MOM'S POTATO SALAD WITH PIMENTO AND PEAS



Mom's Potato Salad with Pimento and Peas image

2 1/2 pounds white thin skin potatoes, peeled and diced
2 tablespoons white vinegar or cider vinegar
1 (6-ounce) jar, sliced pimento, drained and chopped
1 cup frozen sweet peas
1 small white onion, peeled and left whole
1/2 cup mayonnaise or reduced fat mayonnaise or, just enough to bind salad
Salt and pepper

Steps:

  • Boil potatoes in salted water for 12 minutes, until fork tender. Drain and return potatoes to hot pot to dry them. Sprinkle potatoes with vinegar. Transfer potatoes to a bowl and let them cool.
  • When potatoes have cooled, add pimento and peas to the bowl. Using a hand held grater, grate the small white onion over the potatoes. The onion juice is what makes this salad so good. Add 1/2 cup of mayonnaise dressing to the bowl, or to your liking, to bind.
  • Season potato salad with salt and pepper, to taste. Transfer to plastic serving wear and pack up for your picnic. Keep this salad in your cooler with beverages or chill until ready to travel.

3 large potatoes
1/4 cup butter
1 cup grated sharp cheddar cheese
1 cup sour cream
1/2 cup milk
1/3 cup green onion, and tops
salt
white pepper
1/4 cup chopped pimiento (optional)

Steps:

  • Boil potatoes in jackets until almost done; chill until very cold; peel and shred with a grater Melt butter in double boiler Add cheese, a small amount at a time Mix together the sour cream and milk Add to cheese mixture.

instant mashed potatoes (8 servings)
1 (16 ounce) package cream cheese
1 (4 ounce) jar pimientos, chopped and drained
1/2 teaspoon garlic salt (or more to suit your taste)

Steps:

  • Whip softened cream cheese into warm mashed potatoes. Sir in pimientos; season to taste with garlic salt. Put in oven at 350 degrees for 30-45 minutes.

1kg floury potatoes, peeled and cut into 2cm cubes
4 garlic cloves, bashed
2 rosemary sprigs, needles picked and finely chopped
4 tbsp vegetable oil

Steps:

  • Tip the potatoes into a large pan of cold water and season with a large pinch of salt. Bring to the boil over a high heat, then immediately drain and leave to steam-dry for a few minutes in a colander.
  • Heat the oven to 220C/200C fan/gas 7. Tip the potatoes onto a large baking tray along with the garlic cloves, rosemary and oil. Season well, then mix everything thoroughly so each potato cube is coated in the oil. Shake the tray gently to spread the potatoes out into a rough single layer. Roast for 30-35 mins, turning halfway through, until the potatoes are golden and crisp on the outside and tender when pierced with a fork. Serve with roast lamb, fish or as an alternative to chips or roast potatoes.
