This recipe came from Lady Bird Johnson. I serve them each year on my Christmas Eve buffet. (They can be frozen.)

Steps:
- Preheat oven to 350.
- Cut butter into flour.
- Add cheese and seasonings.
- Fold in cereal.
- Drop by small spoonfuls on ungreased cookie sheets and flatten with back of spoon.
- Bake for 10-15 minutes.
- Don't let them get too brown!

- In a medium size mixing bowl, blend together butter or margarine and flour. Mix in the Cheddar cheese, salt, red pepper, hot pepper sauce, and pecans. Form the dough into a roll, wrap in parchment paper, and refrigerate over night.
- Preheat oven to 350 degrees F (175 degrees C).
- Slice dough into very thin wafers. Bake for 15 to 20 minutes, or until crisp.

Steps:
- Cream the gorgonzola and butter.
- Combine the flour, cornstarch, salt and cayenne ~ add to the butter/cheese mixture until well combined.
- Add the pistachios and lemon zest.
- Shape the dough into a log, wrap in plastic wrap, and freeze for 1 hour.
- Preheat oven to 350°F.
- Slice about 1/4" thick and place about an inch apart, on a parchment lined baking sheet.
- Bake in a preheated 350F oven until they are light golden brown, about 8-14 minutes. (CHECK AT 10 MINUTES!).
- Cool on pan for about 10 minutes to firm up, remove and let cool completely on a wire rack.
- Note: The shortbread will be rather soft when removed from the oven, but will crisp as it cools.).
- Store in an air tight container.
PISTACHIO AND POMEGRANATE CHEESE LOG

- In a large bowl, beat the cream cheese, shredded cheese, chives, lemon zest and salt with a wooden spoon or spatula until well blended. Spoon onto a large piece of plastic wrap and form into an even 1-inch-diameter log. Refrigerate until firm, at least 2 hours or up to overnight.
- In a small pot, combine the pomegranate juice, hot honey, sugar and cardamom. Bring to a boil over medium heat, then let the sauce cook and reduce until thickened, about 20 minutes. (It should coat the back of a spoon and have a glazelike consistency.) Keep warm or serve at room temp.
- Unwrap the cheese log and place on a platter. Garnish the log with the pistachios, pomegranate seeds and a generous drizzle of the pomegranate syrup. Serve with your favorite crackers.
PARMESAN PISTACHIO CRISPS

- Preheat oven to 350°F with rack in middle.
- Place silpat on a large baking sheet, or if not using a silpat or nonstick baking sheet, line a large baking sheet with parchment. Put rounded teaspoons of cheese 2 inches apart on baking sheets and spread each into a 1 1/2 inch circle.
- Sprinkle each round lightly with chopped pistachios (about 1/8 teaspoon for each) and bake until just golden, 6 to 8 minutes.
- Let crisps cool on sheet 1 minute then transfer to a rack to cool completely. Bake more crisps in same manner on cooled sheet, wiping nonstick or silpat in between batches (if using), or replacing parchment with each new batch.
