from marinade and discard marinade. Place on wine-soaked plank, season with salt and pepper and cover
  • with herbs. Place planked salmon on grill. Cover grill and cook for 8 to 12 minutes or until done. Remove from grill and serve hot.
  • INDOOR: Marinate and prepare salmon as directed. Preheat oven to 450 degrees F. Remove salmon fillets from marinade and place on a baking sheet lined with foil. Season with salt and pepper and cover with herbs. Roast for 8 to 10 minutes, remove from oven and let stand tented with foil for 5 minutes. Serve hot.

This is the easiest, most flavorful honey-baked salmon that the whole family will be able to enjoy. It comes together in 30 minutes and only requires eight ingredients. Oh, and that honey-lime drizzle at the end is to die for - no one will judge you for slurping it down! Baking the salmon at a high heat not only quickens the cooking time, but also helps to crisp up the honey glaze and spice mixture that coats the fish.

Nonstick cooking spray, optional
Four 6-ounce portions skin-on salmon fillets
1/4 cup honey
Zest and juice of 1 lime
1 tablespoon light brown sugar
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
  • Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
  • Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
  • Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

1 1/2 tablespoons balsamic vinegar
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
12 ounces salmon steaks, about 1/2 inch thick

This is my favorite grilled salmon. It is grilled on a cedar plank (make sure you soak the plank for at least 8 hours). The ingredients are the perfect blend. The original recipe has it baked in an oven at 400 degrees for 15 to 20 minutes. We cook it at the same temp and time on the grill. You could use 4 - 6 ounce portion fillets (skin on) on 2 cedar planks. We prefer half a side of salmon with the skin on. The recipe is by Michael Chiarello. I like to serve this with wild rice and a tossed green salad.

1 lb salmon fillet
1 tablespoon sea salt
1/2 teaspoon ground pepper
1/4 teaspoon dry mustard
1/2 cup honey
1/4 cup balsamic vinegar
1 tablespoon butter, melted
1 cedar plank (soaked in water for at least 8 hours)
1 tablespoon olive oil

Steps:

  • Presoak cedar plank for 8 hours.
  • Preheat grill to 400 degrees.
  • Cut a few slits in the side of the salmon, but don't go all the way through, halfway. Do the same if using portions. The slits allow the glaze to absorb into the fillet.
  • In a bowl mix salt, pepper and dry mustard.
  • In a glass bowl, microwave the honey for about 30 seconds to liquefy. Remove bowl and blend in balsamic vinegar.
  • With a basting brush, baste the salmon with butter. Apply dry seasoning mix (salt, pepper and dry mustard) on flesh side of salmon and lightly rub it into the salmon(don't tear flesh). I just pat the dry seasoning on.
  • With the basting brush baste the salmon with the honey balsamic mixture. Reserve liquid for later.
  • Heat the planks on the grill over medium heat for 3-5 minutes to brown them. Watch so they don't catch on fire. Remove from grill and rub olive oil on the browned side of plank. Lay salmon on the oiled side of the plank with skin side down and baste with remaining reserved liquid.
  • Cook for 15 to 20 minutes or until done. A thicker cut may take a little longer. If cooking in an oven use a cookie sheet to prevent a mess.
  • Note: prep time doesn't include cedar plank soak time of 8 hours.
