BANANA-PINEAPPLE VANILLA PUDDING PIE
My favorite dessert recipe. Pulled original recipe from one of those homemade cookbooks put together by my company years ago. Don't remember the original as I make it from memory now, but get so many compliments every time I make it. Warning: will satisfy that sweet tooth!

Steps:
- Combine cream cheese and sugar in a bowl and mix together with a hand blender. Gently spread mixture on bottom of pie crust. Layer cream cheese mixture with drained pineapple and spread banana slices over top.
- Combine milk and pudding mix in a bowl; blend until smooth. Gently fold in frozen whipped topping; don't overmix of whipped topping will start to melt and become difficult to work with. Spread whipped topping-pudding mixture on top of bananas and sprinkle almonds on top for garnish.
- Place in the refrigerator until set, at least 2 to 3 hours.

PINEAPPLE MANGO BANANA PIE
If you like a taste of the tropics you will like this pie. This pie is a great spring and summer dessert. Use fresh, ripe pineapple and mango and bananas that are brown all over. They will act as a binding agent but leaves lots of moisture in the pie.

- Preheat oven to 375 degrees F (190 degrees C).
- Drain pineapple and mango in a fine mesh strainer fitted over a bowl. Transfer pineapple and mango to a large bowl; mix in bananas and lime juice.
- Mix sugar, tapioca, cinnamon, ginger, and salt in a separate bowl. Add sugar mixture to fruit mixture; toss to coat. Fold in butter pieces. Set aside until flavors have blended, 15 to 30 minutes. The longer it sits, the better it will set up during baking.
- Press 1 pie crust into a 9-inch plate plate; spoon fruit mixture into pie crust. Top with the second pie crust, crimping the edges together to seal. Cut a few slits in the top crust for ventilation during baking. Line the crust edges with aluminum foil to prevent burning.
- Bake in the preheated oven for 25 minutes. Remove aluminum foil and bake until crust is golden brown, 20 to 25 minutes. Cool completely on a wire rack.

COCUNUT-BANANA CREAM PIE WITH PINEAPPLE
I came up with this base off of a recipe I found on Myrecipes.com. I was wanting a REALLY tropical tasting pie. This is what I ended up with. It's the best of both worlds. I served it at a family gathering and those who prefer coconut cream pie to banana cream pie really enjoyed the combination.

Steps:
- 1. Layer banana slices on crust. Spoon pineapple onto the banana layer.
- 2. Combine 3/4 cup sugar, cornstarch, and 1/4 teaspoon salt in a saucepan, and stir in milk. Bring to a boil; cook for 1 minute, stirring with a whisk.
- 3. Gradually add about 1/3 cup hot custard to beaten eggs; stir constantly with a whisk. Return egg mixture to pan. Cook for 2 minutes or until thick, stirring constantly.
- 4. Remove mixture from heat; stir in cream of coconut and extracts.
- 5. Spoon mixture into the prepared crust. Cover surface of filling with plastic wrap; chill until set (about 2 hours).
- 6. Remove plastic wrap, and spread whipped topping evenly over filling. Sprinkle with coconut.
NO-BAKE BANANA-PINEAPPLE CREAM PIE (DIABETIC FRIENDLY)
This is a diabetic-friendly dessert, if you use fresh pineapple, that takes only 30 minutes to prepare and sets up in the refrigerator. The first time I made it I did not let it set up prior to adding the topping. It can be a bit messy if pudding does not set properly.

- Line the bottoms of both pie crusts with sliced bananas.
- Mix milk, sweetener, cream cheese, 6 ounces whipped topping, pudding, and banana extract together in a large mixing bowl. Mix well for 2 to 3 minutes. Fold in pineapple.
- Divide mixture evenly between the 2 crusts.
- Let chill in the refrigerator for 2 hours. Cover pies with remaining whipped topping.

- 1. In a medium saucepan, combine sugar, flour, salt. Slowly whisk in the milk over medium heat, stirring constantly, once hot, add some milk mixture to the yolks to temper, stir yolks back into pudding. Continue stirring and cooking until thickened. Remove from heat and stir in vanilla.
- 2. Let cool for a few minutes and then stir in the fruit and coconut if desired. Pour into pie shell and chill.
- 3. Top with whipped cream and bananas as I did or however you prefer.
PINEAPPLE BANANA PIE

- Heat oven to 350°F. In medium bowl, mix all crust ingredients. Press in bottom and up side of 9-inch glass pie plate. Bake 8 to 10 minutes or until golden brown; cool.
- Add enough water to reserved pineapple juice to measure 2/3 cup. In small saucepan, heat juice mixture to boiling. In medium bowl, stir gelatin and hot juice mixture about 3 minutes until gelatin is dissolved. Add ice cubes; stir constantly about 3 minutes or until gelatin is thickened. Remove any ice that is not melted.
- With wire whisk, stir whipped topping into gelatin mixture; beat until smooth. Fold in pineapple and banana. Refrigerate about 30 minutes or just until mixture mounds when dropped from a spoon.
- Spread pineapple-banana mixture in crust. Refrigerate about 2 hours or until firm but no longer than 8 hours. Garnish with mint leaves. Store in refrigerator.
