EASY PITCHER OF MARGARITAS

Easy Pitcher of Margaritas image

This recipe is great because it uses frozen concentrate limeade instead of sour mix, which I think makes them better! Sometimes sour mixes can be hit or miss, but the frozen limeade makes them consistent. Once you dump the limeade in your pitcher, just reuse the can to measure the water and the tequila. We like them much better than some restaurants here in Texas, plus the pitcher is great for entertaining instead of making individual glasses. The secret ingredient is the almond syrup. You can find the almond syrup in the coffee aisle as a flavoring in the big bottle. You can use this as a basic margarita, and add flavors to change it up: mango, strawberry, peach, etc....

Time 10m

Yield 1 pitcher, 6-8 serving(s)

Number Of Ingredients 6

1 (12 ounce) can frozen limeade concentrate, thawed
30 ounces water
12 ounces tequila, gold or silver
3 ounces triple sec or 3 ounces Cointreau liqueur
2 ounces almond syrup
3/4 cup fresh lime juice

Steps:

  • Put all of the ingredients in a pitcher. Use the empty limeade can to measure the water (2 1/2 cans) and tequila (1 can).
  • Stir to mix. I don't put ice in the pitcher since they will water down.
  • Serve with or without a salted rim over ice or frozen.
  • Any leftovers can be kept in the fridge.

MARGARITAS BY THE PITCHER

Margaritas by the Pitcher image

A fantastic margarita without a mix. The better the alcohol, the smoother the taste (that goes without saying), but these are pretty fabulous with even fairly cheap tequila and triple sec! Serve over ice for margaritas on the rocks or make several hours ahead and freeze for amazing margarita slushies!

BEST FRESH MARGARITAS BY THE PITCHER

Best Fresh Margaritas by the Pitcher image

This is a wonderful recipe for Margaritas on the Rocks by the pitcher-full! It is best to prepare the lime-lemon juice and zests mixture before hand to allow them to meld appropriately -- Cooking time reflects refrigeration time. I discovered this in Cook's Illustrated Magazine -- just in time for summer! I have altered the ingredients to suit my personal taste. Enjoy!

Yield 4 servings

Number Of Ingredients 12

Margarita:
2 ripe Bosc or Bartlett pears
1/3 cup lime juice, from about 3 limes
2/3 cup tequila blanco
2 tablespoons maple syrup
Ice cubes, for the blender and each glass
A small handful fresh cilantro, leaves and tender stems
Cardamom bitters, optional
Rim salt:
2 teaspoons chile powder
2 teaspoons fine salt
1 teaspoon lime zest, from one of the above limes pre-juicing

Steps:

  • Peel pears and scoop out just the seeds; the slightly harder parts of the flesh will purée well. Chop into large chunks and place in the blender.
  • Add lime juice, tequila, maple syrup, and 3/4 cup ice. Give everything a long whir until you have a smoothie-like consistency. Add the cilantro and pulse a few more times for green, herby flecks.
  • Now let the flavors mingle in the blender while you prepare the rims.
  • On a small plate, mix the chile powder, salt, and lime zest.
  • Grab 4 glasses-about 6-ish ounces each. Run one of the spent lime wedges along each rim, then dip in the salt mixture, evenly coating the rim.
  • Fill glasses halfway with ice, add 1-2 dashes of optional bitters, then pour 4 margaritas for 4 lucky people.

1 tablespoon simple syrup or agave nectar (as needed)
1/8 cup kosher salt (for glass rim)

  • Strain out the watermelon solids: Pour the ingredients through a fine mesh strainer into a pitcher, pressing the solids to get as much liquid out as you can.
  • Prep the glasses: Assuming you imbibe with flair, take a small plate or bowl and fill it with the salt. Next, rub the rim of a cocktail or coupe glass (or a canning jar) with a wedge of a wedge of lime. Dip the glass into the salt and give it a small turn or two.
  • Serve and garnish: Pour the cocktail into the prepared glasses and garnish with a lime wedge.
