They're portable, sort of like a mini pizza, except shaped like a cupcake. They're a great savory snack and a great addition to a game day buffet. Feel free to customize to your family's tastes with additions like ham, sausage, bell peppers, salami, mushrooms, olives, jalapenos, etc. I recommend not omitting the tomato, that really adds something special.

cooking spray
8 medium cherry tomatoes
1 (11 ounce) can refrigerated pizza crust
8 teaspoons shredded mozzarella cheese
½ cup pizza sauce (such as Classico®)
8 teaspoons finely chopped red onion
½ cup shredded mozzarella cheese
8 slices pepperoni, quartered
Italian seasoning to taste
red pepper flakes to taste
garlic salt to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 8 cups of a muffin tin with cooking spray.
  • Finely chop cherry tomatoes and drain any liquid. Set aside.
  • Unroll pizza crust on a floured work surface and roll out thinly into a large rectangle. Using a 4-inch round cookie or biscuit cutter, cut 8 circles in the dough. Place dough circles in the prepared muffin cups, pressing dough into the bottom and up the sides of each cup.
  • Drop 1 teaspoon mozzarella into each cup. Top with 1 tablespoon of pizza sauce. Add chopped tomatoes and red onions. Add 1 tablespoon of mozzarella to each cup, and top with pepperoni. Sprinkle each cup with Italian seasoning, red pepper flakes, and garlic salt to taste.
  • Bake in the preheated oven until cheese is bubbling and melted, 14 to 15 minutes. Remove from the oven and let cool in the tin for about 5 minutes. Remove from the tin and serve hot.

1 ½ cups all-purpose flour
1 tablespoon white sugar
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 teaspoons baking powder
½ cup milk
2 tablespoons milk
⅓ cup vegetable oil
1 large egg
1 cup shredded mozzarella cheese
1 ½ ounces diced pepperoni
½ cup pizza sauce, for dipping

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 9 wells in a cupcake tin with nonstick cooking spray, or line with paper liners (spray the liners with nonstick cooking spray).
  • Combine flour, sugar, salt, garlic powder, Italian seasoning, and baking powder in a bowl. Whisk to combine and make a well in the center.
  • Add milk, oil, and egg to the well and whisk them gently together to blend before using a fork or spatula to incorporate the wet ingredients into the dry. Stir mozzarella cheese and pepperoni into the sticky batter. Divide batter amongst the prepared muffin cups.
  • Bake in the preheated oven until cupcakes are lightly browned and baked through, 13 to 15 minutes. Cool in the pan for 1 to 2 minutes, then move to a cooling rack. Serve warm with pizza sauce for dipping if desired.

This is a very easy recipe thats oh so delicious. This is a good one to make with the kids or grandkids. The recipe is very versatile. You could very easily make these vegetarian. I got 9 cupcakes out of this recipe. you can top these with more pepperoni and mozzarella if you wish. We like them just the way they are. We dip ours...

Number Of Ingredients 12

1 1/2 c all purpose flour
1 Tbsp baking splenda (or 2 tbsp. reg sugar)
1/2 tsp salt
2 tsp baking powder
1 egg
1/2 c oil (i use canola)
1/3 c milk
1 c mini pepperoni
1 c shredded mozzarella
OPTIONAL TOPPING
1 c mini pepperoni
1 c shredded mozzarella

Steps:

  • 1. Preheat oven to 400. Grease muffin pan. You can use liners if you wish but this dough tends to stick to the liners. It was easier just to go without.
  • 2. Mix flour, sugar, salt and baking powder. Add oil, egg, and milk into flour mixture. Stir until smooth. It will be sticky. ( you can add and additional 2 TBSP of ilk if you wish). Fold/stir in cheese and pepperoni. Fill muffin cups about 2/3 full.
  • 3. Bake for 18 min, until golden brown and knife inserted in center comes out clean. It only took my oven about 15 min. Take out and let cool. Right before eating top with cheese and mini pepperoni and bake for 4-5 min at 350 until cheese is melted.
