1 (3 pound) chicken, cut into parts
3 cups water
2 stalks celery
1 bay leaf, crumbled
1 onion, quartered
2 cloves garlic
2 teaspoons salt
2 teaspoons black pepper
½ cup blanched almonds
⅔ cup sesame seeds
1 tablespoon extra virgin olive oil
2 teaspoons chicken bouillon
3 guero chile peppers, chopped
2 jalapeno peppers, chopped
⅓ cup pitted black olives
2 teaspoons capers

Steps:

  • In a large saucepan, combine chicken, water, celery, bay leaf, onion, and garlic. Season with salt and pepper. Cook until chicken is cooked through and tender. Strain, reserving the broth. Skin and bone the chicken; set the meat aside.
  • Toast the sesame seeds lightly in a skillet, stirring constantly, until they are fragrant. In a food processor or blender, puree the sesame seeds and almonds with1 cup of the reserved chicken broth.
  • Heat oil in a skillet over medium low heat. Add the blended sesame seed and almond mixture, and cook for 5 to 8 minutes, or until thickened. Stir in 1 to 2 cups reserved chicken broth and chicken bouillon. Simmer for 5 minutes. Stir in the chopped peppers, olives, capers, and chicken. Simmer for 10 minutes, and serve hot.

GREEN PIPIAN

This classic Mexican pumpkin seed sauce, also known as green mole, is tangy, herbal and spicy all at the same time. Serve it with poached or pan-cooked chicken breasts, fish (it's very pretty with salmon), or shrimp. You can bathe grilled vegetables with it, or serve it with white beans and steamed or poached vegetables. Hulled untoasted pumpkin seeds are available in many whole foods stores and Mexican markets.

1/2 cup hulled untoasted pumpkin seeds
1/2 pound tomatillos, husked, rinsed, and coarsely chopped, or 2 13-ounce cans, drained
1 serrano chile or 1/2 jalapeño (more to taste), stemmed and roughly chopped
3 romaine lettuce leaves, torn into pieces
1/4 small white onion, coarsely chopped, soaked for 5 minutes in cold water, drained and rinsed
2 garlic cloves, halved, green shoots removed
1/4 cup loosely packed chopped cilantro
1 1/2 cups chicken stock
1 tablespoon canola or extra virgin olive oil
Salt, preferably kosher salt, to taste

Steps:

  • Heat a heavy Dutch oven or saucepan over medium heat and add the pumpkin seeds. Wait until you hear one pop, then stir constantly until they have puffed and popped, and smell toasty. They should not get any darker than golden or they will taste bitter. Transfer to a bowl and allow to cool.
  • Place the cooled pumpkin seeds in a blender and add the tomatillos, chiles, lettuce, onion, garlic, cilantro, and 1/2 cup of the chicken stock. Cover the blender and blend the mixture until smooth, stopping the blender to stir if necessary.
  • Heat the oil in the Dutch oven or heavy saucepan over medium-high heat. Drizzle in a bit of the pumpkin seed mixture and if it sizzles, add the rest. Cook, stirring, until the mixture darkens and thickens, 8 to 10 minutes. It will splutter, so be careful. Hold the lid of the pot above the pot to shield you and your stove from the splutters. Add the remaining chicken stock, bring to a simmer, reduce the heat to medium-low and simmer uncovered, stirring often, until the sauce is thick and creamy, 15 to 20 minutes. Season to taste with salt. For a silkier sauce, blend again in batches.

Mole:
1 cup pumpkin seeds
1 cup vegetable stock or canned vegetable broth
1 pound tomatillos, husked, rinsed, and quartered
2 fresh epazote leaves
1 fresh hoja santa leaf (root beer leaf)
2 leaves romaine lettuce
8 sprigs fresh cilantro
2 fresh serrano chiles, chopped
1/4 medium onion, chopped
1 clove garlic
1/8 teaspoon whole cumin seeds
3 teaspoons canola or vegetable oil
Kosher salt
The finished dish:
4 cups cooked white rice
2 cups steamed chayote or zucchini
2 cups steamed green beans
4 poached skinless, boneless chicken breasts

Steps:

