2 cups sugar
2 quarts cold water
2 packages (0.13 oz each) lime-flavored unsweetened soft drink mix
1 can (46 oz) pineapple juice, chilled
1 bottle (1 liter) ginger ale (4 1/4 cups), chilled

Steps:

  • In large pitcher or punch bowl, stir together sugar and water until sugar is dissolved. Stir in remaining ingredients. Pour into glasses.

200 g sugar
2 chilies
5 cm ginger
1 lime
100 ml rum
1 tablespoon honey
1 pineapple
ice cream

Steps:

  • Put the sugar, chillies, ginger, lime zest, rum and honey into a pan and bring to the boil, simmer for a minute or so until a little syrupy and the sugar has dissolved.
  • Remove the skin and the inner core from the pineapple and cut into thick rings, approx 1 1/2 cm thick.
  • Barbecue for 2-3 minutes each side until caramelised, then add the glaze. Alternatively, preheat the oven to gas 6, 200C, fan 180C, and cook for 10-12 minutes, until the fruit starts to caramelise, then add the glaze.
  • Serve with the extra glaze spooned over and ice cream on the side.
