1 pita bread
cream cheese, as needed
apricot jam, as needed
butter, as needed
1 dash cinnamon

Steps:

  • Take a round sesame seed pita bread and cut in half.
  • Spread inside of each half some cream cheese.
  • On top of each bread half spread a little butter, apricot jam and sprinkle with a small dash of cinnamon.
  • Bake in a 350 degree oven until crispy.

These are so easy to make and addictive to eat! They are a hit with all my friends, some of whom just eat them without any dip. They are great on their own or with dessert hummus. Try them with my recipe for Pumpkin Pie Dessert Hummus; you won't be disappointed.

2 whole wheat, Greek-style pita breads
2 tablespoons olive oil
1 teaspoon ground cinnamon
½ teaspoon white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut each pita bread into 8 wedges and brush with olive oil. Sprinkle cinnamon and sugar on top and place wedges on a baking sheet.
  • Bake in the preheated oven until crispy on the edges and slightly soft in the middle, 12 to 14 minutes; they will harden as they cool.
  • Serve immediately or store in an airtight container after cooling.

PITA BREAD FRENCH TOAST

For an easy snack, use up any leftover pita bread you have for this sweet twist on French toast.

1 1/2 cups whole milk
6 large eggs
1/2 cup granulated sugar
2 tablespoons finely grated lemon zest
1/2 teaspoon ground nutmeg
1/8 teaspoon coarse salt
4 pitas
1 tablespoon unsalted butter
Confectioners' sugar

Steps:

  • In a large shallow dish, whisk together milk, eggs, sugar, lemon zest, nutmeg, and salt. Cut 4 pitas in half crosswise and place in dish. Soak 15 minutes, flipping halfway through.
  • In a large nonstick skillet, melt butter over medium until foaming. Lift 4 pita halves from egg mixture, letting excess drip off, and cook until golden brown on both sides, about 12 minutes, flipping halfway through. Transfer to a plate and cover with foil to keep warm; repeat with remaining pita halves. Cut into wedges and dust with confectioners' sugar.

4 mini pitas, split open
1/4 cup almond butter
1/4 cup chocolate-hazelnut spread
1 banana, thinly sliced
Confectioners' sugar, for dusting.

Steps:

  • Spread one side of the inside of each pita with 1 tablespoon almond butter and the other side with 1 tablespoon chocolate-hazelnut spread. Sandwich one-quarter of the banana slices between the 2 sides of each pita and cook on a grill pan over medium heat until the chocolate spread has melted, 4 to 5 minutes per side.
  • Dust with confectioners' sugar and serve immediately.