  • Make the mole:
  • In a sauté pan over moderate heat, toast the pumpkins seeds, stirring frequently and being careful not to burn them. Transfer to a small bowl to cool. Once cool, reserve about 1/4 cup of pumpkin seeds for garnish, then transfer the remaining seeds to a blender and add enough vegetable stock to cover by 1 inch. Blend on high until smooth. Transfer the mixture to a bowl and clean the blender.
  • Place the tomatillos, epazote, hoja santa, romaine, cilantro, chiles, onion, garlic, and cumin in a blender, in that order, and blend well. If more liquid is needed, add water or broth, 1 tablespoon at a time.
  • In a deep skillet over high heat, heat the oil until shimmering then carefully add the tomatillo mixture and fry, stirring constantly and adding broth or water as needed to achieve a sauce-like consistency, for 1 to 2 minutes.
  • Remove the skillet from the heat and add the pumpkin seed mixture. Mix well, then season to taste with salt.
  • To serve:
  • Divide the rice, chayote or zucchini, green beans, and poached chicken among 4 plates. Coat the chicken with the mole, garnish with the reserved pumpkin seeds, and serve.
  • DO AHEAD: Leftover mole can be stored in an airtight container for 3 days in the refrigerator. Or, if frozen properly in an airtight container and wrapped in plastic and then aluminum wrap, it can be held for up to 4 months in the freezer.

CHICKEN IN PIPIAN SAUCE (A TRADITIONAL MEXICAN RECIPE)

Pipián is an earthy, pureed seed sauce that is traditional in Mexican cooking. Often made using pumpkin or squash seeds this recipe uses a few different seeds but you can easily substitue any that you prefer. This recipe is a more modern version of this very typical and grand recipe! I would suggest serving this over or with rice.

6 cups water
2 carrots, cut in half lengthwise
1 onion, quartered
2 garlic cloves
1 bay leaf
1 celery
2 parsley sprigs

1 tablespoon corn oil or 1 tablespoon lard
2 teaspoons chicken bouillon powder

Steps:

  • Cook the chicken with the water, vegetables and seasonings in a large saucepan until tender.
  • Strain, reserving the broth.
  • Skin and bone the chicken, and set aside.
  • To make the sauce, toast the sesame seeds lightly in a skillet, stirring constantly, until they are fragrant.
  • Puree the sesame seeds with the almonds and 2 cups of the chicken broth.
  • Heat oil or lard in a skillet, add the blended sesame-seed-almond mixture, and cook for 5 to 8 min., until thickened.
  • Add 2 to 3 more cups of the broth and chicken bouillon and simmer for 5 more minutes.
  • Add the chiles, olives, capers and chicken.
  • Simmer for 10 minutes, and serve hot.

1/2 cup unsalted pumpkin seeds
1/4 cup blanched almond
1/4 teaspoon cumin seed
1/4 cup onion, chopped
1 garlic clove, finely chopped
1 (4 ounce) can diced green chilies
1/2 cup parsley (definitely the cilantro!!) or 1/4 cup cilantro leaf, chopped (definitely the cilantro!!)
2 cups chicken broth
1 tablespoon lemon juice (fresh)
4 large chicken breast halves, skinned and boned
salt & freshly ground black pepper
2 tablespoons vegetable oil

Steps:

  • In large skillet, toast pumpkin seeds, almonds and cumin seeds over low heat, shaking pan, until almonds are golden brown.
  • In blender or food processor, grind toasted mixture.
  • Add onion, garlic, chilies, cilantro and 1 cup broth. Blend until smooth.
  • Pour mixture into medium saucepan. Stir in remaining broth and lemon juice.
  • Bring to boil, reduce heat and simmer uncovered about 15 minutes.
  • Meanwhile, season chicken with salt and pepper.
  • In large skillet, heat oil over medium-high heat. Sauté chicken until browned.
  • Reduce heat to low, pour pumpkin seeds sauce over chicken and simmer for 15 to 20 minutes or until chicken is tender and no longer pink and sauce is thick.

6 to 8 boneless chicken breasts
2 onions, sliced
5 garlic cloves, smashed
2 bay leaves
Salt
Cranberry, Walnut, and Pipian Sauce, recipe follows
4 ounces olive oil
10 garlic cloves
5 shallots, chopped
1 large onion, chopped
1 large tomato, chopped
8 ounces cranberries
7 ounces chopped walnuts
4 dried ancho chiles
4 dried pasilla chiles
6 ounces pumpkin seeds
5 dried chiles de arbol
6 ounces sesame seeds, roasted
1 1/2 Mexican chocolate tablets
Salt and freshly ground black pepper

Steps:

  • Put the chicken breasts in a large, deep saute pan with onion, garlic, bay leaves, and salt. Pour just enough water to cover the chicken into the pan, bring to a boil, and boil until chicken is fully cooked through.
  • To serve, slice each chicken breast into 3 or 4 pieces. Ladle some of the Cranberry, Walnut, and Pipian Sauce onto each serving plate and top with the sliced chicken breast. Garnish with fresh herbs, if desired.
  • Preheat the oven to 165 degrees F.
  • On a baking sheet, mix together all ingredients except the sesame seeds, Mexican chocolate, and salt and pepper. Roast in the oven for 2 hours. (The sesame seeds should be roasted separately.)
  • Put all roasted ingredients, plus the sesame seeds, into a blender. Blend until smooth and then strain. Transfer the sauce to a medium saucepan and boil for 1 hour.
  • Add the chocolate tablets, season, to taste, with salt and pepper, and continue boiling for an additional 30 minutes. This sauce also goes very well with fish.

