- In a small saucepan, combine the pineapple, sugar, cream, cinnamon and ginger. Cook and stir over medium heat for 5 minutes. , Meanwhile, place the cake on a baking sheet and sprinkle with confectioners' sugar. Broil 5-6 in. from the heat for 3-4 minutes or until golden brown. Drizzle sauce over the cake; sprinkle with coconut.

- Break cake into bite size pieces. Arrange half of the cake pieces in bottom of 13x9 dish. Top with half of undrained pineapple and cherries. Spread half of dessert topping over all and top with half of coconut. Repeat layers, ending with cool whip and cocnut. Cover and refrigerate overnight.
