4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon all-purpose flour
1 tablespoon canola oil
2 cans (8 ounces each) unsweetened pineapple chunks
1 teaspoon cornstarch
1 tablespoon honey
1 tablespoon reduced-sodium teriyaki sauce or reduced-sodium soy sauce
1/8 teaspoon pepper
Hot cooked rice

Steps:

  • Flatten the chicken to 1/4-in. thickness. Place flour in a large shallow dish; add chicken and turn to coat. , In a large skillet, brown chicken over medium heat in oil until juices run clear, 3-5 minutes on each side. Remove and keep warm. Drain pineapple, reserving 1/4 cup juice. (Discard remaining juice or save for another use.) , In a small bowl, combine cornstarch and reserved juice until smooth. Gradually add to skillet. Stir in the honey, teriyaki sauce and pepper. Bring to a boil. Cook and stir until thickened, about 30 seconds. Add pineapple and chicken; heat through. Serve with rice.

3 tablespoons soy sauce
3 tablespoons olive oil, divided
½ teaspoon paprika
salt to taste
1 pound boneless, skinless chicken breast, cut into strips
1 red bell pepper, cubed
1 bunch scallions, trimmed and sliced into 1/2-inch lengths
1 (12 ounce) can pineapple chunks, drained and juice reserved
1 tablespoon cornstarch

Steps:

  • Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.
  • Heat the remaining 1 tablespoon of olive oil in a wok. Add bell pepper and stir-fry for 3 minutes. Add scallions and cook for 2 more minutes. Remove chicken from marinade and add to the wok; discard marinade. Cook, stirring occasionally, until chicken is cooked through and no longer pink in the centre, 10 to 15 minutes.
  • Combine pineapple juice and cornstarch in a bowl; mix together. Add pineapple chunks to the skillet and cook for 2 to 3 minutes. Pour in pineapple juice mixture and bring to a boil. Simmer until sauce has thickened, about 3 minutes.

1/4 cup chicken broth
3 tablespoons reduced-sodium soy sauce
1 teaspoon ground ginger, divided
2 bone-in chicken breast halves (6 ounces each), skin removed
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 teaspoon cornstarch
2 teaspoons orange marmalade
1 teaspoon lemon juice

Steps:

  • In a large resealable plastic bag, combine the broth, soy sauce and 1/2 teaspoon ginger; add chicken. Seal bag and turn to coat; refrigerate for 2 hours, turning occasionally., Drain pineapple, reserving 1/2 cup juice; set aside 1/4 cup pineapple (refrigerate remaining pineapple and juice for another use). In a saucepan, combine cornstarch and reserved pineapple juice until smooth. Stir in the pineapple, orange marmalade, lemon juice and remaining ginger. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Drain and discard marinade. Place chicken in a 9-in. square baking dish coated with cooking spray. Top with pineapple mixture. Pineapple Chicken is so good. This recipe will serve 100, a Large Crowd, or easily cut down to size. Great for Church gatherings or Potlucks too. or can be Frozen with out the Peppers.

50 lbs chicken cut up ( i cut in strips or 1
1 Cup soy sauce
1/2 Cup salt
1/2 Cup granulated sugar
2 qt flour (hard wheat) = (2 lb 4oz)
1 Cup soy sauce
3 qts canned crushed pineapple = (1 # 10 can)
oil . .just enoughtto fry chicken.
optional: 1 ea. red and green bell pepper chopped small
optional: 1 handfull frozen peas & carrots ,per pan
1/2 CAN pineapple, chunks ( # 10 can) aditional for garnish.

Steps:

  • 1. Preheat Oven @ 350-365 Preferred @ 365 Wash Chicken under runing water, and drain well. Combine: 1 Cup soy, salt, and sugar. Spread on chicken well. or toss well if in pieces.
  • 2. Measure Flour, Dredge Chicken in the Flour. Fry @ 365 til golden and done. Drain off any excess oil. NOTE: if large pieces fry about 10 min.
  • 3. Place Chicken in pans (skin side up if whole pieces,) Combine: 1 Cup Soy & Pineapple, Pour over and spread about 1 1/2 Qts over top of the chicken, in each pan. Cover Pans, with Foil. BAKE: Bake Bite size pieces about 30-45 min. Whole Pieces, Bake 1 hr to 1 1/4 hr. til tender.depending on size of Pieces. HINT - TIP: For additional Color add 1 each red and green Bell Peppers Cut in Small Pieces sprinkled over Pans the last 10 min of baking time, or add 1 handfull of Frozen Peas and Carrots to each pan. Serve over Rice.
  • 4. TIP: for Your Info. a # 10 can is an Institutional sized can. ( BIGGEST YOU CAN GET,) You can find some @ walmart. or Costco & Sams clubs they carry # 10 cans.