6 ancho chiles
3/4 cup toasted sesame seeds, plus more for garnish
5 black peppercorns
3 whole cloves
1 (1/2-inch) stick Mexican cinnamon (canela)
3 1/2 cups chicken broth, homemade or low-sodium canned
1 clove garlic, peeled
3 tablespoons lard or vegetable oil
Kosher salt and freshly ground black pepper
1 large fresh or dried avocado leaf, toasted and finely ground (optional)
2 whole skinless, boneless chicken breasts, halved
Vegetable oil, as needed
Mixed cilantro and mint leaves, for garnish

Steps:

  • Stem and seed the chiles, reserving 1 tablespoon of the seeds, or more to taste.
  • Toast the chiles in a large cast iron skillet over high heat. Transfer the chiles to a bowl, cover with hot tap water, and soak for 20 minutes. Drain.
  • Meanwhile, toast the chile seeds in the skillet. In a clean coffee or spice grinder, finely grind the chile seeds, sesame seeds, peppercorns, cloves, and cinnamon.
  • In a blender, combine the chiles, ground spices, 1/2 cup chicken broth, and garlic and blend.
  • Heat the lard in a saucepan over medium-high heat. Pour in the blended sauce and cook, stirring and scraping the bottom, until somewhat reduced, about 10 minutes. Add the remaining 3 cups chicken broth, bring to a boil, lower the heat and simmer until thickened, about 20 minutes more. Season with salt and pepper. (The sauce may be prepared up to 3 days ahead and stored in the refrigerator.)
  • Preheat a grill or grill pan. Lightly brush the chicken with oil and season with salt and pepper. Grill the chicken, turning to make cross-hatched marks, until just cooked through, about 12 minutes. Transfer the chicken to a platter and let rest for 5 minutes.
  • Slice the chicken and transfer to a platter.
  • Reheat the sauce and stir in the avocado leaf. Ladle the sauce over the chicken, sprinkle with sesame seeds, and garnish with herb leaves. Serve with corn tortillas.
  • Serving Suggestion: Warm corn tortillas.

PORK CHOPS IN PIPIAN

This is a recipe built on my memory of a dish I ate in a sticky-tabled Mexican restaurant in pregentrification Park Slope, Brooklyn: fried pork chops served over a thick, spicy sauce of seeds and nuts and chiles - what the cookbooks and histories of Mexican food call pipian, for the pepitas, or pumpkin seeds, used in its creation. It is hardly authentic, but it is simple to make and hugely delicious. Make sure to get a good hard sear on the pork chops before nestling them into the sauce, then serve with tortillas.

4 medium-thick pork chops, bone-in or boneless
Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
2 tablespoons neutral oil
8 chiles de árbol
3 plum tomatoes
1 small onion, peeled and thickly sliced
3 cloves garlic, unpeeled
1/2 cup raw, hulled, unsalted pumpkin seeds
1/3 cup unsalted peanuts
1/3 cup hulled sesame seeds
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice (or 2 allspice berries)
1 canned chipotle pepper
2 tablespoons neutral oil, lard or chicken fat
1 cup chicken broth, homemade or low-sodium
1 tablespoon kosher salt
1 tablespoon light brown sugar
1 tablespoon cider vinegar

Steps:

  • Make the sauce: Remove the stems from the chiles de árbol, and gently roll the chiles between your fingers to remove the seeds. Discard seeds. Set a bare skillet over high heat for 5 minutes, then add the chiles. Toast until they are darkened and fragrant, approximately 4 to 5 minutes. Place them in a bowl, cover with 2 cups boiling or very hot water, and set aside to soak.
  • Return the skillet to high heat. Add the tomatoes, onion and garlic, and cook, turning occasionally, until charred, approximately 10 minutes. Put the vegetables on a plate, and set aside to cool, then slip the skins off the cloves of garlic.
  • Return the skillet to medium-low heat. Place the pumpkin seeds, peanuts and sesame seeds in the skillet, and cook, stirring and shaking the pan continuously, until they are toasted and fragrant, approximately 2 to 4 minutes. Put the seeds and nuts in a bowl, and stir in the cinnamon, cloves and allspice.
  • Put the chiles and soaking liquid in a blender with the tomatoes, onion, garlic, the nut-seed mixture and the chipotle. Purée until smooth.
  • Add the oil, lard or chicken fat to a large, heavy-bottomed pot, and heat over medium heat until it is nearly smoking. Add the purée. It will sputter a lot. Lower the heat, and stir, cooking the mixture down to a thick paste. It will continue to sputter and pop. Add the broth to the paste, and stir, then season with the salt, sugar and vinegar, and cook for another 15 minutes or so, until it resembles a thick, creamy soup. Lower heat to a bare simmer.
  • Make the pork chops: Season the pork chops aggressively with salt and pepper, and dust them with the flour. Add the oil to the skillet, and heat over medium-high heat until nearly smoking. Add the chops, and let them cook undisturbed, in batches if necessary, until crisp and well browned, about 5 minutes per side. Set them aside to rest for 5 minutes or so. Serve a chop per person on a generous amount of sauce, with tortillas to mop it up. Extra sauce can be used to braise chicken, lamb or more pork, or as a topping for enchiladas.

