PIMIENTO AND CHEESE SPREAD

Steps:
- Shred cheese; transfer to a large bowl. Add cream cheese, Worcestershire sauce, vinegar, pepper, garlic powder and cayenne; beat on low speed until blended. Drain pimientos, reserving 2 tablespoons juice. Stir in pimientos and reserved juice. Serve with crackers and vegetables.

- Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined. Season to taste with salt and black pepper.

PIMIENTO CHEESE SPREAD
Steps:
- Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.
SPICY PIMENTO CHEESE SPREAD
Steps:
- Combine the cream cheese, mayonnaise, garlic powder, onion powder and celery seed. Mix in the pickled jalapenos, piquillo peppers and grated Cheddar. Add the Sriracha and combine. Taste and add more mayonnaise and Sriracha, if necessary. Chill before serving.

- 1. NOTE: I believe in the old saying, "If it ain't broke, don't fix it," so I stick to the basics on this recipe and I don't add a lot of extra ingredients. Put the whole package (whether making the 1 lb. or the 2 lb.) of velveeta in the freezer for about 10-15 minutes. Don't leave it too long or the paper will begin to stick to the cheese and you will have to peel it off, leave it just long enough for it to grate well. Grate on side with the larger grating holes. Add drained pimentos, sweetner and mayo. Mix well, add more mayo if needed. Serve with fresh loaf bread or on a cracker. (It's really good with a fresh garden tomato on the sandwich, too.)
PARTY PIMENTO CHEESE SPREAD
Pimiento cheese spread is one of those Southern comfort foods that doubles as a really delicious appetizer. - Let cream cheese soften slightly.
- Cream with the milk till smooth.
- Drain pimentos and add with nuts to cream cheese.
- Mix well; add tiny bit more milk if necessary to make a spreadable consistency.
- Serve with rye bread (party rounds), wheat crackers, Triscuit, or Melba toast.
- Store in fridge.
