Grandma made bread pudding 2 ways, plain cinnamon or pineapple. I liked this pineapple version best. Picture is free clip art.

4 large eggs, beaten
1/2 c melted butter
3/4 c honey
1 (20 ounce) can crushed pineapple
8 slice white bread

Steps:

  • 1. Preheat oven to 350 degrees. In a large bowl, beat eggs well. Stir in honey and pineapple. Then stir in melted butter. Add bread and mix until well coated. Butter a 2 quart baking dish. Pour mixture into baking dish and spread evenly. Bake uncovered for one hour, until top is lightly browned. Serve warm or cold with whipped cream.

7 slices white bread, cut into cubes
½ cup butter, melted
30 ounces crushed pineapple
4 eggs
½ cup white sugar

Steps:

  • Grease a 2-quart casserole dish.
  • Spread bread cubes in the bottom of the prepared casserole dish. Pour butter over bread cubes and top with pineapple.
  • Beat eggs and sugar together in a bowl until foamy; pour over bread mixture. Cover dish with aluminum foil and refrigerate, about 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil and bake until browned, 5 to 20 minutes.

1 stick (16 tablespoons) unsalted butter, softened, plus more for the dish
1 cup granulated sugar
4 large eggs
Two 8-ounce cans crushed pineapple, drained well
5 slices white bread, cubed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 1.5-quart casserole dish.
  • In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Then add the eggs one at a time, incorporating fully between each addition. With the mixer on low, beat in the pineapple just until incorporated. With a rubber spatula, fold in the bread. Pour it into the prepared dish.
  • Bake in the oven until golden brown and set, 50 to 60 minutes.

1 pkg cream cheese, softned
1 can(s) pineapple, crushed with juice
1 pkg instant pudding, vanilla
1 box graham crackers

Steps:

  • 1. Beat cream cheese in large bowl with electric mixer until smooth.
  • 2. Drain pineapple and reserve juice.
  • 3. Stir in pinapple and pudding mix to cream cheese. Add pineapple juice until well blended.
  • 4. Chill 30 minutes in refridgerator. Serve with graham crackers.

10 slices white bread
3/4 cup butter, melted
5 large eggs, room temperature
1 can (20 ounces) crushed pineapple, drained
1/4 cup dried currants or raisins
1 cup sugar
1-1/2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
Whipped cream, optional

Steps:

  • Place bread on a baking sheet. Bake at 375° for 4 minutes; turn over and bake 4 minutes longer or until very light brown. Cut toasted bread into 1-in. cubes. Toss with melted butter; set aside., In a bowl, beat eggs until thick and lemon-colored. Add the pineapple, currants, sugar and vanilla; mix well.