1- to 1 1/4-pound pork tenderloin, cut into 1/2-inch-thick medallions
3 tablespoons vegetable oil
1/2 onion, coarsely chopped
3/4 cup pumpkin seeds (pepitas)
1/4 cup peanuts (1 1/2 ounces)
1/4 cup sesame seeds (1 1/2 ounces)
2 garlic cloves, minced
4 cups water
12 ounces tomatillo,* husked
2 teaspoons coarsely chopped seeded jalapeño chili
1 1/2 cups fresh cilantro leaves
1 1/2 cups torn romaine leaves
1 1/4 cups low-salt chicken broth
3 radishes, trimmed, chopped

Steps:

  • Place pork between 2 sheets of waxed paper. Pound to 1/4- to 1/2-inch thickness. (Can be made 4 hours ahead. Cover; chill.)
  • Heat 2 tablespoons oil in heavy large skillet over medium heat. Add next 5 ingredients. Sauté until seeds are lightly browned, about 4 minutes. Set aside.
  • Place 4 cups water, tomatillos, and jalapeño in small saucepan. Simmer over medium heat until tomatillos are soft and olive-green color, about 15 minutes. Drain, reserving 1/4 cup cooking liquid. Transfer tomatillos, jalapeño, reserved 1/4 cup liquid, cilantro, lettuce, broth, radishes, and seed mixture to blender. Blend sauce until smooth, stopping occasionally to push down ingredients.
  • Heat 1 tablespoon oil in large skillet over medium heat. Add sauce; cook until thickened, about 4 minutes. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Prepare barbecue (medium-high heat). Sprinkle pork with salt and pepper. Grill until cooked through, about 2 minutes per side. Divide among 4 plates. Stir sauce over medium heat until heated through. Spoon sauce over pork.
  • Green tomato-like vegetables with paper-thin husks. Available at Latin American markets and some supermarkets.

In Mexico, pipian is a simple mole that emphasizes the nuts or seeds that are blended in to thicken the sauce. Where mole is an exuberant symphony orchestra, pipian is a lively string quartet. The seed that has traditionally thickened a sauce like this is Mexico's pumpkin seed.

2 cups roasted tomatillo salsa, Rustic Roasted Tomato Salsa (Salsa De Molcajete)
1 1/2 tablespoons vegetable oil or 1 1/2 tablespoons olive oil
1 cup chicken broth
3 tablespoons tahini, Homemade Tahini! (sesame paste)
salt
1/4-1/2 teaspoon sugar
1 cup peas (fresh or frozen)
4 (4 -5 ounce) fish fillets, skinless, such as salmon, halibut, walleye, snapper, stripped bass (buy about 1 1/2 pounds if using fish steaks)
1 tablespoon sesame seeds, for garnish
1/4 cup loosely packed chopped cilantro, for garnish

Steps:

