2 ½ cups white sugar, divided
1 ¼ cups unsalted butter, softened, divided
5 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
⅓ cup milk
⅓ cup rum
2 cups pineapple chunks, drained
½ cup shredded coconut
¼ cup water
¼ cup rum

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Beat 1 1/2 cups sugar, 1 cup butter, eggs, and vanilla extract together with an electric mixer until well blended. Beat on high speed, scraping the bowl occasionally, 3 to 5 minutes.
  • Sift flour and baking powder together in a separate small bowl. Combine milk and 1/3 cup rum in another bowl. Add liquids and flour mixture to sugar mixture alternately, blending well after each addition. Fold in pineapple and coconut gently. Pour batter into the prepared pan.
  • Bake in the preheated oven until cake begins to pull from the sides of the pan and a toothpick inserted into the center comes out clean, 45 to 50 minutes. Remove from the oven, invert onto a plate, and cool for 10 minutes. Poke holes on the top of the cake using a wooden skewer.
  • While cake cools, combine 1 cup sugar, 1/4 cup butter, and 1/4 cup water in a saucepan for glaze. Bring to a boil over medium heat and continue to boil, stirring constantly, for 5 minutes. Remove from heat and stir in 1/4 cup rum.
  • Pour 1/2 of glaze in the bottom of the Bundt® pan, carefully reinvert the cake back into the pan on top of the glaze. Drizzle remaining glaze onto the bottom of the cake; let sit for 5 to 10 minutes to absorb glaze. Invert cake onto a cake platter.

3/4 cup dark brown sugar
2 tablespoons dark rum
1/2 cup heavy cream
1 small pineapple, peeled and cut in 1/2
1/4 cup canola oil
1 store-bought pound cake, cut into 1/2-inch thick slices
Vanilla ice cream, for serving
Maraschino cherries, optional

Steps:

  • Melt the butter in a small saucepan over high heat, add the brown sugar and rum and cook, whisking until the sugar has melted and the mixture is smooth. Whisk in the heavy cream and cook until heated through and slightly thickened. Transfer the mixture to a bowl, keep warm.
  • Heat the grill to high.
  • Brush the pineapple on both sides with the oil and place on the grill. Grill until golden brown and caramelized on both sides, about 6 minutes. Remove from the grill, stack the slices and cut into chunks. While the pineapple is grilling, place the pound cake on the grill until lightly golden brown on both sides, about 20 seconds on each side. Remove the pineapple from the grill and, when cool enough to handle, either slice or cut into chunks.
  • Top each piece of pound cake with some of the pineapple and drizzle with the caramel-rum sauce. Top with more pound cake, vanilla ice cream and a maraschino cherry, if desired.

1 box Duncan Hines pineapple cake mix
1 box Jell-o instant coconut cream pudding mix (small; 3.4 oz)
4 large eggs
1/2 can(s) crushed pineapple, drained reserving 1/2 cup juice (20 oz can)
1/2 c pineapple juice
1/2 can(s) cream of coconut (2/3 cup)
1/2 c Jamaican rum
1/2 c vegetable oil
PINEAPPLE-RUM GLAZE
1 stick butter
1/4 c water
1 c brown sugar
1/2 can(s) crushed pineapple, drained (remaining from cake)
3/4 c Jamaican rum

Steps:

  • 1. CAKE: Preheat oven to 325. Grease and flour a large 12" Bundt or tube pan (or spray well with Bakers' Joy).
  • 2. Mix all cake ingredients together at low speed for 30 sec, then at medium speed for 2 min.
  • 3. Pour batter into prepared pan.
  • 4. Bake for 1 hour or until toothpick comes out clean when inserted in center. Cool in pan until cake is completely cool. Make glaze while cake is cooling.
  • 5. RUM GLAZE: Melt butter in a saucepan.
  • 6. Stir in water and sugar. Boil 5 minutes stirring constantly.
  • 7. Add pineapple and boil 1 more minute while stirring.
  • 8. Remove from heat and add rum; set aside and cool 10 minutes.
  • 9. Poke holes all over the bottom of the cooled cake (I use a chopstick). Spoon glaze over cake bottom a little at a time so it soaks in until all glaze is used. Let cake sit for at least 30 minutes and then transfer to serving plate. The longer it sits, the better it gets!

Chef Kris Wessel of Florida Cookery in Miami Beach, Florida, shared this recipe as part of a Palm Tree Christmas menu he created exclusively for Epicurious. At Wessel family Christmases at Grandmother Esther's house in Miami Beach, the main courses were Florida-centric, but the desserts were not. This particular rum cake was often served by one of Wessel's aunts. "I think all the Irish side of our family loved it because it was loaded with rum," he says, joking that they'd often add more to the glaze than the recipe called for. The alcohol will burn off, but you can also omit the rum glaze and just serve with ice cream.

