12 hard-boiled eggs, peeled, cut in half, and yolks removed
4 ounces cream cheese
1/2 cup mayonnaise
2 tablespoons prepared yellow mustard
1/4 cup barbecue sauce
1 teaspoon minced garlic
1 1/2 cups chopped smoked beef brisket (homemade or from you favorite BBQ shack)
1/3 cup minced sweet onion
1/3 cup minced dill pickle
salt
pepper
barbecue sauce, in a squeeze bottle
finely chopped flat leaf parsley, for garnish

Steps:

  • In a food processor, add the yolks, cream cheese, mayonnaise, mustard, barbecue sauce, and garlic; process until smooth.
  • Transfer mixture to a bowl; fold in the brisket, onion, and pickles; taste, then season with salt and pepper.
  • Fill the white generously with the mixture.

12 hard-boiled eggs, peeled
1/2 cup mayonnaise, plus more for brushing
1 tablespoon Dijon mustard
2 teaspoons chipotle adobo sauce from chipotle peppers in adobo
1 teaspoon smoked paprika, plus more for dusting
Kosher salt and freshly ground black pepper

Steps:

  • Prepare a grill for medium-high heat.
  • Slice each hard-boiled egg in half lengthwise. Scoop the egg yolks into a medium bowl and mash with a fork. Add the mayonnaise, mustard, adobo sauce and paprika and stir together until completely combined; season with salt and pepper. Transfer the mixture to a piping bag and refrigerate until ready to use.
  • Lightly brush the egg whites on the cut sides with mayonnaise. Put the eggs cut-side down in a grill basket; close and secure the basket. Place the basket directly over the hot coals and cook until grill marks appear on the egg whites, 30 seconds to a minute. Transfer the whites to a serving plate and refrigerate until ready to serve.
  • When ready to serve, pipe some of the yolk mixture into each egg white and dust with a little paprika.

12 eggs
3 tablespoons mayonnaise
2 tablespoons neely's barbecue sauce (Neely's Barbeque Sauce)
1 tablespoon yellow mustard
1 teaspoon yellow mustard
1 pinch kosher salt
fresh ground black pepper
hot sauce (a dash or two will do)
2 scallions, thinly sliced
smoked paprika (or regular paprika, to garnish)

Steps:

  • Bring a medium pot of water to a boil, then turn down to a simmer.
  • Using a slotted spoon, gently lower eggs into water and simmer for 9 minutes. Reduce heat if it simmers too much, you don't want the eggs to crack.
  • Drain water from the saucepan and run cold water over the eggs until they are cool enough to handle.
  • Peel the eggs and cut in half.
  • Remove yolks and place in a bowl.
  • Add the mayonnaise, Neely's barbeque sauce, mustard, salt, pepper, and hot sauce to taste; whisk until smooth.
  • Use a spoon to scoop the yolk mixture into the whites. (If you like, you can use a pastry bag to pipe the yolk mixture into whites).
  • Garnish the tops with thinly sliced scallions and a dash of paprika.

1/2 cup soaked hickory wood chips
12 hard-cooked large eggs, peeled
1/2 cup Miracle Whip
1 teaspoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
Minced fresh parsley, optional

Steps:

  • Add wood chips to grill according to manufacturer's directions. Place eggs on grill rack. Grill, covered, over indirect medium heat until golden brown, 7-10 minutes. Cool slightly., Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Stir in Miracle Whip, mustard, salt, pepper and paprika. Spoon or pipe into egg whites. If desired, top with additional paprika and chopped parsley. Refrigerate, covered, until serving.