  • In a blender or food processor, process the salsa to a smooth puree.
  • Heat the oil in a very large (12 inch) skillet over medium high heat. When it is hot, add the salsa all at once. Stir as the salsa reduces to the consistency of tomato paste, about 5 minutes.
  • Stir in the broth and the tahini. Return to a boil, then reduce the heat to medium low and let simmer 10 minutes. Taste and season with salt, usually about ½ tsp, and a little sugar. (The sugar will help balance the natural tartness of the salsa.).
  • While the sauce is simmering, pour the peas into a microwaveable bowl, sprinkle on a Tbsp of water, cover with plastic wrap and poke a couple of holes in the top. Microwave on high until the peas are hot and tender, anywhere from 1 minute for frozen peas to 4 or 5 minutes for fresh peas; discard water.
  • When the sauce has simmered for 10 minutes, nestle the fish fillets in it, completely submerging them. Continue simmering gently until the fish flakes when pressed firmly, usually 5 to 6 minutes for ½ inch thick fillets. (Check it by lifting up a fillet on a metal spatula and pressing it with your finger or the back of a spoon.).
  • Transfer a fish fillet to each dinner plate. Spoon a portion of the sauce over the top. Strew with the peas, sesame seeds and cilantro.
  • Variations:.
  • You can replace the peas with a couple of medium-large red-skin boiling potatoes cut into eighths (microwave them until tender, about 8 minutes). Mix the potatoes into the sauce after transferring the fillets to the dinner plates. A can of white beans makes a great replacement for the peas; drain and rinse them before adding them to the sauce. This dish is also wonderful made with boneless, skinless chicken breasts or semi-boneless quail; poach the birds in the sauce as described or, for added flavor, brown them in oil in the large skillet, then remove them and, without washing the skillet, cook down the pureed salsa. Tahini is an easy addition because it's smoothly ground, but you can use the very traditional pumpkin seeds or almonds or peanuts; puree them with the salsa, but stir carefully as you cook the mixture down to a paste (it will stick more easily than the salsa alone) After the sauce has simmered 10 minutes, it will likely be quite coarse looking; reblend the hot sauce in a loosely covered blender to smooth it out.

For pumpkin-seed sauce
1 1/2 cups hulled green pumpkin seeds (about 7 ounces)
2 tablespoons sesame seeds
1/2 teaspoon cumin seeds
4 allspice berries
3 cloves
6 black peppercorns
1 pound fresh tomatillos or a 28-ounce can tomatillos
6 fresh serrano chilies
1/2 large white onion
4 garlic cloves
1/2 cup packed coarsely chopped fresh coriander
2 teaspoons salt
1/4 cup lard or vegetable oil
3 cups stock from cooking chicken
1 fresh poblano chili
Garnish: chopped toasted hulled pumpkin seeds and chopped fresh coriander
Accompaniment:Warm Tortillas

Steps:

  • Rinse chicken and cut garlic head in half crosswise. In a 6-quart kettle cover chicken, garlic halves, onion, coriander, salt, peppercorns, and allspice with water and simmer, covered, 1 hour, or until chicken is tender. Transfer chicken to a bowl to cool and reserve stock.
  • Shred chicken, discarding skin and bones. Pour reserved stock through a fine sieve into a bowl, pressing garlic pulp through sieve. Measure 3 cups stock for sauce and reserve remainder for another use. Chicken and stock may be made 1 day ahead and cooled completely, uncovered, before being chilled separately, covered. (Stock keeps, frozen, 1 month.)
  • Make sauce:
  • Heat a large heavy skillet over moderate heat until hot and toast pumpkin seeds, stirring constantly, until they have expanded and begin to pop, 3 to 5 minutes. Transfer seeds to a plate to cool. In skillet heat sesame and cumin seeds, allspice, cloves, and peppercorns, stirring, until fragrant, about 1 minute, and transfer to plate. When seeds and spices are cool, in an electric spice/coffee grinder grind mixture in 4 batches to a powder.
  • If using fresh tomatillos, discard husks and rinse with warm water to remove stickiness. Stem serrano chilies. In a saucepan simmer fresh tomatillos and serranos in salted water to cover 10 minutes. If using canned tomatillos, drain them and leave serranos uncooked. Transfer tomatillos and serranos (use a slotted spoon if simmered) to a blender and purée with onion, garlic, 1/4 cup coriander, and salt until completely smooth.
  • In a 5-quart heavy kettle simmer tomatillo purée in lard or oil, stirring frequently, 10 minutes. Add 2 1/2 cups stock and stir in powdered pumpkin-seed mixture. Simmer sauce, stirring occasionally, 15 minutes, or until slightly thickened. Sauce may be prepared up to this point 1 day ahead and cooled completely, uncovered, before being chilled, covered.
  • Roast and peel poblano chili . In blender purée poblano with remaining 1/2 cup stock and remaining 1/4 cup coriander until completely smooth. Stir poblano purée and chicken into sauce and heat on top of stove or in a 350° F. oven until chicken is heated through.
  • Garnish chicken with pumpkin seeds and coriander and serve with tortillas.

