2 1/2 tablespoons butter
2 1/2 tablespoons brown sugar
1 large can pineapple slices, drained
1/4 cup rum

Steps:

  • In a large skillet, cook the butter and brown sugar over medium heat, stirring, until the sugar dissolves. Place the pineapple in the syrup in a single layer, reduce the heat to medium-low, and cook for 3 to 4 minutes, until browned on the first side. Turn with a small spatula or tongs and cook on the second side until the pineapples are soft and richly browned. Add rum and flambe. Arrange on dessert plates.

1/4 cup brandy (or rum)
1 teaspoon lemon juice
4 mangoes, peeled and sliced
1/2 cup water (or OJ or lemon juice or pineapple juice)
3 tablespoons sugar
1/4 cup mango jam (or apricot for peach or pineapple for pineapple, etc)

Steps:

  • Simmer jam, sugar and water until mixture is syrupy, about 5 minutes.
  • Add mangos and cook over low heat 3 minutes.
  • Stir in lemon juice.
  • Heat brandy until just warm. Ignite and pour flaming over mangos.
  • Stir and spoon over ice cream.

This is a delicious and elegant end to any meal! In a pinch, I've managed to substitute the cognac with rum with a great deal of success. If the pinapple sits witht he strawberries for too long, it will take on a red tone, the flavor is still delicious though.

1 pineapple
2 cups strawberries, sliced
1/3 cup sugar
1/2 cup sherry wine
1 teaspoon cornstarch
1 liter vanilla ice cream
1/4 cup cognac

Steps:

  • Slice pineapple in half, lengthwise.
  • Remove fruit leaving 1 inch thick shell.
  • Cut fruit into cubes and measure 1 ½ cups.
  • Refrigerate shells.
  • In a medium saucepan combine pineapple, strawberries, sugar and sherry; bring to a boil. Reduce heat and simmer uncovered, 5 minutes.
  • Combine cornstarch with 1 tsp water and stir into sauce until slightly thickened.
  • Scoop ice cream into shells and keep chilled.
  • Just before serving warm cognac, ignite and pour over pineapple mixture.
  • Serve ice cream from shells and spoon sauce over.

Bacon and Asparagus Crepes with Pineapple Sauce Flambe image

1 cup sifted all-purpose flour
1/2 tablespoon white sugar
1/8 teaspoon salt
1 egg well beaten
1 cup milk
2 tablespoons butter, melted
Pineapple Sauce:
1 cup crushed pineapple in heavy syrup
6 ounces pineapple juice
1/2 ounce dry sherry
1/8 teaspoon ginger
1 tablespoon cornstarch
1 ounce water with a few drops orange food coloring

Steps:

  • 1. Mix the dry ingredients and add to combined milk, egg, and butter beat well. 2. Pour 1 1/2 oz. of batter into a preheated lightly oiled 6 inch frying pan and cook on medium heat for approximately 1 minute per side. 3. Remove and cool on a wire rack. 4. Heat all ingredients except starch and water. 5. Form a slurry with starch and water, thicken sauce and simmer 5 minutes. Assembly and Flaming: 8 cooked crepes pineapple cream cheese softened to spread each crepe 32 strips cooked side bacon 24 asparagus spears 2 oz. Glayva. Spread each crepe with cream cheese and roll around 4 strips of bacon and 3 spears of asparagus and place in well buttered pan, cover with wax paper or foil and heat 20 minutes in a 350 degree oven. Remove, flame with hot Glayva mask with sauce
