This pineapple ginger juice is a deliciously sweet, fresh, juice, and is packed with a major boost of nutrients that will rival any multivitamin supplement.

2 lbs about one whole pineapple peeled and cut pineapple (make sure to save add the core as well)
50 g ginger (about a small thumb size)
1 lime
1 cup water

Steps:

  • In a blender, simply blend the pineapple and ginger with the water until all the ingredients are pureed.
  • If you have a smaller blender, you can simply split the split the blended ingredients into two batches. Since the juice is going to be mixed together anyway, it does not matter if you split them evenly.
  • Strain the juice into a clean container with a fine mesh strainer, cheese cloth or better yet, a nut milk bag.
  • Into the strained juice, squeeze the lime juice, making sure to catch the seeds and stir.
  • Serve the juice chilled.

1 can (20 ounces) unsweetened pineapple chunks
1 tablespoon cornstarch
3 tablespoons reduced-sodium soy sauce
2 tablespoons honey
1/4 teaspoon ground cinnamon
2 tablespoons canola oil, divided
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1 small onion, chopped
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
Hot cooked brown rice
Minced fresh cilantro, optional

Steps:

  • Drain pineapple, reserving juice. Mix cornstarch, soy sauce, honey, cinnamon and reserved juice until smooth. In a skillet, heat 1 tablespoon oil over medium-high heat; saute chicken until lightly browned, 4-6 minutes. Remove from pan., In same pan, saute onion, ginger and garlic in remaining oil until crisp-tender, about 2 minutes. Stir cornstarch mixture; add to pan with chicken and pineapple chunks. Bring to a boil, stirring constantly; cook and stir until sauce is thickened and chicken is cooked through, 5-7 minutes., Serve with rice. If desired, sprinkle with cilantro.

1 (20 ounce) can pineapple chunks with juice
¾ cup water, or as needed
¾ cup uncooked long-grain rice
½ teaspoon freshly grated ginger
½ teaspoon salt
3 medium green onions, white and green parts, finely chopped

Steps:

  • Pour pineapple juice into a 2-cup liquid measure; add water to reach 1 3/4 cups liquid. Pour into a saucepan. Reserve pineapple chunks.
  • Add rice, ginger, and salt to the saucepan and bring to a boil. Reduce heat to a simmer and cover; cook until rice is tender and the majority of the liquid is absorbed, 18 to 20 minutes.
  • Add pineapple chunks and green onions; fluff with a fork to mix.

2 tablespoons fresh lemon juice
2 teaspoons creme de cassis
ice

Steps:

  • In a pitcher mix pineapple juice, gin and lemon juice. Divide between two highball glasses. Pour 1 tsp creme de cassis into center of each glass, do not stir. Carefully fill glasses with ice and serve immediately.

Crank up the flavour of healthy food with a Chinese steak stir-fry that combines contrasting fruit, ginger and soy notes

400g rump steak, thinly sliced
3tbsp soy sauce
2tbsp soft brown sugar
1tbsp chilli sauce
1tbsp rice wine vinegar
2tsp vegetable oil
thumb-sized piece ginger, cut into fine matchsticks
4 spring onions, cut into 3cm lengths
200g pineapple, cut into chunks
handful coriander leaves, to serve
rice and greens, to serve (optional)

Steps:

  • Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 mins.
  • Heat a wok with 1 tsp of the oil. Lift the steak from the marinade and sear, in batches, then remove. Add a bit more oil and fry the ginger until golden. Add the spring onions and pineapple, and return the steak to the pan. Stir to heat through for 1 min, then add any remaining marinade. Keep stirring until the marinade becomes thick and everything is hot. Serve sprinkled with coriander, and with rice and greens, if you like.