1 cup raw pumpkin seeds (pepitas), divided
3 lb. mixed winter squash pieces (such as 1"-thick delicata rounds, 1"-thick kabocha wedges, and/or quartered honeynut), seeds removed
3 Tbsp. extra-virgin olive oil
Kosher salt
1/4 white onion, thinly sliced
3 garlic cloves, crushed
8 oz. tomatillos (about 4), husks removed, rinsed
1 small bunch Tuscan kale, ribs and stems removed, leaves torn
2 small serrano chiles
Flaky sea salt
Cilantro leaves with tender stems and lime wedges (for serving)

Steps:

  • Preheat oven to 350°F. Toast pumpkin seeds on a rimmed baking sheet until lightly browned, 6-8 minutes. Let cool.
  • Increase oven temperature to 425°F. Toss squash pieces and oil on another rimmed baking sheet to coat; season with kosher salt. Roast, tossing occasionally, until browned and tender, 30-40 minutes.
  • Bring onion, garlic, tomatillos, and 2 cups water to a simmer in a large saucepan over medium-high. Cook until tomatillos are almost tender, about 5 minutes. Add kale and cook just until wilted and bright green, about 1 minute. Let onion mixture cool in pan until warm.
  • Char chiles over the flame of a gas burner, turning occasionally, until blackened and slightly softened, about 1 minute (or, arrange chiles on a rimmed baking sheet and use broiler).
  • Transfer onion mixture to a blender with a slotted spoon; reserve liquid. Add charred chiles and 3/4 cup pumpkin seeds to blender and purée, adding reserved liquid as needed to get things moving, until a smooth, pourable sauce forms. Season pipian with kosher salt.
  • Divide squash among plates. Drizzle with pipian and sprinkle with sea salt. Top with remaining 1/4 cup pumpkin seeds and cilantro. Serve with lime wedges.

PORK IN PIPIAN SAUCE

6 medium-thick pork chops, bone-in or boneless (or pork loin roast)
1 pinch Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
2 tablespoons neutral oil
8 pieces chiles de árbol
3 plum tomatoes
1 small onion, peeled and thickly sliced
3 cloves garlic, unpeeled
1/2 cup raw, hulled, unsalted pumpkin seeds
1/3 cup unsalted peanuts
1/3 cup hulled sesame seeds
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice (or 2 allspice berries)
1 canned chipotle pepper
2 tablespoons neutral oil, lard or chicken fat
1 cup chicken broth, homemade or low-sodium
1 tablespoon kosher salt
1 tablespoon light brown sugar
1 tablespoon cider vinegar

Steps:

  • Make the sauce: Remove the stems from the chiles de árbol, and gently roll the chiles between your fingers to remove the seeds. Discard seeds. Set a bare skillet over high heat for 5 minutes, then add the chiles. Toast until they are darkened and fragrant, approximately 4 to 5 minutes. Place them in a bowl, cover with 2 cups boiling or very hot water, and set aside to soak.
  • Return the skillet to high heat. Add the tomatoes, onion and garlic, and cook, turning occasionally, until charred, approximately 10 minutes. Put the vegetables on a plate, and set aside to cool, then slip the skins off the cloves of garlic.
  • Return the skillet to medium-low heat. Place the pumpkin seeds, peanuts and sesame seeds in the skillet, and cook, stirring and shaking the pan continuously, until they are toasted and fragrant, approximately 2 to 4 minutes. Put the seeds and nuts in a bowl, and stir in the cinnamon, cloves and allspice.
  • Put the chiles and soaking liquid in a blender with the tomatoes, onion, garlic, the nut-seed mixture and the chipotle. Purée until smooth.
  • Add the oil, lard or chicken fat to a large, heavy-bottomed pot, and heat over medium heat until it is nearly smoking. Add the purée. It will sputter a lot. Lower the heat, and stir, cooking the mixture down to a thick paste. It will continue to sputter and pop. Add the broth to the paste, and stir, then season with the salt, sugar and vinegar, and cook for another 15 minutes or so, until it resembles a thick, creamy soup. Lower heat to a bare simmer.
  • Make the pork chops: Season the pork chops aggressively with salt and pepper, and dust them with the flour. Add the oil to the skillet, and heat over medium-high heat until nearly smoking. Add the chops, and let them cook undisturbed, in batches if necessary, until crisp and well browned, about 5 minutes per side. Set them aside to rest for 5 minutes or so. Serve a chop per person on a generous amount of sauce, with tortillas to mop it up. Extra sauce can be used to braise chicken, lamb or more pork, or as a topping for enchiladas.

PAN-FRIED FISH WITH PUMPKIN PIPIAN



Pan-Fried Fish with Pumpkin Pipian image

Pipianes are one of the master sauces in Mexican cuisine. Unlike moles, they are seed- and nut- forward but are still flavored with toasted dried chiles. In my version, I use freshly roasted pumpkin purée to create a seasonal and slightly sweet and nutty sauce that is perfect for your favorite pan-fried fish, tofu or roasted vegetables.

