A Recipezaar adoptee. I've made a few changes in the forms of mustard, egg, oil, and oregano. I also decreased the amount of garlic to three cloves from the original 6. Go for the larger if you're a garlic fanatic.

1 teaspoon Dijon mustard
1/2 teaspoon salt
1 large pasteurized egg
1 1/4 cups light olive oil
1 tablespoon white vinegar
2 tablespoons lemon juice
3 cloves garlic, finely minced or crushed
1 tablespoon fresh oregano, finely chopped
1 teaspoon Worcestershire sauce
1/8 teaspoon freshly ground pepper (to taste)

Steps:

  • In a food processor or blender, mix mustard, salt, egg, and vinegar.
  • Add oil very slowly, beating constantly.
  • Add lemon juice.
  • Pulse in minced garlic, oregano, worcestershire sauce, and pepper.
  • Refrigerate mixture.
  • NOTE: The risk of illness is very low with raw eggs, but to be sure, use a pasteurized egg.

Easy and delicious dressing. Salad-haters tell me that they will eat a whole bucket of salad as long as it has this dressing on it. I have also brushed this dressing onto homemade pizza dough (in lieu of tomato sauce) when I make pizza at home. Note: If you do not have any red wine vinegar you can substitute a tablespoon of red wine (any kind will do) with a splash of regular vinegar. (Not really a new idea; just an easy substitution!)

1/4 cup extra virgin olive oil (or less)
1 -2 tablespoon fresh lemon juice
1 tablespoon red wine vinegar
1/2 teaspoon granulated sugar
1 -2 garlic clove, finely minced
1/2 teaspoon dried oregano
kosher salt
fresh ground black pepper

Steps:

  • Combine all ingredients in a small container and shake vigorously.
  • Chill in refrigerator at least 1 hour prior to serving (Note: this is optional - you can use the dressing right away if you want to, but it usually tastes better if you let it sit for a while.) Let dressing return to room temperature before serving.
  • For the actual salad I use baby salad greens, kalamata olives, tomatoes, thinly sliced red onions, and goat cheese.
  • Prepare the salad/salad bowls with all of the greens, tomatoes, etc.; but wait to add the dressing until just before serving.

It can be used for picnics and travels very well, since it doesn't need to be refrigerated. This is the best dressing I have ever tasted, people offer to buy it constantly, but if we sold it we wouldn't be able to make enough to use in the restaurant!

1 ½ quarts olive oil
⅓ cup garlic powder
⅓ cup dried oregano
⅓ cup dried basil
¼ cup pepper
¼ cup salt
¼ cup onion powder
¼ cup Dijon-style mustard
2 quarts red wine vinegar

  • In a very large container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.

2 fresh garlic cloves, minced then crushed
1/4 teaspoon salt (optional)
1 1/2 teaspoons Dijon mustard (Grey poupon)

1/2 teaspoon sugar
5 tablespoons red wine vinegar
1/2 teaspoon basil leaves (optional)
1/4 teaspoon oregano leaves (optional)

Steps:

  • Mix all ingredients together and shake well to mix.
  • Update 6/23/10: For a creamier dressing, add all ingredients except oil to a blender. Pulse several times to mix ingredients. With blender running on high, slowly pour oil into blender until mixture is creamy. Refrigerate.