3/4 cup spiced rum
1/2 pineapple, peeled, cored, quartered and cut into 1/4-inch thick pieces
3/4 cup rum
2 sticks butter, room temperature
3/4 cup sugar
5 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking powder
1 tablespoon dark brown sugar
1 pint creme fraiche
1 lime, zested
1 orange, zested

Steps:

  • In a medium bowl, add the cherries and the spiced rum. In another bowl add the pineapple and the 3/4 cup of rum. Cover and refrigerate for 8 hours or overnight.
  • Preheat oven to 350 degrees F.
  • In a large bowl, add 1 3/4 sticks butter and the sugar and cream together until pale yellow, about 2 minutes. Stir in the eggs 1 at a time. Add the vanilla extract and set aside.
  • In a separate bowl, combine the flour, salt, and baking powder. Add the dry ingredients into the wet ingredients and stir until a smooth batter forms.
  • In a 10-inch cast iron skillet, over medium heat, add the remaining 1/4 stick butter and heat until the butter has just melted. Add the brown sugar and using a slotted spoon, add the pineapple pieces, reserving the rum. Saute until they begin to caramelize, about 4 minutes. Add the cherries and the rum they soaked in. Remove the skillet from the heat and light the rum with a long kitchen match. When the flames subside, return the pan to the heat and cook until most of the alcohol has evaporated. Remove the skillet from the heat and set aside to cool 6 to 10 minutes before adding the batter. Remove half the fruit back into the reserved rum for garnishing later.
  • Add the batter to the skillet and put in the oven. Bake for 30 to 45 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and set aside to cool for about 5 minutes before unmolding. To unmold, run a small knife around the edge of the cake, take a large serving plate and put it over the cast iron skillet. Carefully flip over and let sit for a couple of minutes until it releases from the skillet.
  • Put the creme fraiche in a small bowl and stir in the zests. Cut the cake into wedges and serve with a dollop of creme fraiche and the reserved fruit.

2 -3 1/2 ounces vanilla flavor instant pudding and pie filling mix
16 ounces whipped topping

  • Preheat oven to 350 degrees.
  • Grease and flour a 15x10 inch pan.
  • Combine cake mix, 3/4 cup rum, eggs, milk, and oil beat till well combined about 3 minutes. Blend in 1 cup coconut flakes.

This Pineapple Upside-down Cake used to grace the table every Easter at Grandma's. My sister gave me the recipe it is from "The Silver Palate". It is truly decadent garnished with fresh whipped cream. In addition to the pecans, maraschino cherries can be used as well. **COOKS NOTE: The baking time in The Silver Palate recipe states 30 - 35 minutes, however those who have reviewed the cake have had to bake it for 60 minutes. My sister always baked this cake and I made it public before baking it myself. As I went to bake it, I realized my pan was too small so I need to purchase a 9 1/2 inch pan.

  • Melt butter and pour into the bottom of a 9 ½-inch spring-form pan. (Place the pan on foil or parchment paper to catch any leaks).
  • Press the brown sugar evenly over the butter.
  • Sprinkle with 2 tablespoons of rum.
  • Arrange 7 pineapple slices over the brown sugar.
  • Fill in the spaces with the pecan halves.
  • In a large bowl, cream the margarine and granulated sugar.
  • Beat in the eggs, one at a time.
  • Beat in the vanilla.
  • Puree the remaining 3 pineapple slices with the remaining 1 tablespoon rum; beat this into the margarine mixture until thoroughly combined.
  • In a separate bowl, sift the flour, ginger, baking soda, and salt together.
  • Beat dry ingredients into the margarine mixture alternately with the the 1/2 cup of reserved pineapple juice. Thoroughly combine after each addition, scraping down the sides of the bowl as necessary.
  • Pour the cake batter over the pineapple slices in the spring-form pan.
  • Bake until the center of the cake springs back when gently touched, 50 - 60 minutes, Test your cake after 30 - 35 minutes. **See COOKS NOTES in the recipe description.**.
  • While the cake is still hot, remove the side of the pan. Invert the cake onto a platter and remove the pan bottom.
  • Serve the cake warm or at room temperature.
  • Top with whipped cream, if desired.

