When my husband and I needed a quick meal, I fixed this recipe using leftover ingredients. Unlike traditional Mexican quesadillas, it calls for Italian meats, cheeses and seasoning. Serve it with a green salad for a simple dinner for two. -Barbara Rupert, Edgefield, South Carolina

1 cup meatless spaghetti sauce
2 teaspoons butter, softened
4 flour tortillas (10 inches)
1 cup shredded part-skim mozzarella cheese
8 thin slices hard salami
12 slices pepperoni
1/4 cup shredded Parmesan cheese
1/2 teaspoon dried oregano

Steps:

  • In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. Top with remaining tortillas, buttered side up. , Cook on a griddle over medium heat for 2-3 minutes on each side or until cheese is melted. Cut into wedges; serve with warmed spaghetti sauce.,

Cheesy, versatile, cheesy, easy, cheesy, fast, and did I mention cheesy? This scrumptious pizza-quesadilla hybrid is our new favorite easy weeknight meal.

2 8- inch flour tortillas
3/4 cup shredded mozzarella cheese
1/2 cup shredded fontina cheese
1/2 cup shredded provolone cheese (or about half of a one-ounce slice)
1/4 cup shredded Parmesan cheese
1/4 cup pizza sauce plus additional sauce for dipping
Optional pepperoni
1/4 cup sliced pepperoni per quesadilla

Steps:

  • Lay a tortilla flat, and on the bottom half only, spread 2 tablespoons pizza sauce. Sprinkle half the mozzarella, fontina, provolone, and Parmesan cheeses. Repeat with second tortilla. Evenly lay the pepperoni over the cheese, if using.
  • Carefully fold the top half over to create a half-moon shape.
  • Place the in a pre-heated panini press and cook until cheese is melted and outside is golden-crisp. Alternately, cook in a saute pan drizzled with vegetable oil or canola oil over medium-high heat, carefully flipping occasionally, until the cheese is melted and both sides are golden-brown.
  • Cut into wedges and serve with additional pizza sauce for dipping.

8 flour tortillas, I used Trader Joe's handmade tortillas
8 ounces shredded mozzarella cheese
1/3 pound pepperoni
1 (16 ounce) jar pizza sauce
1 (6 ounce) can sliced black olives (optional)
1 cup of sliced cremini mushrooms (optional)

Steps:

  • Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer on a paper towel to drain. Brush each tortilla with a thin layer of pizza sauce so that if you turned it over, none would drip. Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired. Sprinkle with another layer of cheese and place the other tortilla on top, sauce side in. Heat a medium cast-iron skilled over medium heat. Lay quesadilla in the pan and cook for 3 to 5 minutes on each side, until cheese is melted and tortillas are crispy. Slice into quarters and serve with a little bowl of pizza dipping sauce.

8 burrito-size flour tortillas
1 1/2 cups pizza sauce
3/4 cup four-cheese Mexican blend cheese
40 -50 pepperoni slices

Steps:

  • Spray large skillet with nonstick spray and preheat to medium heat.
  • Place tortillas on a plate and put 3 tablespoons pizza sauce on half of each one.
  • Then top with 1 - 1 1/2 tablespoons cheese and 5 - 7 pepperoni slices.
  • Fold plain side of tortilla over filled side to make a semi-circle and place in preheated skillet. (Only 2 tortillas will fit in skillet at the same time.).
  • Cook until golden brown, flip and cook until golden brown on second side.
  • For added effect or as an appetizer, cut cooked quesadilla in half while cooling.

12 flour tortillas (fajita size)

1 cup pepperoni slices
3 cups pizza sauce (divided)

Steps:

  • Preheat a skillet or griddle to medium high heat.
  • Spray the surface with cooking spray and place one tortilla on the heated surface.
  • Top the tortilla with ¼ cup of the shredded cheese and allow to melt.
  • Once the cheese is melted, top with sliced pepperoni and ¼ cup of sauce.
  • Sprinkle another layer of cheese, top with a second tortilla and flip once the bottom layer is crispy and golden.
  • Cook the opposite side until golden brown.
  • Use a pizza slicer or knife to slice and serve. Serve with remaining marinara for dipping.
