Fresh fruit threaded on skewers and served with a fruity, creamy dip is simple, fun and tasty!

1/2 package (8-oz size) reduced-fat cream cheese (Neufchâtel), softened
1 container (6 oz) Yoplait® 99% Fat Free vanilla yogurt
1/4 cup honey
1/2 can (8 1/4-oz size) sliced pineapple in juice, drained, finely chopped
1/2 can (8 1/4-oz size) sliced pineapple in juice, drained
16 seedless green grapes
1/2 can (11-oz size) mandarin orange segments, drained
8 strawberries, cut in half

Steps:

  • In medium bowl, mix cream cheese, yogurt and honey until creamy. Fold in chopped pineapple. Cover; refrigerate at least 1 hour to blend flavors.
  • Cut pineapple slices into eighths. Thread any combination of about 4 pieces fruit on each of 16 plastic or wooden skewers. Serve with dip.

Number Of Ingredients 11

1/2 cup sugar
1 large egg, beaten
2 tablespoons orange juice
2 tablespoons grated orange zest
2 teaspoons lemon juice
2 teaspoons grated lemon zest
3 ounces cream cheese, softened
1 carton (12 ounces) frozen whipped topping, thawed
1 large ripe pineapple
Additional orange and lemon zest, optional
Assorted fresh fruit

Steps:

  • In a saucepan, combine the first six ingredients; cook and stir over low heat until mixture reaches 160*. Remove from the heat. , In a bowl, beat cream cheese. Gradually add egg mixture, beating until smooth. Cool to room temperature. Fold in whipped topping. Refrigerate until serving. , Stand pineapple upright and vertically cut about a third from one side, leaving the top attached. Remove fruit and discard outer peel from the smaller section. Remove fruit from the larger section, leaving a 1/2-in. shell. Cut fruit into chunks. , Fill shell with dip. Sprinkle with and orange and lemon zest if desired. Serve with pineapple chunks and other fruit.

This recipe came out of a recent cookbook on diabetic cooking. A friend of mine made a copy of the recipe but couldn't recall the name of the cookbook!

1/4 cup light cream cheese, whipped
1/4 cup nonfat sour cream
3 tablespoons sugar substitute (measure for measure)
1 (8 ounce) can crushed pineapple with juice

Steps:

  • Combine cream cheese, sour cream & sugar substitute in small bowl.
  • Place pineapple in a fine mesh strainer, & using the back of a spoon, press down firmly to release excess liquid.
  • Combine drained pineapple with cream cheese mixture, & stir until completely blended.
  • Serve immediately or cover with plastic wrap & refrigerate until ready to serve. Can be made up to 24 hours in advance.

I serve this with a platter of fruits, strawberries, melon, apples, etc... but everyone ALWAYS ends up eating it with all the desserts.

1 large tub of cool whip
1 large box vanilla instant pudding (sugar free works well too)
1 can(s) crushed pineapple

Steps:

  • 1. Drain pineapple well
  • 2. Fold all ingredients into the cool whip (fold gently so you don't lose the light fluff of the cool whip)
  • 3. Chill for 30 minutes for best results.
  • 4. Serve with fresh cut fruits or it makes a great topping for pound cake, angel food cake and can also be a nice light topping for a cake.
