I found this recipe on line and it was called Pineapple Fluff. I decided to infuse the coconut with Rum and to change the name of the recipe to PINA COLADA PINEAPPLE FLUFF. Now it taste just like a Pina Colada cocktail. Rita Diette

3.4 box coconut cream inst. pudding
1 can(s) 20 oz.can crushed pineapple
1 tube(s) 8 oz.cool whip
2 c mini marshallows
1 c rum infused coconut

Steps:

  • 1. In a large bowl, stir pudding mix and entire can of crushed pineapple, (DO NOT DRAIN pineapple)
  • 2. Gently stir in COOL WHIP, marshmallows, and the Rum infused coconut..
  • 3. Placet in bowl and cover with plastic wrap and chill for a few hours.
  • 4. Please note: I infused the coconut with Rum Extract an hour before using it in the dessert.

1 box Vanilla instant pudding mix - 3.4 oz
1 can Crushed pineapple - 20 oz can - do not drain
1 package Cool Whip lite - 8 oz container - thawed
1 teaspoon Rum extract
1 cup Shredded sweetened coconut
2 cups Miniature marshmallows
1/2 cup Chopped nuts

Steps:

  • 1. Combine pudding mix and entire can of pineapple in a large bowl
  • 2. Stir until completely combined
  • 3. Fold in cool Whip, rum extract, marshmallows, coconut, nuts
  • 4. Chill until ready to serve

1 small (3.4 oz) package instant vanilla pudding mix
1 (20 oz) can crushed pineapple in juice, undrained
1 teaspoon imitation rum extract (I used McCormick's)
1 (8 oz) tub Cool Whip, thawed
2 1/2 cups miniature marshmallows
1 cup sweetened flaked coconut
1/4 cup finely chopped pecans or walnuts (I used pecans)

Steps:

  • ((Note: Some cans of pineapple have more juice than others so if your can has a lot, drain off and reserve about 1/2 cup add add back in only if the mixture needs it. The pudding and pineapple mixture should not be runny.)) Add the undrained pineapple to a mixing bowl; sprinkle the pudding mix over the top and stir until well combined. Fold in the rum extract, Cool Whip, marshmallows, coconut, and nuts. Transfer mixture to a serving bowl and chill until serving time. At serving time, garnish top or individual servings if desired with cut pieces of canned pineapple slices and a drained maraschino cherry. (Drain the pineapple and cherries well on paper towels first).

  • Combine pudding mix and the entire can of crushed pineapple in a large bowl.
  • Stir until completely combined.
  • Fold in Cool Whip, rum extract, marshmallows, coconut, and nuts,