1 cup raw pepitas (126 grams/4.4 ounces)
1/3 cup raw pecans (54 grams/1.9 ounces)
4 large ancho chiles (70 grams/2.4 ounces), stemmed and seeded
6 tablespoons extra-virgin olive oil
1/4 large white onion (94 grams/3.3 ounces), chopped
1 teaspoon dried Mexican oregano (0.9 gram/0.03 ounce)
1 teaspoon ground cinnamon (0.9 gram/0.03 ounce)
1/2 teaspoon ground cumin (1.3 grams/0.04 ounce)
5 cloves garlic, sliced
4 cups vegetable stock or low-sodium fish stock
2 cups fresh pumpkin puree or one 15-ounce can pumpkin puree
2 tablespoons plus 1 teaspoon Diamond Crystal kosher salt (21 grams/0.74 ounce) or 2 3/4 teaspoons Morton kosher salt, plus more for the fish
Four skinless cod, tilapia or snapper fillets (680 grams/1 1/2 pounds)
2 tablespoons unsalted butter
4 chiles de arbol (4 grams/0.14 ounces), stemmed and seeded

Steps:

  • Heat a large skillet over medium-high heat and toast the pepitas and pecans, tossing frequently, until very fragrant and browned in spots, 3 to 4 minutes; transfer to a large heavy pot.
  • Toast the ancho chiles in the same skillet, pressing them down with a metal spatula to make contact with the skillet, until lightly toasted on both sides, about 30 seconds total. They will burn easily so press down and turn them quickly. Transfer to the pot with the pepitas and pecans.
  • Add 4 tablespoons of the oil to the pot with the pepitas, pecans and anchos, and heat over medium-high heat. Add the onion, oregano, cinnamon, cumin and half of the garlic and cook, stirring occasionally, until the vegetables are tender and beginning to brown, 5 to 7 minutes. Add the stock, pumpkin and salt and bring to a boil. Reduce to a simmer, cover and continue to cook until the seeds and chiles have softened and the flavors have come together, about 30 minutes. Remove from the heat and let sit covered for 20 minutes to cool slightly before blending.
  • Working in batches if necessary, carefully blend the mixture until completely smooth. Transfer to a large bowl; stir to combine each batch. Keep warm while you cook the fish.
  • Meanwhile, season both sides of the fish with salt and heat the remaining 2 tablespoons oil in the same large skillet over medium-high heat. Cook the fish in a single layer, undisturbed, until golden brown, about 2 minutes; flip and cook the other side, undisturbed, until golden brown and cooked through, about 2 minutes. Remove to a plate.
  • Add the butter, chiles de arbol and remaining garlic to the same skillet and cook, scraping up any browned bits from the bottom of the skillet, until the garlic and butter just begin to brown, about 60 seconds. Transfer to a small heatproof bowl.
  • For each serving, spread about 3/4 cup of the pipian on a plate, top with a fish fillet, a chile de arbol, a few slices of toasted garlic and a drizzle of the browned butter. Refrigerate the leftover pipian in an airtight container for up to 3 days or freeze for 3 months. Reheat gently.

4 center-cut pork chops on the bone

3 tablespoons vegetable oil
1 1/4 cups toasted shelled pumpkin seeds
One 15.5-ounce can black beans

Steps:

  • 1. In a blender, process 1/4 cup broth, the salsa, onion and half the garlic and cilantro at high speed until smooth. Set aside. 2. Preheat the oven to 350°. Heat a large skillet over medium-high heat. Pat the chops dry, season lightly with salt and pepper and sear in the pan, turning once, about 3 minutes on each side. Transfer the chops to a foil-lined baking sheet and bake until cooked through, about 15 minutes. 3. Meanwhile, heat 2 tablespoons oil in the skillet over medium-low heat. Add the reserved green sauce and simmer, stirring occasionally, for 6 minutes (the mixture will darken slightly). In the blender, grind the pumpkin seeds in the remaining 1 1/3 cups chicken broth. Gradually stir the pumpkin-seed mixture into the sauce and simmer gently until thick, about 10 minutes. Season to taste with salt and pepper. 4. Heat the remaining 1 tablespoon oil over medium heat. Add the remaining garlic and stir until fragrant, about 1 minute. Add the beans and cook, mashing with a wooden spoon, until heated through. Stir in up to 1/2 cup water for a creamy consistency. Season with salt and pepper. Chop the remaining cilantro and stir into the beans. 5. Place a chop on each plate, spoon a generous amount of sauce on top and serve the beans alongside.

