CABBAGE ROLL CASSEROLE

I use to make regular cabbage rolls until I found this recipe. Now, instead, I make this and it is as good as the regular cabbage rolls and alot easier.

2 pounds ground beef
1 cup chopped onion
1 (29 ounce) can tomato sauce
3 ½ pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
  • In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

KALUA PIG MONTE CRISTO EGG ROLLS

Number Of Ingredients 21

12 traditional egg roll wrappers or 24 lumpia (rice-based) wrappers
1/4 cup rice flour
12 thin slices Swiss cheese
12 thin slices Black Forest ham
1 1/2 cups shredded Kalua Pork (recipe follows)
3 cups shredded Napa cabbage
2 large egg whites
1 gallon clean frying oil, such as canola or peanut oil
Wasabi Mojo (recipe follows)
1 cup mayonnaise (such as Hellmann's)
1 teaspoon minced garlic
2 teaspoons wasabi powder
1 tablespoon toasted sesame oil
2 tablespoons honey
1 teaspoon ground ginger
1 teaspoon lemon juice
1 tablespoon teriyaki sauce
One 8- to 12-pound pork butt
1 whole banana leaf (available at Asian or Latin markets or online), cut in half
1/2 cup liquid smoke
1/3 cup salt

Steps:

  • 1. Place an egg roll skin on a clean surface dusted with a small amount of rice flour. Make sure one of the four points is facing you.
  • 2. Center 1 slice of Swiss cheese on the lower half of the wrapper, followed by 1 slice of ham. Place about 2 tablespoons of the pork in the center of the ham. Top with a bit of shredded cabbage.
  • 3. Using a pastry brush, paint a 1-inch border of egg white on the 2 edges of egg roll wrapper facing away from you.
  • 4. Using both hands, roll the corner nearest you over the filling while tucking the outside corners toward the center. Continue rolling until the roll is closed and sealed. Gently firm up the roll, making sure the ends are tightly tucked in (or they will open when frying). (If using a lumpia egg roll wrapper, repeat the rolling process with an additional wrapper so the finished product is two-ply. Lumpia wrappers are thinner than traditional egg roll wrappers and this helps with issues of breakage.)
  • 5. Repeat with the rest of the wrappers and filling, making sure to wipe your working board of any excess egg white as you go, as it is very sticky.
  • 6. Dust the finished egg rolls with a bit of rice flour, cover, and refrigerate for about 30 minutes before frying. Fry them within 24 hours, or freeze them if you like.
  • 7. Heat the frying oil in a deep fryer to 350 degrees F. Or, if you do not have a deep fryer, fill a Dutch oven with 2 1/2 inches of oil (make sure not to fill within 4 inches of the top of the pot). Place the pot over medium-high heat. Test the oil with a little bit of rice flour. If the flour bubbles from the heat, the oil is ready.
  • 8. Place just a few egg rolls in pot at a time, making sure the oil level doesn't get close to the top of pot. Fry the egg rolls, turning often, until golden brown on all sides, about 2 minutes. Place on cooling rack and continue cooking the rest of the egg rolls.
  • 9. Should you have an accidental oil spill or flare up, cover the pot with a lid and turn off the heat source. Cover the fire with a liberal amount of baking soda. Never try to put out an oil fire with water-it is no bueno!
  • 10. When the cooked egg rolls are cool enough to touch, cut them on a bias to show the layers of filling and amaze your family and friends! Serve with Wasabi Mojo.
  • In a small bowl, combine all the ingredients. Cover and let rest in the refrigerator for at least 30 minutes before serving.

