This homemade pizza recipe is topped with a ricotta blend, three more cheeses and a tangle of deeply flavored sauteed onions.

1 tablespoon unsalted butter
3 large yellow onions (about 1 1/2 pounds halved lengthwise, and thinly sliced)
½ teaspoon Kosher salt
Freshly ground pepper (to taste)
½ teaspoon sugar
1 cup fresh ricotta (preferably whole milk)
½ cup finely grated Grana Padano cheese
2 teaspoons minced fresh oregano (or 1 teaspoon dried)
2 anchovies (rinsed and very finely minced into almost a paste (optional))
Freshly ground pepper (to taste)
1 pound pizza dough, or 1 package refrigerated pizza dough
2 cups grated fresh mozzarella
1 cup grated Fontina Cheese
Snipped chives (to serve, optional)

Steps:

  • In a large skillet, melt the butter over medium heat. Add the onions and salt and pepper if using, and cook, stirring occasionally, until softened and just beginning to brown about 30 minutes.
  • Add the sugar, reduce the heat to medium low, and cook, stirring frequently, for another 20 minutes, until the onions are soft and nicely browned. Keep a close eye on the heat, and lower it a bit if the onions on the bottom of the pan starts to burn. If the onions start to stick you can add a tablespoon or two of water and give it a stir; repeat as needed. Taste and adjust the seasonings. Let cool slightly.
  • Preheat oven to 425°F. Blend the ricotta, Grana Padano, oregano, anchovies and pepper together in a medium bowl. Press the dough out into a rectangle, letting it rest between shaping. or, unroll the pizza dough right on its parchment paper onto a rimmed baking sheet. Spread the ricotta mixture over the dough, leaving a ½-inch border.
  • Sprinkle half of the grated mozzarella and half of the grated fontina evenly over the ricotta. Spread the caramelized onions evenly over the cheese, then sprinkle the rest of the grated mozzarella and fontina over the onions. Bake until the edges of the crust golden brown and when a spatula is slid under the tart it lifts up firmly, about 22 to 26 minutes.
  • Distribute the chives over the pizza, if desired. Serve warm or at room temperature, cut into squares.

1 prepared pizza crust (ready-to-bake pizza crust)
2 tablespoons olive oil
4 cups yellow onions, sliced (about 3 medium onions)
1 tablespoon garlic, minced
2 tablespoons balsamic vinegar
1/2 cup sweet bell pepper, grilled and chopped
4 ounces goat cheese, crumbles
2 ounces provolone cheese or 2 ounces mozzarella cheese, shredded
1/4 cup grilled chicken, grilled

Steps:

  • To caramelize the onions, heat the olive oil in a large skillet over medium heat.
  • Add the onions and garlic and cook over medium-low heat for about 20 minutes, stirring frequently, until the onions are very soft and lightly browned.
  • Add the balsamic vinegar and cook a few more minutes, then remove from heat.
  • Preheat the grill to low-medium heat (or preheat your oven to 400 degrees).
  • Spread the caramelized onions evenly over the pizza crust.
  • Top the onions with the chopped peppers, crumbled goat cheese, shredded provolone, and chicken.
  • Cook for 10-15 minutes, making sure the crust does not burn.
  • Remove from the grill or oven and let set 5 minutes before slicing.

1 tablespoon unsalted butter
1/2 yellow onion, thinly sliced
Homemade Pizza Dough (recipe follows), prepared through step 10
All-purpose flour, for dusting
1 tablespoon olive oil, plus more as needed
3/4 cup ricotta cheese
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, melted
1 garlic clove, minced or 1 teaspoon garlic powder
3 to 4 slices prosciutto
1 cup baby arugula
2 tablespoons balsamic glaze
Parmesan cheese, shaved
1 1/4 teaspoons active dry yeast
1/2 teaspoon sugar
1/4 cup warm water (95° to 110°F)
3 1/2 cups bread flour
2 teaspoons kosher salt
1/2 cup olive oil
1 cup plus 1 tablespoon room-temperature water
Cooking spray

Steps:

  • Preheat the oven to 500°F. Place a 12-inch cast-iron skillet in the oven to preheat for 15 to 20 minutes.
  • Meanwhile, in another large cast-iron skillet, melt the butter over medium-low heat until it bubbles. Add the onions and sauté, stirring occasionally, until golden brown, 20 to 25 minutes.
  • Stretch the pizza dough out into a 12-inch round. In the preheated cast-iron skillet, drizzle some oil, then add the dough round.
  • Drizzle with 1 tablespoon of oil. Spread the ricotta on top and season with salt and pepper. Bake until golden, 10 to 15 minutes.
  • When the pizza comes out, mix the melted butter, garlic, and a pinch of salt. Brush it along the crust of the pizza. Tear the prosciutto into small pieces or strips and place on top. Top with the arugula and caramelized onions. Drizzle with olive oil and balsamic glaze, then top with shaved Parmesan cheese.
  • Transfer to a cutting board and cut into 8 slices to serve.
  • In a small bowl, stir together the yeast, sugar, and warm water. Let stand until foamy, about 5 minutes.
  • Add the flour to the bowl of a stand mixer fitted with the dough hook. Sprinkle the salt over the flour and mix on low speed for 15 seconds to distribute the salt.
  • Add the olive oil, room-temperature water, and yeast mixture and mix on low speed for 1 to 2 minutes, then increase the speed to medium and mix until a ball of dough forms, about 5 minutes.
  • Spray a medium bowl lightly with cooking spray. Shape the dough into a ball and set it in the bowl seam side down. Cover the bowl with plastic wrap and place in a warm area until doubled in size, about 1 hour.
  • When the dough is almost risen, place a cast-iron pizza stone on the center rack of the oven and preheat the oven to 500°F.
  • When the dough has risen, remove the plastic wrap and push down on the dough to release the gases and bubbles. Shape it into a ball. (If using the dough later, cover with plastic wrap and place in the refrigerator for up to 12 hours. The dough will slowly proof during that time. Once you're ready to use it, set it out for 30 minutes to come to room temperature.)
  • Spread a piece of parchment paper about 1 1/2-feet long on a work surface. Stretch the dough into a 14-inch round on the parchment.
  • Top with your favorite toppings. Carefully pull the oven rack with the pizza stone halfway out of the oven and transfer the parchment and pizza dough to the stone.
  • Bake until the crust is golden, 13 to 15 minutes. Transfer the pizza to a cutting board and cut into 8 slices to serve.

