CRISP BANANA AND PINEAPPLE FRITTERS
Steps:
- In a shallow bowl, whisk the eggs with the cinnamon using a fork. Place the panko bread crumbs on another plate. Toss the fruit in the egg, then into the crumbs. Repeat this 1 more time to make a second coating.
- In a 6 to 8-quart pan heat canola oil, filled just 3 inches from top of the pan, to 365 degrees F. Drop the fruit into the oil and cook until brown on all sides. Drain on paper towels.
- Serve immediately, drizzled with honey, if desired.
PINEAPPLE CRISP
Steps:
- Cook and caramelize pineapples in non-stick pan until softened. Add rum and cook off alcohol.
- Pulse almonds, light brown sugar, cinnamon, ginger, flour, and butter in food processor. Fill 5-inch round gratin dishes with cooked pineapple and top with crisp mixture. Cook in a preheated 400-degree oven until brown and bubbly on top, about 10 to 12 minutes.
APPLE PINEAPPLE CRISP
Spice up this comforting crumb topped fruit with cinnamon and nutmeg for a delightfully down home dessert. - Coat a 2-quart rectangular baking dish with nonstick cooking spray.
- Preheat oven to 375°F.
- If desired, peel pears. Core and halve pears lengthwise. Arrange pear halves, cut sides up, in prepared baking dish. Sprinkle with cinnamon and top with pineapple.
- In a medium bowl, combine remaining ingredients until well mixed. Sprinkle this mixture evenly over fruit.

- FOR TOPPING: Whisk sugar and flour in medium bowl. Add butter; cut in with back of fork until mixture is crumbly. Add oats and pecans; blend until clumps form. DO AHEAD: Can be made 1 day ahead. Cover and chill. FOR FILLING: Whisk first 4 ingredients in large bowl. Add apples, cranberries, and pineapple. Stir until fruit is evenly coated. Let stand until juices form, tossing occasionally, at least 30 minutes. DO AHEAD: Can be made 3 hours ahead. Preheat oven to 375°F. Spread filling in 11x7-inch glass baking dish. APPLE PINEAPPLE CRISP NO SUGAR NO FLOUR
I had a large amount of green apples to use but was looking for something without sugar or flour or butter. Tall order! This worked out pretty nicely. This is not decadent and will not convert anyone who usually only eats high fat sweets. But if you like fruit desserts that aren't too sweet, this is nice. It is sort of like baked apples without raisins and butter. I like it warm for breakfast with a dollop of fat free cool-whip, and my 3 year old devoured hers!

- Preheat the oven to 375 degrees.
- Spray an 8X8 square baking dish with cooking spray.
- Peel, core, and slice the apples.
- Put them in the pan.
- Add the canned pineapple and mix it all together.
- Put the frozen banana in the microwave until it is defrosted and mushy.
- Meanwhile, in a small bowl, add the oatmeal and nutmeg and stir well.
- Peel the banana (it will be runny) and add it to the oatmeal.
- This will clump up and be very sticky.
- Put the oatmeal mixture on top of the apples.
- I use my hands but it is sticky and not real easy.
- You may, if you want, spray the top of the crisp with cooking spray or olive oil spray but I didn't find it made much difference.
- Bake for 20-25 minutes or until the topping is starting to brown.
- Serve warm or cold.

- Preheat oven to 375°F. Spray a 12-muffin tin with the cooking spray. Press 2 wonton wrappers into each cup in the muffin tin. Fill each wonton cup with mango and pineapple, to 3/4 full. Combine the nuts, flour, ginger, sugar and salt in a mixing bowl. Add the butter or margarine to the nut-flour mixture; cut it into the dry ingredients using a pastry cutter (or use two knives, cutting through the mixture at cross angles) to make coarse crumbs. Top the fruit with the nut-flour-butter mixture. Bake for about 25 minutes until golden brown, or just bubbling. Serve warm. Garnish with the edible flowers, if desired. CRISP QUAIL WITH PINEAPPLE AND GREEN ONION
Steps:
- Mix the marinade ingredients together. Place the quail quarters on a plate and toss with the marinade. Let marinate 1 hour, up to 6 hours, refrigerated.
- Prepare the sauce: In a medium skillet, over high heat, combine the wine and ginger and reduce by half. Pour in the stock with the cinnamon stick and cook until the sauce thickens. Add the chili oil and season lightly with salt and pepper. Whisk in the butter and correct seasoning to taste. Keep warm.
- In a deep, heavy saucepan or a deep-fryer, heat about 3 inches of peanut oil to 350 degrees F.
- Pour the rice flour into a small bowl and make a thick batter using 1/2 to 3/4 cup water. Transfer the quail from the marinade to a clean plate. Pour enough of the batter over the quail to coat well, reserving a little batter. Deep fry until golden, 2 to 3 minutes. Do not overcook. Drain on a clean towel and toss in the reserved sauce. Quail is best when still pink on the inside.
- Coat the green onions with the remaining batter and fry until golden, 1 or 2 minutes. Drain on clean toweling.
- To serve, arrange the pineapple slices in a circle around the outer edges of a large ovenproof plate. Warm in the oven. Pile the quail in the center and poke the green onions into the quail at various intervals. Serve immediately.
- In a saucepan, heat the oil. Stir in the chile pepper flakes and remove from the heat.
- Cool. Store in a covered jar and use as needed.