1 8-ounce can refrigerated crescent roll dough
1 14-ounce package cocktail-sized smoked sausages, patted dry
1 large egg
everything bagel seasoning (optional)
3/4 c. mayonnaise
1/4 c. chile-garlic sauce or Sriracha
3/4 c. Dijon mustard
1/4 c. genuine maple syrup
3/4 c. sour cream
1/4 c. pickle juice (from jar)
1 tbsp. fresh chives, chopped

Steps:

  • Preheat the oven to 375°. Working quickly while cold, unroll the crescent dough sheet on a lightly floured surface and separate the perforated dough into 8 triangles. Cut each dough triangle into three equal skinny triangles.
  • Place one cocktail sausage on the wide base of one skinny triangle. Roll the sausage toward the pointed end of the triangle, allowing the dough to overlap and wrap around the sausage. Place the rolled sausage on a parchment-lined baking sheet, point-side down. Repeat with the remaining dough triangles and sausages.
  • Whisk together the egg with 1 teaspoon water in a small bowl until smooth. Brush the egg wash over the dough and sprinkle with the everything bagel seasoning, if desired. Bake at 375° until the dough is puffed and golden brown, 12 to 15 minutes.
  • Make the dipping sauces (optional): For the Spicy Mayo Dipping Sauce, stir together the mayo and chile-garlic sauce in a small bowl until smooth. For the Maple-Dijon Dijon Dipping Sauce, stir together the mustard and syrup in a small bowl until smooth. For the Quick Ranch, stir together the sour cream, pickle juice, and chives in a small bowl until smooth.
  • Serve the pigs in a blanket warm with Spicy Mayo, Maple Dijon, or Quick Ranch Dipping Sauces.

Made with pre-made pizza crust and filled with your favorite toppings, these quick and easy stuffed pizza rolls make a great party food or weeknight dinner that adults and kids will love.

1 (13.8 ounce) package refrigerated pizza crust dough
1 1/2 cups shredded mozzarella cheese
1/2 cup mini pepperoni slices
1/2 cup diced cooked ham
1 (4 ounce) can sliced mushrooms
1 Tablespoon olive oil
1/2 teaspoon garlic powder
1 teaspoon Italian Seasoning
2 Tablespoons grated Parmesan cheese
1 1/2 cups marinara sauce (for dipping)

Steps:

  • Preheat oven to 425 degrees.
  • Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it's about 8 x 12 inches. Cut it into 24 squares with a pizza cutter.
  • Place cheese and desired toppings on each square. (Do not add marinara sauce, it's for dipping after they are cooked)
  • After adding toppings to each dough square, carefully lift up each square and wrap the dough around the toppings.
  • Pinch to make sure each ball is sealed shut and then place them seam side down on a lightly sprayed pie pan or square pan.
  • Brush the tops of the dough balls with olive oil.
  • Sprinkle with the garlic, Italian seasoning and Parmesan cheese (I mixed all of these together and then sprinkled on top).
  • Cook for about 15-20 minutes or until golden brown on top. Keep an eye on them so they don't overcook. Serve warm with warmed marinara sauce on the side for dipping.

4 cups shredded pizza cheese blend or part-skim mozzarella cheese
1 pound bulk Italian sausage, cooked and drained
2 packages (3 ounces each) sliced pepperoni, chopped
1 medium green pepper, finely chopped
1 medium sweet red pepper, finely chopped
1 medium onion, finely chopped
2 jars (14 ounces each) pizza sauce
32 egg roll wrappers
Oil for frying
Additional pizza sauce for dipping, warmed, optional

Steps:

  • In a large bowl, combine the cheese, sausage, pepperoni, peppers and onion. Stir in pizza sauce until combined. Place about 1/4 cup filling in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides toward center over filling. Moisten remaining corner with water and roll up tightly to seal., In a Dutch oven or deep cast-iron skillet, heat 1-2 in. of oil to 375°. Fry pizza rolls until golden brown, 1-2 minutes on each side. Drain on paper towels. If desired, serve with additional pizza sauce.

Kids love this one. My mom made it for me as did her mom. If making for a small child, cut the hot dogs into fourths length wise. The cheese is always optional.

8 frankfurters
8 slices American processed cheese
1 (10 ounce) package refrigerated biscuit dough

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.
  • Bake in preheated oven until biscuits are brown, about 10 to 15 minutes.
