PINEAPPLE RUM COCKTAIL

This pineapple rum cocktail is a stunning mixed drink with a tropical flair! Use any type of rum you have (even pineapple rum).

6 large leaves mint
1 teaspoon sugar
2 lime wedges
2 ounces golden (aged), dark, white, or pineapple rum*
1 1/2 ounces pineapple juice
1/4 ounce Maraschino liqueur
2 shakes orange bitters (optional but recommended)
For the garnish: Mint, lime wedges, and/or pineapple slice

Steps:

  • In a cocktail shaker, muddle the mint with the sugar and lime wedges.
  • Add the rum, pineapple juice and Maraschino liqueur to the cocktail shaker. Fill it with ice and shake until cold.
  • Strain the drink into a glass. Shake on the bitters if desired. Garnish with mint, a lime wedge and a pineapple slice.

1 1/2 cups ice
5 ounces (1/2 cup plus 2 tablespoons) aged rum
2 ounces (4 tablespoons) cream of coconut (not coconut cream; see notes*)
4 ounces (1/2 cup) pineapple juice
1 ounce (2 tablespoons) lime juice
For the garnish: cocktail cherry

Steps:

  • Blend pineapple and ice until chunky. Add the remaining ingredients and blend until smooth. Serve garnished with a cocktail cherry and drink umbrellas.

2 1/2 ounces fresh pineapple juice
2 ounces light rum, such as Bacardi Light
1/4 ounce fresh lime juice, plus 1 lime wedge, for serving
1/4 ounce Demerara Sugar Simple Syrup, recipe follows
2 sprigs fresh rosemary
1/2 cup demerara sugar

Steps:

  • Put the pineapple juice, rum, lime juice, Demerara Sugar Simple Syrup and 1 sprig rosemary in a mixing tin and lightly muddle the rosemary. Add ice, shake vigorously and strain into a glass over fresh ice. Garnish with the remaining rosemary sprig and a lime wedge.
  • Combine the sugar and 1/2 cup water in a pot over medium-high heat and bring to a boil. Lower the heat to medium and simmer until the sugar dissolves. Let cool completely.

1 tsp vanilla paste

1 pineapple , skinned and very thinly sliced (like pineapple carpaccio)

Steps:

  • Gently heat the caster sugar, vanilla paste, lime juice and 50ml water in a pan until the sugar dissolves.

Number Of Ingredients 9

100ml dark rum
2 tbsp light brown soft sugar
¼ tsp ground nutmeg
¼ tsp ground allspice
¼ tsp ground cinnamon
200ml crème fraîche
2 limes, zested and juiced
1 pineapple, peeled and cut into 8 wedges
½ scotch bonnet chilli, deseeded and finely chopped (optional)

Steps:

  • Heat the rum in a small pan over a low heat with 50ml water and stir in the sugar until it dissolves. Turn the heat up to medium and bring to the boil. Boil for 2-3 mins until the mixture thickens slightly. Remove from the heat. Stir in the spices. Mix the crème fraîche with the lime zest and juice in a separate bowl.
  • Arrange the coals on one side of the barbecue and light (or see tip below for cooking indoors). When the flames have died down and the coals are ashen, lay the pineapple wedges over the coals. Cook for 2-3 mins until char marks appear, then turn over.
  • Brush the pineapple wedges with the rum syrup and cook for 10 mins more, moving them around the grill using tongs so they don't burn. When ready, they will be golden and soft. Remove from the barbecue, sprinkle with the chilli, if using, and serve with the lime crème fraîche.
