Pikelets With Cinnamon Apple Slices image

Delicious plain pikelets with a cinnamon applesauce. The sauce is a bit different because of the slicing of the apples. One or two pikelets makes a very nice dessert with a spoonful of vanilla ice cream! If using non hydrogenated margarine for the pancakes and sauce, such as Becel, use a little less because of the higher moisture content. Recipe altered from Apple & Pear Australia Ltd.

Number Of Ingredients 10

1 cup self raising flour
2 tablespoons caster sugar or 2 tablespoons sugar
1 egg, lightly beaten
25 g margarine or 25 g unsalted butter, melted
2/3 cup skim milk
40 g margarine or 40 g butter
1/4 cup caster sugar or 1/4 cup sugar
1 teaspoon cinnamon
2 tablespoons lemon juice
2 braeburn apples, cut horizontally into 1/2 cm slices

Steps:

  • Sift the flour into a mixing bowl and stir in the sugar; Mix together the egg, melted butter and milk; Whisk into the flour mixture.
  • Heat a greased frying pan and add 2 tablespoons of mixture into the pan for each pikelet; Cook for 2 minutes or until bubbles appear on the surface of the pikelet; Turn over and cook for another 30 seconds.
  • Remove from pan and keep warm; Repeat with pikelet mixture.
  • For the cinnamon apples: Melt the margarine in a small sauce pan. Add the sugar, cinnamon and lemon juice and stir until well combined; Add the slices of apple and simmer in the mixture until tender (about 4 minutes).
  • Serve slices of apple on top of the pikelets and drizzle the sauce over.
  • For a nice dessert, accompany with a spoonful of ice cream.

I can't believe that noone else has posted the humble pikelet, a mini-pancake. I like mine with plain butter on top or with raspberry jam and a blob of cream a la a Devonshire tea. Perfect to have with a cup of tea for afternoon tea.

1/4 cup sugar
3/4 cup milk (approx)
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 ounce butter (optional)

Steps:

  • Beat the egg and sugar until thick and add with the milk to the sifted flour, salt and baking powder.
  • Add the melted butter last.
  • Mix until smooth and cook in spoonfuls on a hot greased griddle or frypan.

3 Golden Delicious apples - peeled, cored, and thinly sliced
⅔ cup water
2 teaspoons cold butter, cut into small pieces
1 ½ teaspoons all-purpose flour
1 teaspoon cornstarch
½ cup brown sugar
¼ teaspoon ground cinnamon
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer apple slices in the bottom of an 8-inch glass baking dish.
  • Mix water, butter, flour, and cornstarch together in a bowl until no lumps remain. Stir in brown sugar, cinnamon, and salt until smooth. Pour apples in the baking dish.
  • Bake in the preheated oven, stirring every 10 to 15 minutes, until soft and juicy, about 45 minutes.

1 pound medium apples, cored (2 apples)
1/2 cup water
1/2 cup honey
1/2 cup white wine vinegar
3 whole star anise
3 cardamom pods
2 cinnamon sticks (3 inches)
1 teaspoon kosher salt
1 teaspoon whole allspice
1 to 2 bay leaves
1 teaspoon whole peppercorns

Steps:

  • With a mandoline or vegetable peeler, cut apples into very thin slices. Place apples in a 1-quart jar. In a large saucepan, bring remaining ingredients to a boil. Carefully ladle hot liquid over apples. Cover and refrigerate overnight.