1/2 cup butter
1 cup powdered sugar
2/3 cup coconut rum
4 eggs
1 (6 ounce) package instant vanilla pudding
1/3 cup vegetable oil
1/3 cup water
1 cup crushed pineapple

Steps:

  • Grease and flower a bunt pan.
  • Preheat over to 350°F.
  • Mix together cake mix, 1/3 cup of coconut run, eggs, oil, water, vanilla pudding and drained crushed pineapple in mixer on med speed until smooth. 4. bake for one hour or until cooked through. 5. Glaze:. 6. Place butter, powdered sugar and 1/3 cup of coconut rum in the microwave for 2 minutes or until it boils and all the sugar is dissolved.
  • Leave the cake in the bunt pan.
  • While it is still hot, poke several holes around the cake and pour glaze over all the holes and the whole cake.
  • Let cook completely before you remove.
  • Looks very pretty garnished with strawberries, pineapple rings and other fresh fruit.

6 pineapple rings, reserve juice (fresh or canned)
1/2 cup spiced rum (such as Captain Morgan's)
1/4 lb butter
1 cup firmly packed brown sugar
1/2 cup chopped macadamia nuts
1/4 cup reserved pineapple juice (can include some of the rum that was used to soak the pineapple)
3 eggs, separated
1 cup granulated sugar
1 cup all-purpose white flour
1/4 teaspoon salt
1 teaspoon baking powder
6 maraschino cherries, halves (optional)

Steps:

  • Marinate pineapple rings in rum overnight.
  • Preheat oven to 350 degrees.
  • Melt the butter and brown sugar in a large iron skillet (at least 12"), or other heavy, oven-proof pan.
  • Arrange the marinated pineapple rings in the bottom of the pan in a single layer and simmer slowly over low heat in the melted butter and sugar until the cake batter is ready to go into the pan.
  • Mix the granulated sugar, reserved pineapple juice and egg yolks in a large bowl.
  • Sift the flour, baking powder and salt in a separate bowl.
  • Beat egg whites until peaks form.
  • Quickly mix flour mixture into the sugar and egg mixture until well blended. Gently fold in egg whites.
  • Place one cherry half upside down in the middle of each pineapple ring. Sprinkle chopped macadamia nuts evenly over the rings, gently spoon the batter over the pineapple rings and macadamia nuts.
  • Bake for 20-25 minutes, or until a toothpick comes out clean.
  • Let the cake cool until it is just warm to the touch, then invert over a large plate.
  • Serve warm or at room temperature.

1/2 cup butter
1 cup brown sugar
1/2 cup Meyer's dark rum
1 (20 ounce) can crushed pineapple in juice, juices reserved
1/3 cup vegetable oil
3 eggs

Steps:

  • Preheat oven to 350 degrees. You can use either a 13X9 pan or two 9" cake pans for this, spray sides of baking dish(es) with cooking spray.
  • Drain pineapple, reserving all juice. Press it down into the strainer to remove excess juice in the pineapple. Measure out 3/4 cup of juice and discard the remaining juice or save for other purpose.
  • Cut butter into pieces and place into baking dish(es), sprinkle brown sugar on top of butter - divide both butter & brown sugar into halves if you are making it in two pans rather than one.
  • Place in oven while preheating until butter melts completely, then remove from oven, stir in the drained crushed pineapple. Set aside.
  • In a bowl mix together eggs, oil, rum and the 3/4 of pineapple juice saved from the can until well blended.
  • Add in the box of dry cake mix to this liquid mixture and mix on low for 30 seconds to combine, then on medium for two minutes.
  • Pour evenly over the pineapple, butter, sugar mix in baking dish.
  • Bake for 30-36 minutes, test for doneness with toothpick.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt brown sugar, butter, and honey for topping in a small saucepan over medium heat, stirring until smooth.
  • Pour butter mixture into the bottoms of two ungreased 8-inch round cake pans. Drain pineapple slices and reserve 1/4 cup juice for the cake. Layer pineapple slices on top of the butter mixture.
  • Combine buttermilk, rum, and reserved pineapple juice in a small bowl. Combine flour, baking powder, cinnamon, pumpkin pie spice, and salt in another small bowl.

I've made the original Bacardi Rum Cake for years, but this Holiday season, I changed the recipe because my family loves Pineapple Upside-Down Cake. It turned out wonderful! I hope you enjoy it as much as my family did. FYI...the longer it sets, the better it tastes, making it the perfect gift to mail!