2 tablespoons extra-virgin olive oil, divided
3 tablespoons raw pumpkin seeds (pepitas)
1 large fresh poblano chile, stemmed, seeded, diced (about 1 cup)
1/2 cup chopped white onion
2 medium tomatillos, husked, rinsed, diced
3 tablespoons chopped fresh mint plus small sprigs (for garnish)
1 tablespoon (or more) fresh lime juice plus lime wedges (for garnish)
2 whole 12-ounce trout, boned, butterflied, halved lengthwise

Steps:

  • Heat 1 tablespoon oil in medium skillet over medium heat. Add pumpkin seeds. Stir until beginning to pop, 1 to 2 minutes. Add chile, onion, and tomatillos. Cover and cook until vegetables begin to soften, about 5 minutes.
  • Scrape mixture into processor; cool. Blend 1 minute. Blend in chopped mint and 1 tablespoon lime juice, adding more lime juice to taste (sauce will be very thick and not smooth). Season with salt and pepper.
  • Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Sprinkle trout with salt and pepper. Add to skillet, flesh side down. Cook until just opaque in center, about 2 minutes per side.
  • Spoon pián over fish. Garnish with mint sprigs and lime wedges.

PIPIáN

Pumpkin seeds figure heavily in much Mexican cooking. You can buy them toasted, but toasting them is an easy enough task, and they're arguably better when toasted fresh-especially in lard or oil. (If you'd like to avoid the mess-or the lard-you can also toast the seeds on a baking sheet in a 350°F oven or in a dry skillet as you would sesame seeds, page 596.) Ancho chiles-dried poblanos-are mild and richly flavored. You can use them freely without worrying about overpowering heat. This sauce is best served over something simple, like grilled steak or chicken.

Yield makes about 2 cups

Number Of Ingredients 7

1 cup hulled pumpkin seeds
4 tablespoons lard or neutral oil, like corn or grapeseed
2 cups chicken stock, preferably homemade (page 160), or water
3 or 4 ancho chiles, to taste
2 garlic cloves, peeled
Salt and freshly ground black pepper to taste
Fresh lime juice to taste

Steps:

  • If the pumpkin seeds you have are already toasted, proceed to step 2. Otherwise, heat 3 tablespoons of the lard in a heavy skillet over medium-high heat. A minute later, add the pumpkin seeds and cook, shaking and stirring the pan constantly for a minute or two, until the seeds start to puff. (Take care not to overcook the seeds, which will make the sauce bitter; and be prepared for flying seeds popping out of the pan.) Remove the toasted seeds with a slotted spoon and cool. (Discard any blackened seeds.) Meanwhile, warm the stock and soak the chiles in it. When they have softened, after 10 to 15 minutes, remove their stems and seeds; reserve the soaking liquid.
  • Put the seeds in a food processor and process until pasty, stopping the machine and scraping down the sides if necessary. Add the garlic, chiles, and as much of the soaking liquid as you need to process until quite smooth.
  • Turn the heat under the pan back to medium and add the remaining lard or oil. Reheat the sauce with enough liquid to thin to a pleasing consistency, stirring occasionally, until it just boils and thickens slightly. Remove from the heat. Taste and add salt and pepper as needed, then stir in the lime juice; serve hot or at room temperature. (This keeps well, covered and refrigerated, for up to 3 days; bring back to room temperature or reheat before serving and always add the lime juice at the last minute.)
  • In step 2, add 2 tomatoes (preferably peeled and seeded) and 2 to 4 garlic cloves, peeled, to the mix; you will need less of the reserved liquid.
  • Omit the lard and toast the pumpkin seeds as you would sesame seeds (page 596). Omit the ancho chiles and puree the toasted seeds with chile powder to taste (about 1 tablespoon), at least 1/4 cup chicken stock, preferably homemade (page 160), or water, and salt and pepper to taste. Reheat and add the lime juice.

6 chiles guajillo or 3 chiles anchos
1 thick slice of white onion
3 garlic cloves
1/2 tsp. cumin
1/2 tsp. paprika
3 Tbs. sesame seeds
1/4 cup almonds
2/3 cup pumpkin seeds
5 to 6 cups stock
1 Tbs. lard or veg. oil
Salt to taste

Steps:

  • 1. De-seed and de-vein chiles and tear into chunks 2. Saute onion, garlic and chiles in lard or oil 3. Add stock and spices 4. Bring to boil and simmer for 20 minutes 5. Blend cooked ingredients in blender 6. Strain 7. Place blended ingredients back into pot on stove 8. In a small skillet toast almonds and seeds one at a time (keeping them separate) a. Pumpkin seeds will start to "pop" when done. b. Almonds will show dark marks on the sides when done. c. sesemes will be a light gold color when done. 9. Grind seeds and almonds individually in a coffee grinder or small food processor until a soft/smooth powder. (make sure to grind them one at a time and keep them in separate dishes) 10. Add ground almonds and sesame seeds to pot 11. Bring to boil and cook for 5-8 minutes 12. Adding more stock as needed to keep the salsa thin 13. Add ground pumpkin seeds and 1 cup stock 14. Whisk until boils, then remove from heat
