FILLING:
1 package (8 ounces) fat-free cream cheese
3 ounces cream cheese, softened
1/3 cup sugar
2 teaspoons vanilla extract
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
TOPPING:
1/3 cup sugar
3 tablespoons cornstarch
1 can (20 ounces) unsweetened crushed pineapple, undrained

Steps:

  • Line bottom and sides of an ungreased 9-in. springform pan with ladyfinger halves; reserve remaining ladyfingers for layering., Beat cream cheeses, sugar and vanilla until smooth; fold in whipped topping. Spread half of the mixture over bottom ladyfingers. Layer with remaining ladyfingers, overlapping as needed. Spread with remaining filling. Refrigerate, covered, while preparing topping., In a small saucepan, mix sugar and cornstarch; stir in pineapple. Bring to a boil over medium heat, stirring constantly; cook and stir until thickened, 1-2 minutes. Cool completely., Spread topping gently over torte. Refrigerate, covered, until set, at least 4 hours. Remove rim from pan.

1 c sugar
1 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 beaten egg
1 # 2 can crushed pineapple
1/3 c brown sugar for topping

Steps:

  • 1. Sift together all dry ingredients.
  • 2. Add 1 beaten egg.
  • 3. Add #2 can crushed pineapple (alternative is fruit cocktail. Include the juice of the crushed pineapple.
  • 4. Pour on 8x8 greased pan. Sprinkle with 1/3 cup brown sugar.
  • 5. Bake 350 degrees Fahrenheit for 40 minutes.
  • 6. For 9x10 pan, just double the recipe and bake for 15 minutes more or until cake tester comes out clean.

11 tablespoons unsalted butter, softened
1 tablespoons Zirbenz (Austrian stone pine liqueur)

3 egg whites
WHITE CHOCOLATE GANACHE:
14 ounces white chocolate (at least 20% cocoa butter), finely chopped

  • Make the pine nut sponge cake: Heat oven to 350°. Grease a 12" x 16 ½" baking sheet with butter and line with parchment paper. Melt butter in a 10" skillet over medium; cook until color is a deep golden brown, 6-8 minutes, and let cool. Pulse pine nuts and cake flour in a food processor until finely ground. Using an electric hand mixer, beat sugar and egg yolks in a bowl until pale yellow and thick, about 4 minutes. In a separate bowl and using clean beaters, beat whites until stiff peaks form. 1 9 oz or little more of cool whip

1/4 cup vegetable oil
3/4 cup milk

1 whole egg

2 tablespoons dark rum

Steps:

  • Preheat oven to 350 degrees.
  • Coarsely chop the butter. Place in a large mixing bowl with the sugar. Using an electric mixer, beat together until pale and fluffy.

Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with pineapple mixture, beating well after each addition. In a small bowl and with clean beaters, beat egg whites on medium speed until soft peaks form. Gradually add remaining sugar, 1 tablespoon at a time, beating on high until stiff peaks form. Fold a fourth of the egg whites into batter; fold in remaining whites. , Spoon into 2 greased and floured 9-in. round baking pans. Bake at 350° until cake springs back when lightly touched, 28-32 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For filling, beat cream, confectioners' sugar and extract in a chilled large bowl until stiff peaks form. Fold in reserved pineapple. Split each cake layer in half horizontally. Spread about 3/4 cup filling between each layer; spread remaining filling over the top. Sprinkle with almonds. Store in the refrigerator.

1 pkg (3 oz.) cream cheese, softened
1/3 c sugar
2 tsp vanilla extract
1 carton (8oz) frozen reduced-fat whipped topping, thawed
3 pkg (3oz. each) ladyfingers, split
TOPPING
1/3 c sugar
3 Tbsp cornstarch
1 can(s) (20 oz.) pineapple, unsweetened, crushed, undrained

Steps:

  • 1. In a large mixing bowl, beat the cream cheeses, sugar, and vanilla until smooth. Fold in whipped topping. Arrange ladyfingers on the bottom and around the edges of an ungreased 9" springform pan.
  • 2. Spread bottom layer evenly with half of cream cheese mixture. Top with remaining ladyfingers and then rest of cream cheese mixture.
  • 3. Mix the topping heat in sauce pan until thicken. Cool. Pour over cream cheese layer. Refrigerate a couple of hours or until ready to serve. Place on cake plate with pineapple wedges to decorate or a sprig of mint.

