CRAZY PIGGY CASSEROLE
This was adapted from the popular online Recipe of Crazy good Casserole that has Chicken and bacon. GREAT way to use up leftover Easter ham. I had several vacuum sealed sections of leftover ham in the freezer and decided I needed a tasty creamy casserole to make with it. I hope you too will enjoy this. I think the next time I make this I might try adding some broccoli or some sweet peas to it.

Steps:
- Cook pasta according to package directions, drain well once cooked. Meanwhile start the bacon while pasta is cooking.
- Line a cookie sheet with foil and spray with non stick spray. lay bacon on sheet and bake at 350 degrees for about 25-30 minutes until just done but not crispy. lay on paper towels to drain. leave oven on.
- in large bowl combine all the ingredients and mix well. put in Sprayed casserole dish. COVER Bake at 350 for 30- 45 minutes until heated through.

CABBAGE ROLL CASSEROLE
I use to make regular cabbage rolls until I found this recipe. Now, instead, I make this and it is as good as the regular cabbage rolls and alot easier.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
- In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

- Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in 1 can tomato sauce and next 6 ingredients. Bring to a boil. Reduce heat; simmer, covered, 5 minutes. Stir in rice and bacon; remove from heat., Layer a third of the cabbage in a greased 13x9-in. baking dish. Top with half the meat mixture. Repeat layers; top with remaining cabbage. Pour remaining tomato sauce over top. , Cover and bake 45 minutes. Uncover; sprinkle with cheese. Bake until cheese is melted, about 10 minutes. Let stand 5 minutes before serving. If desired, sprinkle with coarsely ground pepper.

WARM PIGGY CASSEROLE
This came about trying to make a potato casserole. Well, I had the potatoes, i had leftover cooked pork an a onion. Just got in from a bone-chill December drive home from work. Frazzled, not really wanting to cook at all, oh that cup of hot tea sounds so good. But hey family always comes first, so here we goo

Steps:
- 1. To prep; peel and slice raw potatoes in coin cuts, set aside. Do the same to onion, and if using ham; cut into 1/2 inch chunks, if using kielbsa go for same coin cut. Set aside.
- 2. Heat bacon dripping in cast iron skillet , on med low heat. At this point sprinkle in a bit of the sliced onions. Carmelize them. Turn off heat.
- 3. Now start to layer potatoes first at bottom of pan, on top of cooked onions, sprinkle with a bit of salt and pepper. Next layer over potatoe the meat , then onion slices. Seasoning each layer lightly. Last layer should be the meat.
- 4. Add just enough water to half fill the pan ( easier if on on rack, or oven door ( it's a very heavy pan.). If you are using ham...sprinkle on cheddar cheese over meat. Cover with oven proof top. Set oven for 350 F. and steam cook for about 35 to 45 minutes.
- 5. If you are using kielbsa , all can be done on stove top. I have never added cheese to this veriation, it's up to you. Both recipes can have other vegetable added or not, again up to you.
- 6. To serve :sprinkle with parsley, home made corn bread goes well with this, also any hard breads. There is supposed to be some pot liquer in pot. have melted butter for the bread. Hint, sometimes I add a small pad of butter to richen the pot.