1 cup chopped pecans
1 duncan hines pineapple upside down cake mix
1 jello instant vanilla pudding mix
4 eggs
1/2 cup milk
1/2 cup vegetable oil
1 cup bacardi gold rum
1 can crushed pineapple
1 stick butter, melted
1/2 cup packed brown sugar
1 cup powdered sugar
extra pineapple juice, just in case
1 c sugar

Steps:

  • 1. Preheat oven to 325 degrees F. Grease and flour (or spray) 12-cup Bundt pan. Add the melted butter, nuts, brown sugar, 1/2 of juice from crushed pineapple, and as much of the pineapple as desired (I use about half of the can) to the prepared pan. It will appear to be a lot in the pan, but that's normal. The finished cake will look nice!
  • 2. Combine cake mix, pudding, eggs, milk, oil, 1/2 cup of rum, half can of crushed pineapple and beat for 2 minutes on high with mixer. Pour into prepared pan and bake for 1 hour. (Check at 50 minutes--if toothpick comes out clean--you're done--depends on your oven).
  • 3. Prepare glaze--Add remaining 1/2 of pineapple juice, powered sugar, 1 cup sugar, remaining 1/2 cup rum, and 1/2 stick melted butter to sauce pan and heat on. It's always good to have a little extra pineapple juice to get right flavor. This glaze will be very thin, but will absorb. Any extra that settles around the cake will be fine and will soak into any fruit you use to decorate the outside. You'll know when you taste it.
  • 4. Let cool 5 minutes and invert to serving plate. Let rest 10 minutes. Poke holes using toothpick and drizzle glaze slowly to ensure all is absorbed all over the cake. Garnish with frozen sugared raspberries and mint leaves for a special Holiday look or you can use half pineapple rings to circle around the cake.

PINEAPPLE RUM CAKE

We have tweaked several recipes for rum cake and this is our favorite. The most important thing to remember is to use Top Quality Rum, not Bacardi, for the best flavor. We use Appleton Estates Jamaican rum which can be found in most liquor stores. These are nice to give away at the holidays and will freeze nicely too.

1 pkg yellow cake mix
1 pkg vanilla pudding (4 serving size)
3 eggs
1 (8 oz) can(s) crushed pineapple with juice
1/4 c canola oil
1/2 c appleton estates jamaican rum
1 c chopped pecans
6 Tbsp butter
1/4 c pineapple juice
2/3 c sugar
3 oz appleton estates jamaican rum

Steps:

  • 1. Preheat oven to 325. Spray 5 mini loaf pans with Baker's Joy. (can also be made in a Bundt pan or 2 loaf pans)
  • 2. Beat first 6 ingredients together (cake mix through rum), beating well for 2 minutes and scraping down the sides as you go. Stir in pecans by hand. Pour batter into prepared pans. Bake at 325 for 15 minutes, then reduce temperature to 300 and bake for 25 more minutes or until lightly browned and start to pull away from sides of pans. Allow to cool on wire rack while you cook the glaze.
  • 3. Melt the butter in a saucepan. Stir in pineapple juice and sugar. Boil for 5 minutes, stirring occasionally. Remove pan from heat and allow to cool for about 5 minutes then stir in the rum.Poke holes in the top of the cakes using an ice pick or chopstick. Pour the glaze into a large measuring cup with a spout and then slowly pour over the cakes allowing the glaze to soak in. Make at least 2 passes over each cake.
  • 4. Let cakes stay in the pan until cool then remove from pans and wrap with plastic wrap and put in Ziploc bags. These are better the 2nd and 3rd day after they are baked and do not need to be refrigerated.

1/4 cup honey
2 tablespoons orange juice
1/4 teaspoon ground cinnamon
1 pineapple, peeled and cored
1 poundcake, sliced into 1 inch thick slices and then halved
2 tablespoons butter, melted
1 pint vanilla ice cream
1/4 cup shredded coconut, lightly toasted

Steps:

  • In a small saucepan whisk together rum, honey, orange juice and cinnamon.
  • Simmer over medium heat 3-5 minutes, until thick and syrupy.
  • Remove from heat and let cool slightly.
  • Cut the pineapple into half, lengthwise and then cut each half into six long wedges; you will have 12 pieces.
  • Brush the pineapple wedges with the glaze and place on tray.
  • Brush melted butter over each side of pound cake slices.
  • Barbecue pineapple over medium heat, brushing frequently with glaze and turning occasionally, until caramelized and golden.
  • Barbecue pound cake slices, 2 minutes per side, until toasty and warm.
  • Serve grilled pineapple and pound cake with scoops of vanilla ice cream sprinkled coconut, and drizzled with remaining rum and honey glaze.

  • For glaze:.
  • Heat water to boiling in small saucepan.
  • Add sugar.
  • Stir til dissolved.
  • Add rum.

  • Pour glaze over hot cake.
  • Cool slightly.
  • Turn onto serving platter.
