PINEAPPLE-TOPPED SWEET POTATOES
Pineapple and brown sugar enhance the natural flavor of sweet potatoes while sunflower nuts add a bit of crunch.

Steps:
- Heat oven to 375°F. Scrub potatoes; prick all over with fork. Place in shallow baking pan or pie pan (do not use glass). Bake 55 to 65 minutes or until tender.
- Set oven control to broil. Cut potatoes lengthwise in half. Mash cut sides slightly with fork. Spoon pineapple over cut sides of potatoes. Top with sunflower nuts and brown sugar.
- Broil with tops 4 to 6 inches from heat 2 to 3 minutes or until brown sugar is bubbly.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large soup pot, boil sweet potatoes whole until soft. Remove skins, and dice into bite-sized pieces.
- Mix sweet potatoes, crushed pineapple, light brown sugar, and butter in prepared baking dish.
- Bake for 45 minutes, or until casserole is mushy with no excess water in the dish.

MOMS CANDIED SWEET POTATOES & PINEAPPLE
My mom always makes these type of sweet potatoes, regardless what others we have for the Holidays. Yesterday we had them with our Turkey Dinner...Yum!

- 1. In a medium saucepan, add potatoes and 1/2 tsp salt, cover with water. Bring to boil, then reduce to simmer. Cook until fork tender and drain. In another saucepan, add the butter, brown sugar, pinch salt, pineapple juice, cinnamon and nutmeg. Bring to a boil and simmer until thickened some - won't be real thick, more like a glaze. If you want a thicker glaze, add a small amount of corn starch to the pineapple juice before adding. Once sauce is to desired thickness and potatoes are cooked. Add the drained pineapple to the glaze and cook until heated through. Stir in the vanilla. Gently toss the sweet potatoes with the glaze, being careful not to break up potatoes too much. Heat through for a few minutes and pour into a serving dish. Sprinkle with pecans if using. Serve immediately.

Steps:
- To cook the sweet potatoes in a conventional oven, bake at 400 degrees for about 45 minutes or until tender.
- To cook in a microwave oven, prick each potato in several places with a fork, and microwave at high power for about 15 minutes, or until tender.
- Set aside to cool; then peel and cut into bite-sized pieces.
- Place the potato pieces in a large bowl and toss with all the remaining ingredients except the marshmallows.
- Coat a 2-1/2 qt.
- casserole dish with Pam, and place the sweet potato mixture in the dish.
- Top with the marshmallows.
- Bake at 350 degrees for 35-40 minutes, or until the sweet potato mixture is bubbly and the top is lightly browned.
- If the top starts to brown too quickly, loosely cover the dish with aluminum foil during the last 10 minutes of baking.
- Serve hot.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
- Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash sweet potatoes in a large bowl. Stir in the brown sugar, 1/4 cup softened margarine, 3 eggs, vanilla extract, and milk. Beat until fluffy. Pour into prepared baking dish. Mix flour, 1/4 cup melted margarine, pineapple, white sugar, and 1 egg together in a bowl. Spoon over the sweet potato mixture.

- Place potatoes in 8-10 quart saucepot; add water to cover; bring to boil over high heat.
- Lower heat to simmer and cook, covered, 15-20 minutes, or until tender.
