A quick easy way to spice up Ramen into a tasty treat even the pickiest eater will love. This recipe calls for tomato sauce, you can use any kind you like on pizza, plain, seasoned, spaghetti sauce, etc. Whatever you have around.

1/2 small onion, cut into strips
1/2 small red bell pepper, cut into strips
1 teaspoon olive oil
1 (3 ounce) package ramen noodles
2 cups water
1 teaspoon salt
2 tablespoons tomato sauce
1 teaspoon italian seasoning
15 -20 sliced pepperoni, cut into 4 wedges
1 tablespoon canned sliced ripe olives
2 tablespoons shredded mozzarella cheese
1 tablespoon grated parmesan cheese

Steps:

  • Heat olive oil in a small saucepan, add onion and pepper, and cook until slightly softened.
  • Add water, bring to a boil. Add salt (or use Ramen seasoning packet), add Ramen to pot, and boil until softened.
  • Drain pasta, onions and peppers, add tomato sauce, Italian seasoning, pepperoni, olives, and cheeses. Mix well and enjoy.

found in simple & delicious magazine and sounded good submitted by angie dierikx...liked that it was more like pizza than like lasagna noodles. note that the spaghetti sauce mix is a standard envelope and I did not know size and had to put in a size and not sure what oz. size it is...it is one of the envelopes you find all the spice envelopes to make chili, spaghetti, tacos..... after making I used my own pizza dough recipe as 16 oz. hot roll mix + 1 cup warm water was not enough for size pan. see my directions with my substitution

1 lb ground beef
8 ounces tomato sauce
1/4 cup water
1 (1 1/4 ounce) envelope spaghetti sauce mix, divided
16 ounces hot roll mix
1 cup warm water (120 degrees)
12 ounces small curd cottage cheese
1/4 cup parmesan cheese, shredded
1 cup shredded mozzarella cheese (4 oz)

Steps:

  • In large skillet, cook beef until no longer pink; drain. Stir in tomato sauce, water and 3 tablespoons spaghetti sauce mix; heat through.
  • In a large bowl, combine contents of flour and yeast packets from hot roll mix; add remaining spaghetti sauce mix. (This seemed like not enough dough and I opted to use my own dough adding the spaghetti sauce mix to that) and you could probably use a premade crust also.
  • if using the hot roll mix; Stir in warm water until dough pulls away from sides of bowl. Turn onto a lightly floured surface; knead until smooth and elastic, about 5 minutes. or prepare your own dough.
  • Roll into a 17" X 12" rectangle. Transfer to a greased 15" X 10" x 1" baking pan; build up edges slightly.
  • spread cottage cheese over dough. Top with meat mixture and parmesan cheese.
  • Bake at 400 degrees for 20 minutes or until bubbly. Sprinkle with mozzarella cheese. Bake 5 minutes more til cheese it melted. Let stand 5 minutes before serving.

Yield Makes 6 to 8 servings

Number Of Ingredients 6

1 pound ziti, rigatoni, or shells
1 tablespoon olive oil
3 cups Bolognese meat sauce, marinara tomato sauce, or store-bought pasta sauce
1 pound ricotta cheese
1 pound mozzarella, coarsely shredded or thinly sliced
Grated Pecorino Romano or Parmesan cheese, for serving

Steps:

  • 1. Cook the pasta according to the package directions. Drain thoroughly.
  • 2. Preheat the oven to 400°F. Spread the oil around the bottom and sides of a 3-quart baking dish.
  • 3. In a large bowl (or the pot you cooked the pasta in), mix together the pasta and sauce. Gently fold in the ricotta cheese. (You just want it to be partially and unevenly blended in.)
  • 4. Put the pasta mixture into the baking dish. Cover with mozzarella and bake for 25 minutes, or until the cheese is all melty and spotty brown. Serve with grated cheese.
