After the resounding success of Kate's Afternoon Wine Cooler, I decided to enter another w/only a slight variation ... but packed w/the rich, tropical flavor of pineapple. This 1 is truly Chef Kate recipe inspired. After having made her Natilla De Pina (Pineapple Custard) Recipe #170308 for the 2nd time at DH's request, I used my excess pineapple juice for this new effort & now I'm really hooked on both of them. Enjoy!

1/2 cup pineapple juice (sweetened)
1/2 cup diet soda (Fresca, Sprite or 7-Up)
1/2 cup white wine (I use Riesling)

Steps:

  • Combine all ingredients in a large glass.
  • Enjoy & then make another!

2/3 cup sugar
1 jalapeno pepper, sliced, plus more for garnish
2 cups pineapple juice
2 cups orange-flavored vodka
1 cup mango nectar
1/2 cup fresh lime juice (from 4 to 5 limes)
Pineapple and mango chunks, for garnish

Steps:

  • Make the jalapeno syrup: Bring the sugar, 2/3 cup water and half of the jalapeno slices to a simmer in a small saucepan, stirring to dissolve the sugar. Remove from the heat and let cool completely, about 20 minutes.
  • Meanwhile, muddle the remaining jalapeno slices in a large liquid measuring cup with a wooden spoon. Add the pineapple juice; let sit while the syrup cools.
  • Strain the jalapeno syrup and pineapple juice mixture into a pitcher. Stir in the vodka, mango nectar and lime juice and refrigerate until ready to serve. Pour into ice-filled glasses; garnish with skewers of pineapple, jalapeno and mango.