CARAMELIZED ONION, SAUSAGE AND BASIL PIZZA

3 tablespoons extra-virgin olive oil, plus extra for drizzling
1 tablespoon unsalted butter, at room temperature
2 onions (about 1 1/2 pounds), thinly sliced
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 pound spicy turkey or pork sausage, casings removed, crumbled
All-purpose flour, for dusting
1 (13 to 16-ounce) ball pizza dough
3/4 cup (3 ounces) crumbled Gorgonzola or blue cheese
1/4 cup chopped fresh basil leaves

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 475 degrees F. Sprinkle a heavy baking sheet (without sides) with cornmeal and set aside.
  • In a large skillet, melt 3 tablespoons of olive oil and the butter over medium-low heat. Add the onions, salt and pepper. Cook, stirring occasionally, until golden and caramelized, about 20 minutes. Increase the heat to medium-high and add the sausage. Using a wooden spoon, break up the sausage and cook, stirring constantly, until cooked through, about 8 minutes. Set aside to cool slightly.
  • On a lightly floured work surface, roll out the dough into a 13-inch diameter circle, about 1/4-inch thick. Transfer the dough to the prepared baking sheet and drizzle with olive oil. Spread the onion mixture evenly over the dough, leaving a 1-inch border. Sprinkle the cheese on top. Bake until the crust is golden and the cheese has melted, about 15 to 17 minutes. Remove from the oven and sprinkle with chopped basil. Cut the pizza into wedges and serve.

HOT SAUSAGE AND CRISPY CHARD PIZZA

3 tablespoons olive oil, divided
3/4 pound hot Italian sausage, casings removed
1 bunch Swiss chard, ribs and stems sliced into 1" pieces, leaves torn
Kosher salt, freshly ground pepper
1 pound prepared pizza dough, room temperature
1/3 cup finely grated Parmesan
1 tablespoon rosemary leaves
1 cup grated Fontina cheese
1 cup ricotta

Steps:

  • Place a rack in upper third of oven and preheat to 450°F. Heat 2 Tbsp. oil in a large skillet over medium-high. Add sausage and break into small pieces with a wooden spoon. Let cook, undisturbed, until bottom sides are browned, about 4 minutes. Add chard stems; cook, tossing occasionally, until crisp-tender, about 2 minutes. Transfer sausage and chard stems to a medium bowl with a slotted spoon.
  • Let skillet and drippings cool until just warm, then add chard leaves, turning to coat. Season with salt and pepper; transfer to bowl with sausage mixture.
  • Coat dough with remaining 1 Tbsp. oil and stretch into an 18x12" oval on a large rimmed baking sheet; season with salt and pepper. Top with half of Parmesan and rosemary, followed by sausage mixture, Fontina, ricotta, then remaining Parmesan and rosemary.
  • Bake pizza, rotating sheet halfway through, until crust is golden brown and crisp, 18-22 minutes. Let cool 5 minutes.

PIZZA WITH CARAMELIZED ONIONS, FIGS, BACON AND BLUE CHEESE

Here is a recipe for pizza that calls to mind - at least this mind - the joys of car travel through southeastern France, where pizzas such as this are available at all the imaginary cafes in small towns near the Italian border. It certainly tastes as if it comes from that region and, if you close your eyes as you eat it, you can almost imagine yourself halfway through a drive from Aix to Turin. The time spent caramelizing the onions is more than worth it, so do it the day before you intend to make the pie. Which is when, as it happens, you should make the dough as well. And we have a recipe for that as well - a version adapted from the team behind the magical Roberta's Pizza in Brooklyn.

2 tablespoons butter
1 large Spanish onion
2 teaspoons fresh thyme leaves
2 bay leaves
Kosher salt
4 thick slices bacon, cut into 1/4-inch thick batons
1 ball pizza dough
Flour, for dusting surface
12 dried mission figs, stems trimmed, cut into quarters or small pieces
3/4 cup crumbled Gorgonzola
Extra-virgin olive oil, to drizzle
Freshly cracked black pepper

Steps:

  • At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
  • Melt the butter in a large sauté pan over high heat. Add the onions, thyme and bay leaves. Cook for 5 minutes, stirring often, until the onions begin to wilt. Reduce the heat to medium-low and cook, stirring occasionally, until the onions have softened and turn a deep, golden brown, about 25 minutes. Season to taste with salt and pepper. Remove the bay leaves and transfer the onions to a small bowl.
  • Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
  • Place the pizza dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, careful not to press on the dough and weigh it down: the caramelized onions first, then the figs and bacon, and finally the Gorgonzola, leaving roughly a 1/2 inch border. Shake the pizza peel slightly to make sure the dough is not sticking. Carefully slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Drizzle with a little olive oil and some cracked black pepper. Serve hot. Makes 1 pizza.
