Found this in one of those little grocery store magazines and it looks so yummy I want to save it here to try when those warm, lazy summer days arrive. The magazine states "A batido is a popular Latin American drink made with water, milk, fruit and ice. It is similar in testure to a smoothie and literally means "beaten" in Portuguese" Sound good to me. Update: After seeing Loof's wonderful picture I finally got around to making this myself and so glad I did. Love that tropical flavor.

1 1/2 cups pineapple, fresh cubed
1 cup ice
3/4 cup milk
1/2 cup orange juice
3 tablespoons sugar
1 tablespoon lime juice, freshly squeezed
2 slices pineapple (optional)

Steps:

  • Combine pineapple, ice, milk, orange juice, sugar and lime juice in blender container; puree.
  • Pour mixture into 2 tall glasses.
  • Garnish with pineapple slices.

Cool, refreshing drink with a milk base that is a common drink in Latin America, namely Panama. Can be made with almost any type of meaty fruit. Any type of fruit can be used in place of the papaya, such as cantaloupe or peaches. Serve immediately or store in refrigerator. If stored, be sure to stir before serving. Enjoy!

I made this up myself to add fruit to my husband's diet. He is diabetic and this satisfy's his cravings for something sweet. Even non-diabetics enjoy this. It is quick and you can add drained cherries for more flavor or color!

1 can pineapple chunk, in own juice,drained
1 can mandarin orange segments, drained
1 (8 ounce) container Cool Whip Lite, thawed
1 (3 ounce) package instant pudding mix (vanilla and banana cream are the best)

Steps:

  • Mix pudding mix and cool whip together well, fold in drained fruit.
  • Chill for 2-3 hours before serving.
  • Great for diabetics!

2 cups peeled and chopped pineapple
2 small ripe bananas, peeled and chopped
3 tablespoons fresh lime juice
1 1/2 cups fresh coconut milk
1 cup white rum
2 tablespoons sugar
2 cups ice cubes

Steps:

  • Combine all ingredients, except ice in the blender and blend until smooth. Add the ice and blend until frothy.

2/3 cup fresh pineapple, coarsely chopped
Superfine sugar to taste
1/2 cup crushed ice
Sprig fresh mint

Steps:

  • Combine the rum, pineapple and sugar in an electric blender and blend on high speed until smooth. Put the ice into a goblet and add the liquor. Decorate with the mint.

Number Of Ingredients 5

2 (4-pound) pineapples (preferably labeled "extra sweet"), trimmed, peeled, quartered lengthwise, cored, and cut into 1/2-inch pieces (about 10 cups)
1 medium banana, sliced
3 cups tangerine juice
1/4 cup fresh lime juice
1 cup white rum

Steps:

  • Working in 3 batches, purée pineapples, banana, and juices in a blender until very smooth. Transfer as puréed to a large pitcher. (If pineapple is particularly fibrous, pour through a medium-mesh sieve, pressing hard on and then discarding solids.) Stir in rum. Chill, covered, until cold, about 1 hour. Stir again (or blend for a frothier texture) just before serving.