1 (8-ounce) can crushed pineapple in juice
1/2 to 3/4 cups water
1 package Pillsbury® Moist Supreme® Key Lime Flavored Premium Cake Mix
1/3 cup Crisco® Pure Vegetable Oil
3 large eggs
1 (15-ounce) container ricotta cheese
1 cup Pillsbury® Creamy Supreme® Key Lime Flavored Frosting, divided
Frozen whipped topping, thawed (optional)
Fresh lime slices (optional)

Steps:

  • Heath oven to 350°F. Coat 2 (8-inch) round baking pans with baking spray with flour. Drain pineapple, reserving liquid. Add water to pineapple juice to measure a total of 1 cup. Prepare cake mix according to package directions using pineapple juice mixture, oil and eggs. Divide evenly into prepared pans. Bake 34 to 38 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes. Remove from pans to wire rack to cool completely. Beat ricotta cheese, frosting and reserved pineapple in medium bowl with electric mixer on medium speed until blended. Level cake layers by removing rounded tops with serrated knife. Split both each cake layer horizontally to create 4 thin layers. Place 1 layer on serving plate. Spread with 1/4 of filling mixture to within 1/4-inch of edge. Repeat layers three times, ending with filling mixture on top of cake. Chill until ready to serve. Garnish with whipped topping and lime slices, if desired.

Such a quick and easy sheet cake dessert. Our family and guests swore the taste and texture was that of a carrot cake, and yet carrots are not included in the ingredients. This dessert can be thrown together in about 5 minutes and it is so very good, which is surprising due to the few ingredients, and has such basic mixing and baking techniques. A simply perfect dessert to be enjoyed by both the experienced and inexperienced baker.

3 ounces lemon gelatin
1 cup boiling water
2 cups graham cracker crumbs
1/2 cup butter or 1/2 cup margarine, melted
1/4 cup chopped nuts (optional)
1/2 cup sugar
8 ounces cream cheese, room temperature
12 ounces evaporated milk, chilled
20 ounces crushed pineapple, drained
1 teaspoon vanilla

Steps:

  • Dissolve lemon gelatin in 1 cup boiling water.
  • Mix graham cracker crumbs, butter, and nuts. Press into a 13"x9"x2" pan to make a firm bottom layer. Bake crust at 350 for 20 minutes. Set aside and let cool.
  • Add sugar to cream cheese and mix well. Add this mixture to the gelatin mixture. Beat 2 minutes together. Whip evaporated milk, which has been throughly chilled. Fold gelatin/cheese mixture, plus pineapple and vanilla, into whipped milk. Pour into graham cracker crust. Chill overnight.

1 3/4 cups pineapple tidbits
1 tablespoon cornstarch
2 tablespoons lemon juice

  • 1. Combine KELLOGG'S CORN FLAKES cereal, margarine and sugar in 8 x 8 x 2-inch pan. With back of spoon, press evenly and firmly in bottom of pan to form crust.2. Place cream cheese in mixing bowl. Beat until smooth and creamy. Gradually add sugar and salt. Mix thoroughly. Add eggs, 1 at a time, beating well after each addition. Pour mixture into crust.3. Batter for Crunchy Meringue Cookies
1/2 fresh pineapple, peeled and cored
Olive oil, for searing
Coarse salt, for sprinkling
1/2 cup heavy cream (120 grams)
2 tablespoons confectioners' sugar (16 grams)
Pina Colada Pastry Cream
1/2 cup unsweetened flaked coconut, lightly toasted (36 grams)
Special equipment:
a piping bag with a 1/2-inch plain tip

Steps:

  • Preheat the oven to 200°F. Line 2 baking sheets with parchment paper.
  • Prepare the meringue cookie batter as directed. Using a piping bag with a 1/2-inch plain tip, or using a spoon, form the meringue into three 8-inch disks on the lined baking sheets, each about 1/2 inch thick.
  • Bake for about 45 minutes, until crisp on the outside but still moist in the center. Cool completely in the oven.
  • Halve the pineapple lengthwise and cut the pieces crosswise into 1/4-inch-thick slices. Heat a very thin layer of oil in large nonstick skillet or griddle over medium-high heat and add the pineapple. Cook for 4 to 5 minutes, until seared and golden, then flip the pieces and sear the other side. Transfer the pieces to a plate and sprinkle them lightly with salt; cool to room temperature.
  • Whip the cream until soft peaks form; sift the confectioners' sugar over it and whip until combined and the cream forms medium-firm peaks. Put the pastry cream in a large bowl and whisk to loosen it.
  • Add about a third of the whipped cream and whisk it into the pastry cream to lighten it. Using a large spatula, add the remaining whipped cream and fold it into the pastry cream until just combined. Reserve about 1/2 cup of the cream and transfer the remainder to a piping bag fitted with a 1/2-inch plain tip.
  • Put one meringue disk onto a serving plate and pipe a spiral of pastry cream (using a little less than half of it) over it, covering it completely but leaving a 1/2-inch border around the edge. Blot the pineapple pieces with a paper towel and arrange half of them, fanning them in a concentric circle, over the pastry cream. Put another meringue disk on top and repeat with the remaining pastry cream and pineapple. Top with the remaining meringue disk and, using a small off set spatula, spread the reserved pastry cream in a thin even layer over the top. Sprinkle the coconut evenly over the top.
  • The torte can be sliced immediately and served but is better if refrigerated for at least 1 hour and no longer than 3 hours to soften the meringue.
